If you're trying to get the kiddos to eat "green things," give this recipe a try. I coat sliced avocado in ranch seasoning mix, followed by panko breadcrumbs for crunch, and then bake them up. I serve them with a creamy cilantro-lime sauce for dipping.

1/2 cup all-purpose flour
3 tablespoons (two 0.4-ounce packages) ranch dressing mix
2 large eggs
1 cup panko breadcrumbs
Kosher salt and freshly ground black pepper
2 large ripe, firm avocados (about 8 ounces each)
Nonstick cooking spray, for the fries
One 8-ounce carton sour cream
1/4 cup mayonnaise
1/2 teaspoon garlic powder
1 teaspoon lime zest plus 1 tablespoon lime juice
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the flour and ranch mix in a shallow dish. Whisk the eggs in another shallow dish. Stir together the panko, 1 teaspoon salt and 1/2 teaspoon pepper in a third shallow dish.
  • Cut the avocados in half and remove the pits. Cut each half in half again and remove the peel. Cut the quarters into thirds. (Each avocado will have 12 slices.)
  • Working one at a time, dredge the avocado slices in the flour mixture, followed by the eggs and then the panko. Place on the prepared baking sheet. Coat the avocado slices with cooking spray and bake, turning halfway through and coating with more cooking spray, until golden brown, 16 to 18 minutes.
  • Meanwhile, stir together the sour cream, mayonnaise, garlic powder, lime zest, lime juice and cilantro in a small bowl. Season with salt and pepper. Serve the sauce with the avocado fries.

OVEN ROASTED POTATO 'FRIES'

4 large russet potatoes, scrubbed, but not peeled
3 to 4 tablespoons olive oil
Pinch sea salt
Freshly ground black pepper
Dash smoked paprika
Dash steak spice seasoning

Steps:

  • Heat oven to 425 degrees F. Cut the potatoes into nice thick 'handcut fry slices' put in a large bowl and cover with cold water. You can do this in advance if you want - for up to 24 hours. It helps to remove the excess starch. Drain the potatoes and pat dry on paper towel. Arrange in a single layer on a baking sheet. Drizzle with oil, sprinkle with salt, pepper, and paprika. Bake until tender and golden crispy outside, about 40 minutes. When out of the oven, hit them with some dashes of steak spice.

This is a great recipe to get kids started learning how to cook. Take a day, take a week, teach them new things each day. We used this for our 'at-home' camp week. Taught the kids how to cook one new thing each day for an entire week.

2 pounds baking potatoes, each cut into six wedges
2 tablespoons olive oil
½ teaspoon dried thyme leaves
¼ teaspoon ground black pepper
salt to taste
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.
  • Roast potato wedges for 15 minutes, turn, and continue roasting until soft in the center, about 15 minutes more. Transfer wedges to a platter and sprinkle cheese over them.

1 ½ pounds fingerling potatoes, scrubbed and cut in half lengthwise
2 tablespoons olive oil
¾ teaspoon paprika
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon freshly cracked black pepper
2 medium (blank)s ripe avocados
¼ cup sour cream
2 tablespoons chopped fresh basil
1 tablespoon minced garlic
2 tablespoons fresh lemon juice
½ teaspoon red pepper flakes
1 pinch Salt and freshly ground pepper to taste

Steps:

  • For the Roasted Potato Fries: Preheat oven to 425 degrees F. On a large baking sheet, combine the fingerling potatoes, olive oil, paprika, salt, garlic powder and pepper. Toss to combine until the potatoes are evenly coated with the spice mixture and olive oil.
  • Transfer the baking sheet into the oven and roast for 25 to 30 minutes until the potatoes are crispy on the outside and tender on the inside.
  • For the Avocado Aioli: Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh onto a cutting board. Cut the avocado into 1-inch pieces and transfer the avocado to a blender.
  • Add the sour cream, basil, garlic, lemon juice, red pepper flakes and a pinch of salt and pepper into the blender and process until smooth.
  • Taste and add salt and lemon juice if needed. If the mixture is too thick, add a teaspoon of water and blend until smooth.
  • Serve with warm Roasted Potato Fries.
