1 medium head garlic
1 tablespoon olive oil
2 pounds russet potatoes, peeled and quartered
4 tablespoons butter, softened
½ cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Drizzle garlic with olive oil, then wrap in aluminum foil. Bake in preheated oven for 1 hour.
  • Bring a large pot of salted water to a boil. Add potatoes, and cook until tender, about 15 minutes. Drain, cool and chop. Stir in butter, milk, salt and pepper.
  • Remove the garlic from the oven, and cut in half. Squeeze the softened cloves into the potatoes. Blend potatoes with an electric mixer until desired consistency is achieved.

1 head garlic
Olive oil
2 pounds red potatoes, washed well and quartered
Salt and freshly ground black pepper
5 tablespoons butter
3/4 cup heavy cream

Steps:

  • Preheat oven to 425 degrees F.
  • Slice off the very top of the garlic head. Drizzle head with olive oil and wrap in foil. Place on a sheet tray and bake until tender and fragrant, roughly 35 minutes. Remove from the oven and let cool. Remove the cloves and mash with a wooden spoon.
  • Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil. Cook until fork tender and drain. Mash the potatoes until smooth.
  • Meanwhile heat butter and cream until butter melts. Add the roasted garlic and potatoes and mash all together.
  • Taste and season with salt and pepper. Serve immediately.

1 garlic head, unpeeled
2 1/2 pounds red potatoes (about 16 medium)

Steps:

  • Preheat oven to 400°F.
  • Cut top 1/4 inch off garlic head and wrap head in foil. Roast garlic 40 to 50 minutes, or until very soft, and cool. Squeeze roasted garlic from head and reserve.
  • In a 4-quart saucepan cover potatoes with water by 2 inches and simmer until very tender, about 30 minutes. Drain potatoes in a colander (do not peel). Transfer potatoes while still hot to a large bowl and add butter. With an electric mixer on low speed mash slightly. Beat in sour cream, buttermilk, chives, and oil until combined well. Add Parmesan, reserved garlic, pepper, and salt to taste, beating until smooth.

1 head garlic

1/4 cup sour cream
4 tablespoons butter

Steps:

  • Separate head of garlic into individual cloves.
  • Toss in olive oil and wrap tightly in small piece of aluminum foil.
  • Bake in 350°F (180°C) oven for 45 minutes.
  • When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
  • Mash the roasted garlic with a fork, or force through a fine strainer.
  • If you use a ricer as recommended below, simply rice the garlic along with the potatoes.
  • Peel and boil potatoes in salted water until tender.
  • Force the cooked potatoes through a ricer (recommended) or mash by your usual method.

  • Caribou Loin and Sauce: Preheat oven to 350 degrees F.
  • Put 2 1/2 ounces of butter and 1 tablespoon of vegetable oil in a large saute pan and heat. Season the caribou with salt and pepper. Sear caribou over low heat. Remove the meat from the pan, add the wild mushrooms and shallots. After searing the meat, put it in a pan and cook in the oven for 15 minutes. It is very important that you served this meat rare or medium rare.
  • Deglaze the pan with the red wine. Add the veal stock and the currant jelly. Reduce the mixture by half. Add salt and pepper, to taste.
  • Potatoes: Bring a large pot of salted water to a boil. Peel the potatoes and boil for 20 to 25 minutes. Drain the potatoes and mash. Place back in the pot with 1-1/2 ounce of butter, the mashed roasted garlic, the roasted bacon and the hot milk.

  • Preheat the oven to 375 degrees F. Slice off about ¼ inch from the top of the garlic. Place on a sheet of foil and drizzle with olive oil. Wrap in the foil, place on a baking sheet and roast until the garlic is soft, 50 to 60 minutes. Meanwhile, spread 1 cup parmesan in a thin layer on a baking sheet (use a silicone mat if you have one); sprinkle with the chopped rosemary. Bake until golden and bubbling, 5 to 6 minutes.   • Drain the potatoes and return to the pot over low heat; cook until any excess water evaporates, about 2 minutes. Strain the milk mixture into the pot with the potatoes, pressing on the solids. Add the butter, olive oil and 2 teaspoons salt and mash well with a potato masher. Fold in the mascarpone and the remaining 1/4 cup parmesan.
  • Transfer the potatoes to a bowl; crumble the crispy parmesan on top before serving.

Red Wine Braised Beef Shanks With Roasted Garlic Mashed Potatoes image

My husband went shopping at the halal (like kosher) meat market and brought back beef shanks, which I'd never worked with. After searching around for what I could do with them, I ended up augmenting a recipe that seemed to have been a synopsis of a recipe demonstrated on Emeril's show. I made some changes and boy howdy! Husband says I can make this every night! I could just eat the potatoes and gravy and be quite happy. For dessert, I served baked apples with a raisin/nut/spice stuffing. The recipe is written for stove/oven braising, but I will be trying this next time on the low setting of my crockpot. I'm sure it will work quite nicely, perhaps even better. This is a really homey dish, but has dinner party taste and can be prepared in the morning and left to cook all day while you get ready.

4 (6 ounce) beef shanks, about
enough olive oil, to form a 1/8 inch layer in pan
1 cup flour, seasoned with
salt
black pepper
1 tablespoon hot paprika
1 teaspoon oregano
1 -2 chopped red onion
2 stalks diced celery
2 diced carrots
2 diced parsnips
2 tablespoons chopped garlic
3 bay leaves
2 tablespoons fresh thyme
2 tablespoons fresh rosemary
2 pints baby portabella mushrooms, trimmed and quartered
1 cup red wine (Cabernet Sauvignon recommended)
2 quarts beef stock or 2 quarts other dark stock
3 -4 tablespoons cornstarch (if necessary)
1/4 cup chopped Italian parsley
12 yukon gold potatoes, chopped with skins on
1 head garlic, roasted and chopped
1/4 cup butter, diced
salt and black pepper
1 -2 tablespoon rubbed sage, to taste
1/3-1/2 cup half-and-half

Steps:

  • If the shanks have a white membrane around the outside, slit that membrane from top to bottom all around the meat to prevent curling during cooking.
  • Season the beef shanks with salt and pepper.
  • Dredge the beef shanks in the seasoned flour, coating each side completely.
  • When the oil is hot, sear the beef shanks for 2 to 3 minutes on each side, or until brown on all sides.
  • Remove the shanks and set aside.
  • Add the onions to the pan and saute for 2 minutes.
  • Season with salt and pepper.
  • Add the celery, carrots and parsnips, and continue to saute for 1 minute.
  • Season with salt and pepper.
  • Stir in the garlic and herbs.
  • Cook for 1 minute.
  • Deglaze the pan with the red wine, scraping the bottom and sides to loosen the browned particles.
  • Add the stock and mushrooms.
  • Bring the liquid up to a boil and reduce to a simmer.
  • Add the beef shanks and continue to cook for about 2-4 hours, basting the shanks often, or until the sauce is stew-like and the meat starts to fall off the bone.
  • You can leave it to simmer on the stove, or put the whole pot into a 300 degree oven.
  • Season with salt and pepper if needed.
  • If sauce is not thick enough, add cornstarch mixed with sauce from stew.
  • About half an hour before you are ready to serve, make the potatoes.
  • Boil and drain the potatoes.
  • Add seasonings and butter, then about 1/3 c half and half.
  • Mash to desired consistency, adding more cream as necessary.
  • To serve, mound garlic mashed potatoes in the center of the plate.
  • Lay a beef shank beside the potatoes and spoon some of the gravy over the top.
  • Sprinkle with parsley and serve.

1 head garlic
olive oil
5 large sweet potatoes (Light yellow ones, not the orange yams)
6 tablespoons butter
1/2 cup whipping cream
salt and white pepper

Steps:

  • Cut the top off unpeeled garlic head. Drizzle with olive oil, place in baking pan & bake & 250 degrees for 30 - 40 minutes.
  • Bake the potatoes at 400 degrees for 1 hour or until tender.
  • Cut potatoes in half, scoop into saucepan and mash.
  • Squeeze roasted garlic into the mashed potatoes.
  • Add butter, mash while adding cream a little at a time. Add salt & pepper to taste.
