ROASTED-PEAR POUND CAKE WITH CHOCOLATE SAUCE RECIPE

Meanwhile, butter and flour a 10-inch tube pan. Place the pears in a food processor and puree until smooth. Set aside. Reduce the oven temperature to 350 degrees. ROASTED PORK TENDERLOIN W/ PEAR JAM SAUCE

- 10 to 20 minutes before you plan to cook, place a large cast-iron or ovensafe skillet on the middle rack in the oven and heat the oven to 450°F. Pat the pork dry with paper towels and trim off any large pieces of surface fat. Season on all sides with sea salt and black pepper. Using oven mitts, carefully remove the hot pan from the oven. Add the oil and swirl to coat the bottom of the pan. Place the pork in the pan, return to the oven and roast for 10 mins. Flip the pork. Reduce the oven temperature to 400°F and continue roasting 10 to 15 minutes more. The pork is done when its internal temperature registers 140°F to 145°F in the thickest part, 20 to 25 minutes total.
- Transfer the pork to a clean cutting board, tent loosely with aluminum foil, and let it rest for 10 minutes before slicing crosswise. Meanwhile place the pan back on the stovetop over medium-high heat and immediately deglaze the pan with white wine, scraping the bits off the bottom of the pan and reducing the wine by half. Add the stock and thyme and bring to a simmer for 5mins. Whisk in the pear jam until smooth and bring back to a simmer. Drizzle over the sliced tenderloin, garnish with fresh thyme, flaky sea salt, and serve!
ROASTED PORK LOIN WITH PEAR SAUCE RECIPE

- Preparation Preheat your oven to 375 F. Melt some cooking fat in a large skillet and brown the pork on all sides over a high heat. Place the browned pork in a roasting pan and wrap with the bacon slices. Pack in the remaining ingredients all around the roast. Place the roasting pan in the oven and roast for 1 hour. In a saucepan, combine all the ingredients for the pear sauce. Season to taste and bring to a boil; then let simmer until reduced by half. Pour half of the sauce over the pork roast now, and reserve the rest for later. Return the roast to the oven and cook for another 30 minutes, basting every 10 minutes. Serve the roast with the remaining sauce.
CHARBROILED FILET MIGNON MEDALLIONS WITH ROASTED PEAR AND GARLIC SAUCE
Steps:
- Preheat the oven to 450 degrees F.
- Rinse the filet medallions and pat completely dry. Add the medallions to a medium mixing bowl, and drizzle with olive oil. Sprinkle with sea salt, a few pinches of seasoned salt, and black pepper. With your hands, rub both sides of the medallions until they are covered with the oil and spices. Set aside in the refrigerator for at least 1 hour.
- Meanwhile, cover the bottom of a glass baking dish with aluminum foil. Cut off a small slice from the bottom of each pear they can stand up straight and arrange them, upright, in the baking pan. Add garlic and drizzle the pears and garlic with olive oil. Cover with aluminum foil. Roast in the oven for 30 minutes.
- Allow the pears to cool for 30 minutes and then peel off the skin and remove the core.
- Add the garlic, pears and chicken stock to a blender and blend until smooth. Pour the mixture into saucepan over low heat and season with a couple of pinches of sea salt and pepper and let simmer for a couple of minutes.
- Heat the broiler. Cover a baking sheet with foil and arrange the filet mignon medallions on the pan. Charbroil on high on the top rack, about 6 inches below the broiler. Broil for 5 to 7 minutes for medium-rare. Do not flip.
- Ladle a bed of the roasted pear and garlic sauce on each of 6 plates. Use tongs to top each with a filet and serve.
ROASTED PEAR SAUCE

- Split the pears in half and cut out the core. Brush the flesh with 2 tablespoons olive oil and place face down on a hot grill. Wrap the garlic and shallots in an aluminum foil pouch, pour in 2 tablespoons olive oil along with a little bit of water to create steam and seal. Place the packets on the hot grill and roast until soft, about 15 minutes. In a saucepan, combine remaining oil, chicken broth, rosemary and vinegar. Add the grilled pears, roasted garlic and shallots to the saucepan. Cook until the mixture reduces by half. Transfer the sauce to a blender and puree until smooth. Serve with Leg of Lamb.
