BALSAMIC ROASTED ONIONS

2 large Vidalia onions
Olive oil
2 clove s garlic
1/4 cup chicken stock
1/4 cup balsamic vinegar
1 teaspoon chopped thyme
1 teaspoon chopped rosemary
2 tablespoons butter
Kosher salt and freshly ground black pepper

Steps:

  • Pre-heat oven to 350 degrees F.
  • Add olive oil to a large skillet over medium heat. Once hot, add the onions to the pan and lay them flat on their sides. Cook on each side for 3 to 4 minutes, or until browned, being careful as you flip them. Add chicken stock, balsamic vinegar, garlic, rosemary, and thyme to the pan. Add dots of butter around the pan. Turn the onions in the liquid so they are nice and coated.
  • Place the skillet in the oven and roast for 25 minutes, stirring on occasion so the onions don't stick to the pan. Roast until the onions are nice and soft and the balsamic is caramelized.

4 red onions, halved

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the butter, vinegar, honey, thyme, salt, and pepper in a small saucepan over medium heat. Bring to a simmer and cook for 1 minute to reduce slightly. Place the onions, cut sides up, in a single layer on a baking pan. Drizzle the butter-vinegar mixture over and roast until soft and slightly caramelized, about 45 minutes.

6 medium red onions, about 3" diameter
olive oil
salt and pepper
1/3 cup water
1/3 cup balsamic vinegar
1 teaspoon brown sugar

Steps:

  • Remove papery skin from onions, rub with olive oil and sprinkle with salt and pepper.
  • Roast, uncovered, in a small pan at 375 for 1 1/2 hours or until tender.
  • Remove onions and keep warm.
  • Put water and vinegar in pan and boil 4 to 5 minutes.
  • Mixture should reduce to about 1/4 cup.
  • Remove from heat and add brown sugar.
  • Cut onions in half and drizzle with vinegar mixture.

1 parsnip
1 carrot
1 leek
1 white onion
6 garlic cloves, whole
2 tablespoons olive oil
2 tablespoons thyme
2 tablespoons balsamic vinegar (or to taste)

Steps:

  • Cut parsnip, leek, and carrot into short strips. Cut onion coarsely. Leave garlic cloves whole or cut in half. Do not peel the garlic.
  • Evenly coat the vegetables in the oil and thyme. Spread evenly in a pan and roast for 60 - 90 minutes at 400 degrees. Stir occasionally to avoid sticking to the bottom. Vegetables are done when parsnips and carrots are tender and the edges of the leeks are burnt.

1 pound white button mushrooms
4 stalks green onions
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 teaspoons minced fresh thyme leaves
½ teaspoon salt, or more to taste
¼ teaspoon black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil and spray with cooking spray.
  • Gently clean off mushrooms with a damp paper towel. Cut off stems and discard. Cut any larger mushrooms in half so mushrooms are all about the same size and place in a medium bowl.
  • Cut the white parts of the green onions into 1/2-inch pieces and add to the mushrooms. Thinly slice the green parts and set aside for later.
