Chicken stock, for sauteing
2 garlic cloves, chopped

Sweet Potato Puree, recipe follows
Steamed asparagus, recipe follows
Orange juice reduction, recipe follows
Julienne roasted red pepper, recipe follows
1/2 can pumpkin pie filling
1/2 can sweet potatoes
1 tablespoon honey
1 1/2 tablespoons tarragon leaves, chopped
Salt and pepper
Several stalks asparagus
2 tablespoons butter
2 tablespoons shallots, chopped
1 tablespoon garlic, chopped
1 tablespoon salt
1/2 tablespoon pepper
1 (12-ounce) can frozen orange juice concentrate
1 1/2 tablespoons chopped tarragon leaves
1 teaspoon sugar
1 red bell pepper
Salt and pepper

Steps:

  • Season the pork tenderloin on both sides with rosemary, tarragon, salt and pepper. In a large pan, add chicken stock, garlic, oil, salt and pepper. Allow the stock to simmer over medium heat. Cut the seasoned, raw pork into medallions and then place them into the simmering stock. Cook the meat until the medallions are medium rare. Remove from the pan.
  • In the final presentation, place the potato puree in the middle of the plate with the asparagus above it. Lay the pork against the puree and the orange juice sauce below the pork. Garnish with the red pepper strips.
  • Place the pumpkin pie filling and sweet potatoes into a food processor. Add honey, tarragon, and salt and pepper to the food processor and blend into the potato mixture.
  • In a large pot, bring just enough water to cover the asparagus to a boil. Add the asparagus to boiling water and blanch the stalks until they are al dente. Heat a medium saute pan and melt 2 tablespoons of butter in the pan. Add the blanched asparagus to the pan and saute with shallots and garlic. Cook until the asparagus spears are tender.
  • Pour the entire can of frozen orange juice into a medium saucepan and heat the juice over medium heat. Reduce the liquid by 1/2. Add freshly chopped tarragon to the orange juice reduction and stir well.
  • Over an open flame, roast the entire red pepper until the skin blackens. Once the entire pepper is blackened, wrap it in plastic wrap. Allow it to stand in the wrap for approximately 10 minutes. Remove the pepper from the wrap and wipe away the black skin. Julienne the pepper and use, as garnish, on the plate.

1/2 cup olive oil
6 cloves garlic
1 flank steak, 2-2 1/2 pounds
Salt and freshly ground pepper
Olive oil
6 cloves garlic, peeled and thinly sliced, plus 2 cloves garlic, chopped
2 shallots, coarsely chopped
1 carrot, chopped
1 stalk celery, chopped
1 cup red wine
3 cups chicken stock
1 cup veal stock
1/4 cup chopped parsley
2 roasted red pepper, peeled, seeded and diced
1 Spanish onion, sliced, grilled and diced
1 1/4 cup heavy cream
6 ounces soft goat cheese
6 potatoes, cooked, peeled and diced and kept warm
4 tablespoons unsalted butter, softened
Salt and freshly ground pepper

Steps:

  • Combine the olive oil and garlic in a large shallow baking dish. Add the flank steak and turn to coat on both sides. Cover and marinate in the refrigerator for 2 hours or overnight. Remove from the refrigerator 30 minutes before grilling. Heat the grill to high heat. Remove the steak from the marinade and season with salt and pepper to taste. Grill for 3 to 4 minutes on each side for rare to medium-rare doneness. Let rest 10 minutes before slicing across.
  • Heat 1 tablespoon of olive oil in a small saute pan over medium heat. Add the sliced garlic and saute until lightly golden brown. Remove with a slotted spoon to a paper towel-lined plate. Heat 2 tablespoons of olive oil in a medium saucepan. Add the shallot, remaining chopped garlic, carrots and celery and cook until softened. Add wine and reduce by half. Add chicken and veal stock and cook until reduced by half. Strain the mixture into a clean medium saucepan. Add the toasted garlic, parsley, peppers and onion and cook for 5 minutes. Season with salt and pepper and spoon over the steak.
  • Place goat cheese in a small food processor with 1/4 cup of the heavy cream and process until smooth. Rice potatoes into a large bowl. Mix in the butter and 1 cup of the heavy cream. Fold in the goat cheese mixture and season with salt and pepper to taste.

I found this recipe from the website of the Hell's Kitchen TV show and made only one or two small changes. It's as fancy as anything they serve on the show and my boyfriend said it was the best thing I'd ever cooked for him! Of course fresh scallops are not cheap but this is an excellent dish for a special or romantic occasion where you want to impress. This is a small portion so be sure to supplement with a hearty side dish. Alternatively, this can be served as an appetizer.

6 medium fresh scallops
1 large yam (or 2 sweet potatoes)
1/2 cup walnuts
5 teaspoons olive oil
2 teaspoons granulated sugar
3 teaspoons red wine vinegar
3 teaspoons walnut oil
3 teaspoons chopped shallots (or green onion)
2 cups baby arugula leaves
1 tablespoon soft butter
salt
pepper

Steps:

  • Preheat oven to 350°F.
  • For the puree: Wash the yam and towel dry. Puncture it with a fork in several places, season it with salt and pepper, wrap it in a damp paper towel and microwave on high for approximately 3 minutes (until the center is cooked and soft). Cut the cooked yam in half long ways and scoop out the flesh. Puree in a food processor or with a blender. Season with butter, salt, and pepper to taste. Set aside.
  • For the vinaigrette: Place walnuts on a baking sheet and cover with the granulated sugar. Bake at 350 for 7-8 minutes. Remove from oven and cool. Then, in a bowl, whisk together the walnut oil, 4 tsp of olive oil, vinegar, walnuts, and shallots. Season with salt and pepper and set aside.
  • For the scallops: Season the scallops with salt and pepper on both sides. Heat a non-stick pan on high heat (7 out of 10 on my stove) with the remaining 1 tsp of olive oil. Sauté the scallops a few minutes on each side until golden brown. Total sauté time should be about 6 minutes.
  • Once scallops are ready, quickly toss 2 tsps of the vinaigrette with the arugula leaves in a separate bowl.
  • For assembly: Spread the puree onto each plate into a flat pancake (you can warm the puree in the microwave if it has become cold). Top the puree pancakes with a small pile of seasoned arugula leaves. Then place 3 sautéed scallops on top of the leaves. Finish each plate by drizzling the vinaigrette over the top, drizzling around the plates edge for a "gourmet" finish!

Lavender Roasted Venison Sweet Potato-Celeriac Puree and Sherry Vinegar Gastric image

1 ounce dry lavender
1 ounce salt
1/2 ounce cracked back pepper
3 pounds venison loin, boneless and trimmed
4 sweet potatoes
1 large celeriac
1 lemon, juiced
3 tablespoons unsalted butter
1 cup sugar
1/2 cup water
1/2 cup sherry vinegar
2 teaspoon fresh thyme, chopped
2 cups canola oil for frying
1 bunch Swiss chard, cleaned and chopped into 1- inch ribbons
2 tablespoons unsalted butter

Steps:

  • Four Hours Prior: In a spice grinder, combine lavender, salt and pepper. Pulse 2 or 3 times only, to lightly grind together. Coat the venison generously with the lavender rub. Set aside in the refrigerator for at least 3 hours.
  • 90 Minutes Prior: Preheat oven to 400 degrees. Roast 3 whole sweet potatoes in the oven for 45 minutes or until very soft. Set aside, but do not allow them to cool completely. While the sweet potatoes are roasting, peel and dice (1 inch cubes) the celeriac. Simmer the celeriac in salted water until very tender, test with a paring knife. Drain the celeriac and hold in a warm place while you peel the sweet potatoes. Place the warm celeriac and warm sweet potatoes in the food processor and pure until very smooth, add the butter and lemon juice and season to taste with salt and pepper. Hold the puree in a warm place until you are ready to serve.
  • 45 minutes prior: In a heavy stainless steel pan, mix sugar and water. Simmer over medium high heat, brushing the sides with a wet brush to prevent crystallization. Once the mixture has become caramel, with a medium amber color, remove from the heat and whisk in the sherry vinegar. Once the vinegar is fully incorporated, whisk in the fresh thyme and set the sauce aside, holding at room temperature. Cut the remaining sweet potato into a very fine angel hair. In a small, heavy stainless steel pan, heat the canola oil to 300 degrees. Carefully fry the sweet potato straw until crisp but not browned. Drain the straw well on paper towel, season with salt and set aside.
  • 30 minutes prior (Oven should still be on at 400 degrees): Preheat a large saute pan on the stove over high heat. In the hot pan, sear the venison evenly until the entire piece of meat is dark brown and crusty. Place the venison on a roasting rack in a roasting pan and roast for approximately 20 minutes. The internal temperature of the meat should be no more than 115 degrees for a perfect medium rare. Once the meat has reached desired temperature, remove from the oven and allow to rest in a warm place for at least 10 minutes.
  • To complete the whole meal: In a large saute pan, over medium heat, gently steam the Swiss chard with 2 tablespoons of butter, covering the pot. When the chard is appropriately wilted, carve the venison and plate all of the components in the desired fashion, garnishing with the sweet potato straw.

1 whole pork loin
2 cups spinach, blanched
2 cups fresh or dried peaches or other favorite fruit
Salt and freshly ground black pepper
1/4 cup cooking oil
5 pounds garnet yams
1/4 cup oil
1 stick butter
1 cup cream, optional
2 limes, juiced
1 cup molasses
1 cup sherry wine vinegar
3 lemons, juiced
2 heads radicchio

Steps:

  • For the pork loin:
  • Preheat the oven to 350 degrees F.
  • Working on a large cutting board, cut the loin into 2 or 3 workable size pieces. Working on 1 piece at a time, place the loin fat side up on the cutting board. Using a sharp paring knife and starting at 1 end of the loin in the center of the meat, make a 1-inch incision widthwise. Insert the pairing knife into the incision and draw the knife down into the loin. Use the end of the knife to create a pocket in the loin but do not increase the size of the initial incision. Continue to create pockets down the length of the loin at every inch. Stuff each pocket with a pinch of spinach and a piece of fruit. Place a roasting pan or large saute pan over high heat. Dry the meat with paper towels before liberally seasoning it with salt and freshly ground pepper. Add the oil to the hot pan and completely sear each piece starting with the fat/incision side down in order to seal in the spinach and fruit. (This can be done ahead of time then chilled until ready to finish cooking.)
  • Place the loin in the oven for about 45 minutes to 1 hour to complete cooking. Allow the meat to rest for 30 minutes before slicing. Slice the meat down the center of the incision to expose the filling and once to the side of the incision. Continue to slice the meat making cuts at the incision and then to the side in order to control the portion sizes and to expose the filling.
  • For the sweet potato puree:
  • Preheat oven to 350 degrees F.
  • Wash and prick each yam with a knife or fork. Coat each yam with oil and place them on a sheet pan. Place them in the oven and until tender, approximately 30 minutes. Remove them from the oven and allow to cool. Remove the skins of the yams and discard. Place the yams in a large pot with the butter and cream. Using a potato masher, smash the yams until smooth. Heat over medium to low heat and season with salt and lime juice.
  • For the molasses gastrique:
  • Bring the molasses and sherry vinegar to a simmer in a small sauce pot. Allow the mixture to simmer for 5 minutes them remove it from the heat and allow to cool. Stir in the lemon juice.
  • For the radicchio:
  • Core the heads of radicchio and separate the leaves to make decorative cups. If the leaves are too large, cut them in half. Place the leaves in ice water until service.
  • To assemble:
  • On a large serving platter, place dollops of the sweet potato puree in the shell of a radicchio leaf. Place 1 slice of the pork loin on top of the sweet potato puree. Finish the plate by spooning some of the gastrique over the meat.

8 medium sweet potatoes, scrubbed
6 medium bananas
1/2 cup unsalted butter, at room temperature
salt, to taste
black pepper, to taste
1 1/2 cups heavy cream
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 pinch nutmeg
1 teaspoon orange zest
2 bay leaves
1 cup all-purpose flour
1/2 cup light brown sugar
1/2 cup unsalted butter, cut into cubes
1 cup of broken pecans

Steps:

  • Preheat the oven to 400 degrees F. Prick the sweet potatoes all over with a fork and put them on a roasting pan. On another roasting pan prick bananas and lay out in a single layer. Roast sweet potatoes for 45 minutes until very soft and roast bananas for 25 minutes. Remove both pans from the oven and allow to cool slightly.
  • In a small sauce pot heat cream with bay leaf until reduced by half, then keep warm until ready to puree potatoes and bananas.
  • When the potatoes are cool enough to handle, scoop out the flesh into the bowl of a food processor. Add peeled bananas. Season with salt, add butter, cream, cinnamon, nutmeg, vanilla and puree until super smooth. Pour into an oven-proof gratin dish.
  • Make the topping by combining flour, cold butter and brown sugar in the food processor and pulse until you have the texture of coarse bread crumbs. Sprinkle on top of the puree and place under the broiler until golden brown and crispy, about 4-5 minutes.
  • TIPS.
  • You can roast the potatoes and bananas ahead of time, then put it all together just before serving. Then heat it up in the oven.

10 chicken thighs, with skin and bones
10 chicken drumsticks, with skin and bones, lower part of bone discarded
10 chicken wings, with skin and bones, tips removed and discarded
Maple barbecue sauce (recipe follows)
Maple barbecue sauce:
2 large onions, chopped fine
2 1/2 tablespoons vegetable oil
2 1/2 tablespoons Worcestershire sauce
1 tablespoon Dijon-style mustard
1-1/4 cups ketchup
2 1/2 cups chicken broth
3/4 cup cider vinegar
1/2 cup plus 2 tablespoons pure maple syrup
Sweet potato puree:
2 pounds sweet potatoes, preferably Georgia redskins
1 cup finely chopped onion
2 large Granny Smith apples, peeled, cored and thinly sliced
1 teaspoon finely grated lime zest
2 tablespoons unsalted butter
3 tablespoons crème fraîche or sour cream
Juice of 1 lime
Freshly grated nutmeg to taste
Hot water for thinning the purée if needed

Steps:

  • In a bowl whisk together the vinegar and the salt, add the oil in a stream, whisking, and whisk the marinade until it emulsifies. Divide the chicken pieces between 2 large bowls, pour the marinade over, cover and let the chicken marinate overnight in the refrigerator. Preheat oven to 400 degrees. Arrange chicken pieces in one layer, skin side up, on a large baking pan that has been lined with stick-release foil for 20 to 25 minutes, taking chicken breast out when just opaque. Continue roasting until the thighs exude clear yellow juices with no trace of pink when pierced. Brush with maple barbecue sauce during the last 10 minutes. Serve chicken with the remaining sauce. Maple barbecue sauce: In a large heavy saucepan combine the onions, the oil, the Worcestershire sauce, the mustard, the ketchup, the broth, the vinegar, and the syrup, bring the mixture to a boil, and simmer it, stirring occasionally, for 50 minutes, or until it is reduced to about 3 1/3 cups. The sauce may be made 1 week in advance and kept covered and chilled. Makes about 3 1/3 cups. Sweet potato puree with apples and lime: Peel the sweet potatoes, cut into 1-inch pieces and cover with lightly salted water. Bring to a boil and cook for 10 to 12 minutes, or until very tender. Meanwhile, in a large skillet cook the onion, apples and lime zest with salt and pepper to taste in the butter over moderate heat, stirring, for 5 to 10 minutes, or until the apples are very tender. Drain the sweet potatoes well,transfer to a food processor and purée them with the apple mixture until mixture is smooth. With the motor running add the crème fraîche or sour cream, lime juice, the nutmeg, salt and pepper to taste and enough hot water to thin the puree until a mashed potato consistency.

• 1 cup of broken pecans

Steps:

  • reheat the oven to 400 degrees F. Prick the sweet potatoes all over with a fork and put them on a roasting pan. On another roasting pan prick bananas and lay out in a single layer. Roast sweet potatoes for 45 minutes until very soft and roast bananas for 25 minutes. Remove both pans from the oven and allow to cool slightly. In a small sauce pot heat cream with bay leaf until reduced by half, then keep warm until ready to puree potatoes and bananas. When the potatoes are cool enough to handle, scoop out the flesh into the bowl of a food processor. Add peeled bananas. Season with salt, add butter, cream, vanilla and puree until super smooth. Pour into an oven-proof gratin dish. Make the topping by combining flour, cold butter and brown sugar in the food processor and pulse until you have the texture of coarse bread crumbs. Sprinkle on top of the puree and place under the broiler until golden brown and crispy, about 4-5 minutes.

four 5-ounce sweet potatoes
2 tablespoons fresh lime juice

Steps:

  • Preheat oven to 400°F.
  • Prick sweet potatoes and roast on a foil-lined baking sheet in middle of oven 1 hour, or until very soft. Cool potatoes just until they can be handled and scoop flesh into a food processor.Purée potatoes until smooth. Add lime juice and salt to taste and purée mixture until combined well. Sweet potato purée may be made 2 days ahead and chilled, its surface covered with plastic wrap.
