2 tablespoons mayonnaise
2 tablespoons nonfat milk
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
Kosher salt
1 chipotle chile pepper in adobo sauce (optional)
3 tablespoons sweet pickle relish
3 tablespoons minced red bell pepper

Steps:

  • Combine the yogurt, mayonnaise, milk, ketchup, Worcestershire sauce, 1/4 teaspoon salt and the chipotle in a blender; pulse until smooth, about 1 minute. Transfer to a bowl, then stir in the relish and bell pepper.

1/2 lb large shrimp, peeled and deveined
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 teaspoon minced garlic (optional)
1/2 tablespoon olive oil
1/2 tablespoon fresh lemon juice
3/4 cup mayonnaise
1/4 cup ketchup
1 teaspoon minced capers (optional)
1 teaspoon minced gherkin
1 tablespoon chopped sweet pickle
1 teaspoon lemon juice
1 pinch kosher salt
1 pinch fresh ground black pepper

Steps:

  • MAKE THE SHRIMP:.
  • Preheat oven to 400ºF.
  • Place the shrimp on a sheet pan and sprinkle with the salt and pepper.
  • Pour the olive oil, garlic and lemon juice over the shrimp, and roast for 5-6 minutes.
  • MAKE THE DRESSING:.
  • Prepare this ahead of time, so you won't be rushed. Place all the ingredients in a bowl, and stir until blended.
  • Serve at room temperature.

1 1/2 teaspoons tomato ketchup
1 teaspoon tomato paste
1 1/2 teaspoons capers, finely chopped
1 teaspoon freshly squeezed lemon juice
Small pinch sea salt and freshly ground black pepper to taste

Steps:

  • Mix all the ingredients together in a small serving bowl, whisking with a fork.
  • This dressing is delicious spooned over veggie burgers or served as a dip with crudites. I also love it drizzled over a festive vegetarian nut roast the next day in a sandwich. Any unused dressing can be stored in an airtight container in the fridge for up to 4 days.

3/4 cup prepared or homemade mayonnaise
1/4 cup bottled chili sauce
2 tablespoons ketchup
1 1/2 tablespoons minced onion
2 teaspoons sweet pickle relish
1/2 hard-cooked large egg, pushed through a sieve or finely chopped
Freshly ground black pepper

Steps:

  • Make a paste with the garlic and 1/4 teaspoon of the salt by crushing them with the side of a chef's knife. In a small mixing bowl, whisk together the garlic, mayonnaise, chili sauce, ketchup, onion, relish and egg until combined. Season with salt and pepper to taste. Use now or store covered in the refrigerator for up to 2 days.

Stirring a little chile paste into an otherwise classic Thousand Island dressing tones down its sweetness slightly, adding a very gentle bite. For something spicier - and for a noticeable pepper punch - substitute up to 2 tablespoons chile sauce for ketchup. Or, for something sweeter and more mellow, leave out the chile sauce entirely. Other great additions here include a dash or two of Worcestershire sauce or a spoonful of mustard.

1/2 teaspoon sweet paprika

  • In a medium bowl, whisk together all ingredients. Taste and add more salt, vinegar and chile paste, if needed. Use sauce immediately or refrigerate in an airtight container for up to 2 weeks.
