4 chicken leg quarters, with bone and skin
¼ cup olive oil
4 lemons, halved
4 teaspoons dried oregano
4 teaspoons dried basil
4 teaspoons garlic powder
4 teaspoons salt
4 teaspoons ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken legs in a deep, large baking dish. Massage 1 tablespoon olive oil onto each chicken leg. Squeeze lemon juice over the chicken. Arrange lemons around the chicken.
  • Mix oregano, basil, garlic powder, salt, and pepper together in a bowl; sprinkle evenly over each chicken leg, flipping the chicken to season both sides.
  • Cook chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1 roasting chicken (6 to 7 pounds)
Salt and pepper to taste
2 to 3 teaspoons dried oregano, divided
4 to 6 baking potatoes, peeled and quartered
1/4 cup butter, melted
3 tablespoons lemon juice
3/4 cup chicken broth

Steps:

  • Preheat oven to 350°. Place chicken breast side up on a rack in a roasting pan. Sprinkle with salt and pepper and half of the oregano. Arrange potatoes around chicken; sprinkle with salt, pepper and remaining oregano. Pour butter and lemon juice over chicken and potatoes. Add chicken broth to pan., Bake, uncovered, 2-2-1/2 hours or until a thermometer inserted in thigh reads 170°, basting frequently with pan drippings. , Remove chicken from oven; tent with foil. Let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with chicken.

8 medium red potatoes, peeled (left whole do not slice, can use more)
salt & freshly ground black pepper
2 lemons, juice of

1 large bulb of garlic (separated into cloves and skins removed or can use two heads!)
1/2 cup sliced green olives
8 tablespoons chicken broth (more if needed to add to the pan while cooking, can use water instead of the broth)

  • Set oven to 425 degrees F (set oven rack to bottom position).
  • Grease a roasting pan (use a pan large enough to hold the chicken halves and potatoes).
  • Using kitchen shears cut the chicken down the center between the breasts, then cut down each side of the back bone, then discard the back bone.
  • Season the chicken halves on both sides with salt and black pepper, then place skin side down in the roasting pan.
  • In a bowl season the potatoes with salt and pepper then place the potatoes around the chicken.
  • Sprinkle the whole garlic cloves and olives around the potatoes.
  • In a bowl whisk the juice of 2 lemons with the olive oil then drizzle over the chicken and potatoes in the pan.

If you love Greek food as much as we do then you will love this dish --- you may omit the capers and use your choice of chicken pieces instead of all legs --- omit the chicken and reduce the chicken broth, and you have an outstanding roasted potato dish --- this also works very well using sweet potatoes in place of russets.

3 -4 lbs chicken legs (can use less)
6 large russet potatoes, peeled and cut into about 3-inch cubes
2 tablespoons chopped minced fresh garlic (add the whole bulb if desired the more the better!)
1 large onion, sliced
2 -4 tablespoons capers, drained
3/4 cup chicken broth
1/2 cup olive oil
2/3 cup lemon juice (can use bottled, I prefer freshly-squeezed)
1 -2 tablespoon dried oregano (or to taste)
1 teaspoon dried rosemary (or to taste)
salt & freshly ground black pepper

Steps:

  • Set oven to 375 degrees F.
  • Grease a large roasting pan (large enough to hold the chicken).
  • Rub the chopped garlic into the chicken and season with salt and pepper.
  • Place the chicken into the pan along with the potatoes, onions and capers.
  • Pour the broth over.
  • In a small bowl whisk together oil, lemon juice, oregano and rosemary.
  • Pour evenly over the chicken and potatoes.

This Delicious dish was a real winner. I came up with it by combining 2 chicken recipes that I had. Fancy without a great deal of work! You can reduce the fat content by not using the olive oil and herbs on the outside, then when serving don't eat the skin! Also, it is just as yummy if you omit the ham. Haven't tried it without the feta, but I imagine that would be good as well.

1 (2 1/2 lb) roasting chickens, gutted,rinsed,and patted dry
1 tablespoon garlic-flavored olive oil (or plain)
1 teaspoon oregano
1 teaspoon parsley
1/4 teaspoon garlic salt
1/4 teaspoon garlic powder
2 cups chopped fresh spinach
3 pieces thin-sliced deli-style ham, chopped
1/4 cup crumbled feta cheese
1 slice whole wheat bread, broken into small pieces
1/4 cup chopped chives
1/2 cup pine nuts
1/4 cup melted butter
1/4 teaspoon salt

Steps:

  • Preheat oven to 325.
  • Brush chicken with oil.
  • Combine oregano, parsley, garlic powder, and garlic salt.
  • Rub onto chicken.
  • Combine spinach, feta, ham, bread, pine nuts, chives, butter, and pepper.
  • Slip fingers in between skin and breast, and Lightly stuff the pockets on both sides.
  • Lightly spoon stuffing into main cavity and neck, if desired.
  • Place in broiling pan, breast side up.
  • Roast for approximately 1 1/2 hours, or until meat thermometer reads 180 when inserted into thigh, and juices run clear.

1 3-4 lb whole chicken, preferably organic
1 ½ pounds small waxy potatoes such as Yukon Gold
2 garlic cloves, cut into thin slices
1 lemon
1/4 teaspoon oregano
1 1/2 teaspoons thyme
1-2 tablespoons olive oil
1 1/2 teaspoons salt
freshly ground black pepper
juice of 1 lemon

Steps:

  • Preheat the oven to 375°F. Cut the potatoes into 2-inch pieces and place them in a 9 by 13-inch baking pan (or thereabouts--something that is big enough for the chicken to rest on. Toss them with 2 teaspoons of the olive oil, 1/2 teaspoon salt, 1/2 teaspoon thyme, and the oregano. Push the potatoes towards the edges, making a space in the center fort the chicken. Rinse the chicken and remove the livers. Pat the chicken dry and put it, breast side up, on the baking dish that's holding the potatoes. Using a paring knife, pierce it about three times in each half of the breast. Wedge a slice of garlic into each piercing. Sprinkle with 1/2 teaspoon salt and some freshly ground pepper. Flip the chicken. Repeat on the other side, piercing the thigh and leg meat, and wedging in slices of garlic. Sprinkle with the remaining salt. Drizzle about 1 tablespoon of olive oil on top of the chicken, plus the juice of half the lemon. Cut a piece of foil so that it fits around the chicken, and place it on top like a hat. Bake the chicken for about 45-55 minutes, basting occasionally with its juices, until the chicken is cooked through--you'll know it's cooked when the juices run clear. It may take longer than this, depending on the size of your chicken, but you'll just have to check. You'll also have to check on the potatoes--if they're not close to done, cook a bit longer before proceeding to the next step. Take the chicken out of the oven. Toss the potatoes and remove the foil hat. Turn the chicken over so it's breast-side up and squeeze the second half of the lemon over it. Drizzle on a little more olive oil. Raise the heat to 425°F and cook for about 10-15 more minutes, until the skin browns a bit and the potatoes are done. Remove and let rest about 5 minutes before carving up the chicken and plating each portion with a generous serving of potatoes.

I came up with this after visit to a Greek Restaurant and having a wonderful meal of Greek Roast Chicken. I wanted to make it at home. This is a pretty close second. It's a great dinner when you are going to be home all day or if you aren't afraid to leave dinner in oven.

1 4# chicken
1 small sized onion
1 lemon
olive oil, extra virgin
cavender's greek seasoning

Steps:

  • 1. Wash the chicken and rinse the cavity. Dry inside and out with paper towel
  • 2. Mix toegther in a small jar the juice of the lemon (save the lemon) and some evoo. to the consistancy of salad dressing.
  • 3. peel and cut the onion in half
  • 4. Put the onion and lemon in the cavity of the chicken and sprinkle the inside of the chicken with the Seasoning Mix. You can use it generously it isn't too salty.
  • 5. Rub the chicken with the lemon juice and olive oil mixture. The sprinkle generously with the Seasoning Mix. Again, it isn't too salty. Be sure to get the back of the chicken too.
  • 6. Put in a ziplock bag and refrigerate overnight.
  • 7. Roast the chicken at 250 degrees for 5 to 6 hours; to an internal temperature of 180 degrees.
  • 8. Let it rest atleast 15 minutes before carving.

4 lbs cut-up chicken (cut breasts in half)
1 medium eggplant, cut in 1-1/2 in chunks (l lb)
1 bell pepper, cut in 1-1/2 in pieces
12 garlic cloves, whole and unpeeled
2 teaspoons oil
1 lemon, zest and juice
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried oregano

Steps:

  • Heat oven to 450 degrees F. Line two baking sheets with foil.
  • Put chicken on 1 side of each pan; put vegetables on other side.
  • Drizzle vegetables with oil. Sprinkle chicken and vegetables with lemon zest and juice, salt, pepper, and oregano. Toss to coat.
  • Roast side by side on the middle rack, turning chicken and vegetables once, for 25 to 30 minutes until chicken is cooked through and vegetables are tender.
