This mustard vinaigrette recipe is light and lemony, and extremely versatile too: Add fresh chopped herbs, garlic, tomatoes, or spicy mustard depending on your mood. It'll go great on any salad, from hearty greens like romaine to more softer lettuces like Bibb. You can even use it on roast chicken or your favorite potato salad.

4 tsp Fresh lemon juice
2 tsp White wine vinegar
2 tsp Dijon mustard whole-grain preferred
1 tsp Honey
0.5 tsp Sea salt
0.25 tsp Black pepper freshly ground
0.25 cup(s) Olive oil

Steps:

  • In a small bowl, combine water, lemon juice, vinegar, mustard, honey, salt and pepper. Slowly pour in oil, whisking the dressing at the same time. Yields about 1 tablespoon per serving.

Sour cream may be substituted with plain yogurt to cut some calories. This is great for dipping veggies such as artichokes, asparagus, or whatever, it's really versatile.

1 head garlic (whole bulb)
3 tablespoons mayonnaise
3 tablespoons sour cream
3 tablespoons olive oil
salt and pepper

Steps:

  • Cut off top of garlic bulb to expose most of the garlic cloves.
  • Put the bulb in an oven-safe small dish or on top of a sheet of foil.
  • Drizzle olive oil on the tops of the garlic cloves, add more if needed to drench the tops and sides of the whole bulb. Sprinkle some salt on the top of the bulb on the oil.
  • Wrap or seal up the garlic bulb with foil.
  • Roast in oven at 400°F for 30-40 minutes, until tops and sides are browned and roasted.
  • Take out of the oven and cool for 10 minutes.
  • When cooled enough to handle, squeeze out the garlic cloves from the root or the bottom of the bulb, into a small bowl.
  • Add mayonnaise and sour cream, using a fork, stir until blended.
  • Add pepper to taste, and salt if needed.

I have not tried this recipe. I got the recipe from a Weight Watchers magazines. It is a 2 point value. The garlic for this dipping sauce can be roasted anytime the oven is on; just place the unpeeled cloves on a baking dish. An exact temperature or cooking time is not important as long as the garlic develops a rich, brown color and the flesh becomes soft enough to mash easily. The dipping sauce may be store in the refrigerator for up to 3 days. This dipping sauce is to be served with the New England Shore Dinner. Each serving is 3 tablespoons.

1/2 cup low sodium vegetable broth or 1/2 cup chicken broth
2 teaspoons cold water
2 teaspoons cornstarch
1/4 cup malt vinegar
4 roasted garlic cloves, mashed to a paste
2 tablespoons dijon-style mustard
1/2 teaspoon honey
2 tablespoons peanut oil
1/4 teaspoon salt
fresh ground pepper

Steps:

  • Bring the broth to a boil in a saucepan. Stir the water into the cornstarch in a small bowl and drizzle it into the simmering broth, stirring constantly until the mixture boils and thickens, about 1 minute.
  • Remove the pan from the heat; add the vinegar, garlic, mustard, and honey. Let the mixture cool completely; then drizzle in the oil, salt, and pepper, whisking constantly. Serve in small cups.
  • Cooks Tip: To reserve any unused roasted garlic, peel the cloves and place them in a small jar. Cover with cooking or salad oil; then cover jar and refrigerate for up to 4 days. Use the oil in other sauteed dishes that would benefit from subtle roasted garlic aroma.

2 heads garlic
1/4 cup sherry vinegar
1 sprig fresh rosemary
1/2 cup extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees. Wrap garlic in aluminum foil. Place garlic on rack in oven, and roast until very tender, about 1 hour. Remove from oven, and let cool in foil.
  • Cut off tops of garlic heads with a serrated knife. Squeeze garlic pulp into a small saucepan. Place over medium-low heat, and whisk in vinegar. Rewhisk, if necessary, before serving. Finely chop rosemary, and add to saucepan. Slowly whisk in olive oil, salt, and pepper, and turn off heat; keep dressing warm until ready to use.

3 heads garlic, unpeeled
1 tablespoon olive oil
½ cup sour cream
¼ cup mayonnaise
1 green onions, chopped
1 tablespoon red wine vinegar
½ teaspoon salt
¾ tablespoon ground black pepper

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Cut off the top of the head of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of the head. Brush the cut cloves with a small amount of olive oil, then nestle the head into a piece of aluminum foil.
  • Bake in the preheated oven until the cloves are tender and nicely browned, about 1 hour. Remove, and allow to cool to room temperature.
  • Once cool, squeeze the garlic cloves out of their skins and into a mixing bowl. Mash well with a wire whisk, then add the sour cream, mayonnaise, green onions, vinegar, salt, and pepper. Whisk until evenly blended, then refrigerate 2 to 4 hours to allow the flavors to blend.
