1,3 kg waxy potatoes, (peeled and cut into equal pieces (ca. 3cm))
2 tablespoons olive oil
1 tablespoon cumin seeds
1 /2 tablespoon ground coriander
1/4 teaspoon dried red chilli flakes
1/2 teaspoon fresh thyme leaves
1 teaspoon sea salt
1/4 teaspoon pepper
1/2 teaspoon black cumin seeds ((nigella))
1/2 teaspoon sumac
chopped cilantro (or flat-leaf parsley), (chopped)
lemon wedges ((optional))

Steps:

  • Preheat oven to 425°F / 220°C and line a large baking sheet with parchment paper.
  • In a small bowl, mix together the spices until well combined.
  • In a large bowl, toss the potatoes with the olive oil and spice mix until potatoes are evenly coated (or you can do this directly on the baking sheet).
  • Transfer the potatoes to the baking sheet and spread in an even layer without crowding them. Potatoes roast best if there is some space between them, otherwise they will steam.
  • Transfer to the oven and roast for 30 to 35 minutes, or until potatoes are golden brown, stirring once halfway through cooking time.
  • Before serving, toss with fresh herbs and re-season with salt and pepper, if needed. Serve with a lemon wedges for anyone who likes to add a little extra zing! Enjoy!

1 1/2 pounds medium red bliss or other waxy-style potatoes, skin-on and scrubbed
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt, plus more
1 tablespoon finely minced garlic
1 tablespoon finely chopped flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
  • Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.

Yum! This is not your average potato salad recipe. It's light and tart. The optional Feta cheese (which I highly recommend using) adds a bit of creaminess to the potato salad. This potato salad recipe is great for picnics this summer because you won't have to worry about it spoiling.

8 medium red potatoes, large dice
1/4 c parsley, chopped
2 Tbsp green onions, sliced
1/2 c pitted kalamata olives, sliced in half
1/3 c olive oil
3-4 Tbsp lemon juice
salt and pepper to taste
crumbled Feta cheese, if desired

Steps:

  • 1. Cook potatoes in salted water until fork tender. Drain well. Place in large bowl and cool slightly.
  • 2. While potatoes are cooling, mix together olive oil, lemon juice (start with 3 tbsp), parsley, salt, and pepper.
  • 3. Add a little over half the dressing to the potatoes and mix well.
  • 4. Mix in kalamata olives and green onion. Check seasoning. Add a little more dressing if needed. (Serve at room temp or if you prefer, chilled.) Just before serving sprinkle with Feta cheese, if desired.
