1 pound fresh white mushrooms
1 tablespoon olive oil
2 cloves garlic, minced
3 tablespoons salted butter, melted
1 pinch salt and ground black pepper to taste
2 tablespoons grated Parmesan cheese
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Clean mushrooms with a damp paper towel and gently remove and discard stems.
  • Drizzle oil into a large cast iron skillet to evenly coat. Place mushrooms into the skillet, cap-side down. Carefully sprinkle garlic into the mushroom cavities, taking care not to sprinkle directly into the skillet. Drizzle mushrooms with melted butter, then season with salt and pepper.
  • Roast in the preheated oven for 15 minutes. Sprinkle with Parmesan cheese and return to the oven for 3 to 5 more minutes. Remove from the oven and sprinkle with parsley. Let cool slightly before serving.

1 pound roma tomatoes, quartered
1 pound sliced button mushrooms
5 cloves garlic, chopped
2 tablespoons extra virgin olive oil
salt and pepper to taste
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon dried oregano leaves
¼ teaspoon dried marjoram leaves
¼ teaspoon dried thyme leaves
¼ teaspoon dried rosemary, crushed
¼ teaspoon dried sage leaves, crushed
¼ teaspoon dried basil leaves
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon ground paprika
¼ teaspoon white sugar
¼ teaspoon crushed red pepper
2 ¼ pounds pork chops

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • In a 9x13 inch baking dish, toss tomatoes, mushrooms, garlic, and olive oil with salt and pepper to taste. Mix lightly with hands to coat all ingredients with oil, and spread the tomato-mushroom mixture to the edges of the dish, leaving the center free for the pork chops.
  • Combine 1 teaspoon salt, 1/2 teaspoon black pepper, cumin, ground coriander, oregano, marjoram, thyme, rosemary, sage, basil, garlic powder, onion powder, ground paprika, sugar, and crushed red pepper in a bowl to make a spice rub.
  • Sprinkle the pork chops with the spice rub, working the rub well into both sides of the meat. Place pork chops in the center of the baking dish, surrounded by the tomato and mushroom mixture.
  • Roast in preheated oven until the pork is no longer pink in the center and mushrooms are tender, about 45 to 50 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C). Transfer pork chops to a serving dish and top with roasted tomato-mushroom mixture and all pan juices to serve.

Seared Sea Scallops with Sauteed Wild Mushrooms, Fresh Herb Salad, and Roasted Garlic Beurre Blanc image

4 shallots, finely diced
2 lemons, juiced
4 cups white wine, preferably Muscadet
4 fresh thyme sprigs
6 peppercorns
2 bay leaves
8 ounces roasted garlic
4 ounces heavy cream
32 ounces butter, cubed and cold
Kosher salt and freshly ground black pepper
Honey, optional
1/2 cup canola oil
24 ounces mixed mushrooms
4 tablespoons minced garlic
4 tablespoons minced shallots
4 tablespoons chopped mixed fresh herbs (parsley, tarragon, chives, basil)
Kosher salt and freshly ground black pepper
12 jumbo sea scallops
1 cup canola oil, divided
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Beurre Blanc: Combine the shallots, lemon juice, wine, thyme, peppercorns, bay leaves, and roasted garlic in a small sauce pot. Bring to a boil and reduce until almost dry, leaving about 1/8 cup. Reduce heat to low and add the cream. Begin adding the butter, 1 cube at a time, whisking continuously. As each cube incorporates into the sauce, add another until all butter has been added. Strain through a fine mesh strainer. Taste and adjust the seasoning with salt and pepper. If you feel that the sauce is too acidic, add a bit of honey to balance the flavor. Be sure to use only a small amount of honey so as not to make the sauce taste too sweet. Cover and keep warm until ready to serve.
  • Mushrooms: Place a saute pan over high heat and add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you just begin to see light wisps of smoke coming from the pan. Add the mushrooms and begin to saute until the mushrooms are cooked halfway. Add the garlic and shallots to the pan and continue to saute, keeping the mushrooms moving at all times. When the mushrooms are just cooked through add the fresh herbs to the pan and season with salt and pepper, to taste. Taste the mushrooms and adjust the seasoning, if necessary. Cover and keep warm while you saute the scallops.
  • Scallops: In a bowl, toss the sea scallops lightly in 1/2 cup canola oil. Season each scallop evenly on both sides with salt and pepper. Put a saute pan that is large enough to hold the scallops in 1 layer without them touching over high heat. Add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you begin to see light wisps of smoke coming from the oil. Add the scallops to the pan carefully and allow them to get a deep golden brown color. Turn the scallops and allow the second side to get the same golden brown color. If you want the scallops to be more cooked, place the scallops in a preheated 350 degree F oven until they reach the desired doneness. Serve with mushrooms and drizzle with buerre blanc sauce.

4 tablespoons unsalted butter, at room temperature
1 tablespoon chopped fresh flat-leaf parsley
2 cloves garlic, finely grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the mushrooms with a pinch of salt and nestle stemmed-side up in a small baking dish so the mushrooms are touching.
  • Put the butter, parsley and garlic in a small bowl and mash with a fork until well mixed. Evenly divide the butter between each cap. Drizzle the oil over the mushrooms.

1/4 pound shiitake mushrooms, cleaned and halved

Salt and freshly ground pepper
6 sprigs fresh thyme
1 tablespoon Worcestershire sauce

  • Preheat oven to 375 degrees F.
  • Combine the mushrooms and garlic in a large roasting pan, add the olive oil, and pepper and stir to combine. Add the sprigs of thyme and roast in the oven until golden brown and all of the liquid has evaporated, 25 to 30 minutes, stirring occasionally. 4 cups mushrooms, best to get a mix of varieties, cut into 1-inch pieces
2/3 cup extra virgin olive oil
12 garlic cloves, 8 whole and 4 finely grated on a Microplane or cheese grater
5 sprigs thyme
Salt
black pepper
1/2 teaspoon crushed red pepper flakes
2 tablespoons sherry vinegar or cider vinegar
1 plum tomato, seeded and diced
2 tablespoons chopped parsley
1 teaspoon pimentón smoked Spanish paprika
2 tablespoons chopped roasted and salted cashews, or Marcona almonds, or peanuts
Grilled bread, for serving optional

Steps:

  • Heat oven to 400 degrees. In a shallow roasting pan, mix together mushrooms, 1/3 cup of the olive oil, whole garlic cloves and thyme. Season with salt and pepper to taste. Roast, stirring occasionally, until mushrooms are golden brown and just starting to crisp, about 30 minutes. Remove from the oven, and discard thyme and garlic. Arrange the mushrooms in a shallow bowl, 6 to 8 inches in diameter.
  • In a small sauté pan, heat the remaining 1/3 cup olive oil until shimmering. Add grated garlic and red pepper flakes. Sauté until golden brown, and immediately add vinegar, tomato, 1 tablespoon of the parsley, and a pinch of salt. Remove from heat and immediately pour over the mushrooms.
  • Garnish with the remaining 1 tablespoon chopped parsley, pimentón, and chopped cashews. Serve immediately, while bubbly and hot. If desired, serve with grilled crusty bread.

2 (700 g) butternut squash
2 tablespoons olive oil
50 g butter
300 g baby button mushrooms
2 garlic cloves, crushed
1/2 lemon, juice of
2 tablespoons olive oil

Steps:

  • Heat oven to 220C/425°F.
  • Cut each squash in half and scoop out the seeds and membranes. Score a criss cross pattern in each squash and place on a baking tray cut side up. Drizzle with the olive oil, dot with the butter and season if desired. Cook for 40 mins on top shelf.
  • Place the mushrooms in an ovenproof dish with all the other ingredients and place of the shelf below the squash for its last 15 mins of cooking.
  • Serve with Broccoli and roast new potatoes.

2 lbs Yukon gold potatoes thinkly sliced

1/2 cup grated Pecorino Romano cheese

Steps:

  • Preheat oven to 350F. Remove white papery skins from garlic heads (do not peel or separate cloves). wrap each head separately in foil. Bake at 350 for 1 hour, cool 10 minutes. Separate cloves, squeeze to extract garlic pulp (you should have about 1/4 cup) Discard skins. Preheat oven to 375F. Heat oil in a large nonstick skillet over medium-high heat. Add shallots, saute 3 minutes or until softened. Add mushrooms, saute 5 minutes. Stir in vinegar, cook 1 minute or until liquid almost evaporates. Remove from heat. Place milk, garlic pulp, flour, thyme, salt and pepper in a food processor, process until smooth. Arrange one-third of potatoes in a 13 x 9 inch baking dish coated with cooking spray. Spread half of the shallots mixture over potatoes. repeat procedure with remaining potato slices. pour milk mixture evenly over potatoes. Cover with foil, bake at 375 for 30 minutes. remove foil, bake uncovered 30 minutes. Sprinkle with cheese, bake 15 minutes or until cheese is golden. Let stand 10 minutes before serving.

Roasted-garlic puree enriches this earthy mushroom risotto. The puree is introduced at the start of the recipe, in the stock, and returns at the end for a final flourish. (You might not need to use all of the stock.) Just-right risotto should be creamy--not too soupy, and not too dry.

2 quarts homemade or low-sodium store-bought chicken stock, skimmed of fat
Roasted-Garlic Puree, 1/4 cup
12 ounces assorted mushrooms, such as chanterelle, cremini, and portobello
3 tablespoons extra-virgin olive oil
5 tablespoons unsalted butter
2 shallots, finely chopped
1 cup Arborio rice
1/2 cup dry white wine
1/2 cup finely grated Parmigiano-Reggiano cheese, plus more for garnish
1/4 cup finely chopped fresh chives, plus more for garnish
Coarse salt and freshly ground pepper

Steps:

  • Bring stock to a simmer in a medium saucepan over medium heat. Reduce heat to low; whisk in 1 tablespoon garlic puree, and continue to simmer.
  • Remove stems from mushrooms, and finely chop. Cut mushroom caps into 1/4-inch-thick slices. Heat 1 tablespoon oil in a large saucepan over medium heat until hot but not smoking. Add caps, and cook, stirring occasionally, until golden, 5 to 7 minutes; transfer to a bowl.
  • Add remaining 2 tablespoons oil and 1 tablespoon butter to pan. Add shallots and mushroom stems, and cook, stirring, until shallots are soft, about 2 minutes. Add rice; cook, stirring, until coated with oil and butter, 3 to 4 minutes. Add wine; stir until completely absorbed.
  • Stirring constantly, add 3/4 cup simmering stock at a time, letting rice absorb each addition before adding the next. Continue to add stock until rice is creamy but al dente, 17 to 20 minutes.
  • Stir in the remaining 3 tablespoons garlic puree and 4 tablespoons butter, along with the cheese, chives, and reserved cooked mushrooms. Season with salt and pepper. Garnish risotto with additional cheese and chives.

16 even-sized open cup mushrooms, stalks cut level
3 Tbsp corn or vegetable oil
1/4 c unsalted butter, softened
3 clove garlic, chopped very finely
2 Tbsp fresh thyme, chopped
1 1/2 Tbsp lemon juice
salt and freshly ground black pepper to taste
1/4 c fresh breadcrumbs

Steps:

  • 1. Preheat the oven to 400F. Lightly fry the mushrooms, cap-side down, in hot oil for 20 seconds. Arrange the mushrooms in a shallow roasting tin with the stalks facing upwards. Mix together the butter, garlic,thyme, lemon juice and seasoning.

  • Preheat a large pot (preferably cast iron) on medium high heat.
  • Melt butter and 2 Tb EVOO.
  • Add sliced onions, salt, and pepper. Cook until onions become tender. Then add the sugar. Continue cooking until the onions become golden brown (about 30 or more minutes). Make sure you stir the onions often.
  • Meanwhile saute the sliced mushrooms.
  • Pizza:.
  • Preheat oven to 400 degrees.
  • Drizzle crust with a little EVOO.
  • Mash roasted garlic into a paste and spread on crust.
  • Scatter carmelized onions and mushrooms on top.
  • Sprinkle red pepper flakes (be careful not to add too much).
  • Top with sliced Brie and bake about 10-12 minutes.

Steps:

  • Mushrooms: Place a saute pan over high heat and add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you just begin to see light wisps of smoke coming from the pan. Add the mushrooms and begin to saute until the mushrooms are cooked halfway. Add the garlic and shallots to the pan and continue to saute, keeping the mushrooms moving at all times. When the mushrooms are just cooked through add the fresh herbs to the pan and season with salt and pepper, to taste. Taste the mushrooms and adjust the seasoning, if necessary. Cover and keep warm while you saute the scallops. Scallops: In a bowl, toss the sea scallops lightly in 1/2 cup canola oil. Season each scallop evenly on both sides with salt and pepper. Put a saute pan that is large enough to hold the scallops in 1 layer without them touching over high heat. Add enough canola oil to just cover the bottom of the pan. Allow the pan to preheat until you begin to see light wisps of smoke coming from the oil. Add the scallops to the pan carefully and allow them to get a deep golden brown color. Turn the scallops and allow the second side to get the same golden brown color. If you want the scallops to be more cooked, place the scallops in a preheated 350 degree F oven until they reach the desired doneness. Serve with mushrooms and drizzle with buerre blanc sauce.

2 tablespoons chopped fresh flat-leaf parsley
2 cloves garlic, minced
1 teaspoon anchovy paste
1 tablespoon extra-virgin olive oil
Finely grated fresh lemon zest, for sprinkling
Freshly ground pepper
Crusty bread, for serving

Steps:

  • 1. Preheat the oven to 400 degrees F. Remove the stems from the cremini and save for another use. Sprinkle the caps inside and out with salt and place stemmed-side up in a small baking dish; caps should be touching.
  • 2. Use a fork to mash the butter with the parsley, garlic, and anchovy paste until smooth. Stuff each cap with some of the butter. Drizzle the olive oil over the mushrooms and bake until the mushrooms are tender and the butter has melted, about 20 minutes. Sprinkle with lemon zest and pepper over the top. Serve with crusty bread.

4 shallots, finely diced
2 lemons, juiced
4 cups white wine, preferably Muscadet
4 fresh thyme sprigs
6 peppercorns
2 bay leaves
8 ounces roasted garlic
4 ounces heavy cream
32 ounces butter, cubed and cold
Kosher salt and freshly ground black pepper
Honey, optional
1/2 cup canola oil
24 ounces mixed mushrooms
4 tablespoons minced garlic
4 tablespoons minced shallots
4 tablespoons chopped mixed fresh herbs ( parsley, tarragon, chives, basil)
Kosher salt and freshly ground black pepper
12 jumbo sea scallops
1 cup canola oil, divided
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Beurre Blanc:
  • Combine the shallots, lemon juice, wine, thyme, peppercorns, bay leaves, and roasted garlic in a small sauce pot. Bring to a boil and reduce until almost dry, leaving about 1/8 cup. Reduce heat to low and add the cream. Begin adding the butter, 1 cube at a time, whisking continuously. As each cube incorporates into the sauce, add another until all butter has been added. A good burger that is healthy for you, and that has mushroom lovers in mind. We used the button mushrooms (personal preference). We roasted the garlic earlier in the day, so we used that. Am posting this as per request and I also have another friend in mind - eat hearty! Update: 02/07/2011 - after trying these a couple of times I decided that a Herbed Horseradish Mayonnaise would go well with it: 1/2 c mayo, 1 T prepared horseradish, 2 T parsley, basil or chives, 1 T EEVO, a squeeze of fresh lemon juice and kosher salt and freshly ground pepper. Stir it all together in a small bowl and use. This will make it more moist. Hope you like it. :)

1 lb ground turkey breast
1 tablespoon olive oil
6 garlic cloves, peeled
1 red onion, thinly sliced
8 ounces button mushrooms or 6 ounces cremini mushrooms, thinly sliced
1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon dried rosemary, crushed
1 teaspoon low sodium soy sauce (I used tamari)
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
3 tablespoons blue cheese, crumbled
4 kaiser rolls or 4 ciabatta rolls
salad greens, for garnish (optional)

Steps:

  • Prepare grill for direct-heat cooking and remove grate. We did not use the grill we used a grill pan on the stove.
  • In nonstick skillet over medium-high heat, heat oil.
  • Add garlic cloves and cook until lightly browned.
  • Turn cloves as needed to evenly brown.
  • Remove to cutting board to cool.
  • In skillet, cook onion slices & tamari sauce in remaining oil until tender.
  • Toss in mushrooms and cook until tender.
  • Add balsamic vinegar, stirring until almost evaporated, about 30 seconds.
  • Remove from heat and allow to cool slightly while preparing burgers.
  • Mince garlic.
  • In medium-sized bowl, combine garlic with turkey, mustard, rosemary, salt and pepper.
  • Shape into 4 burgers about 4-inches in diameter.
  • Spray grate with cooking spray and place over hot coals or prepare grill pan by spraying with a bit of cooking spray.
  • Grill burgers about 5 minutes per side, or until no longer pink in the middle (165ºF).
  • Place burgers& mixed greens on sourdough French rolls, Kaiser rolls or Ciabatta rolls.
  • Stir bleu cheese into mushroom mixture and spoon on top of burgers.
  • Serve with fries, sliced tomatoes and a beer!

1 lb. mushrooms (I used brown Crimini mushrooms)
2 T + 1 tsp. olive oil
salt and fresh ground black pepper to taste
1 T finely minced garlic
1 T balsamic vinegar
2 T finely chopped fresh thyme leaves
1 T chopped fresh parsley (optional, for garnish)

Steps:

  • Preheat oven to 400F/200C or heat gas or charcoal grill to medium high. Wash mushrooms, pull out stems, and cut into halves (or quarters if the mushrooms are large.) Put mushrooms into bowl and toss with 2 T olive oil, salt, and fresh ground black pepper. Cover a roasting pan with foil, then arrange mushrooms on the pan in a single layer. (Spread them out as much as you can. For cooking on a grill, I'd probably use heavy foil to make a "pan" so the flame doesn't turn the bottom of the roasting pan black.) Roast mushrooms 15 minutes. While mushrooms cook, finely chop fresh thyme, then mix with minced garlic, balsamic vinegar, and the tsp. of olive oil. (You could mix this right in the bowl you originally tossed the mushrooms with.) After 15 minutes, drain off any liquid that has accumulated. (If you spread the mushrooms out well, the liquid will evaporate, but if yours are too crowded like mine, you'll have a little liquid to pour off.) Then toss the hot mushrooms with they garlic-thyme mixture. Arrange back on roasting pan and cook about 10 minutes more. Serve hot, sprinkled with chopped fresh parsley if desired.

16 even-sized open cap mushrooms, stems cut level
3 Tbsp vegetable oil or corn oil
1 1/2 stick unsalted butter, softened
3 clove garlic, chopped very fine
2 Tbsp fresh thyme, chopped
1 1/2 Tbsp lemon juice
salt and pepper, to taste
1/2 c bread crumbs

Steps:

  • 1. Preheat oven to 400 degrees. Cut stems level to the mushroom cap.
  • 2. Lightly fry the mushrooms, cap-side down, in hot oil for 20 seconds.
  • 3. Arrange the mushrooms in a shallow roasting pan with stems facing upwards.
  • 4. Mix together the butter, garlic, thyme, lemon juice, and seasoning.
  • 5. Spoon a little garlic butter on to each mushroom.
  • 6. Then lightly press the bread crumbs on top.

2 pounds mushrooms, preferably wild mushrooms such as shiitake, chanterelles, morels and so on, with stems left on
12 tablespoons butter at room temperature
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried
10 sprigs fresh herbs, preferably thyme, although parsley, tarragon or sage may be used
1/4 cup red-wine vinegar
Salt to taste, if desired
Freshly ground pepper to taste
1 cup loosely packed whole, unpeeled roasted garlic cloves, a href="https://cooking.nytimes.com/recipes/8605-roasted-garlic">see recipe

Steps:

  • Preheat the oven to 450 degrees.
  • Cut away the stems from the mushrooms. The stems may be put to another use, such as in soups, or they may be discarded.
  • Put the mushroom caps in a double layer in a rimmed baking dish and set aside.
  • Blend the butter with the thyme leaves.
  • Tie an equal number of fresh herb sprigs into three bundles. Insert these at intervals between the mushroom caps.
  • Divide the butter into 16 portions and scatter these on top of the mushrooms.
  • Sprinkle the vinegar, salt and pepper over all.
  • Place the baking dish in the oven and bake 15 minutes. Sprinkle the roasted garlic over all. Stir the mushrooms and baste them with the butter. Continue baking 10 minutes.
