Show: Down Home with the Neelys Episode: We Really Do Have Friends (Pat and Gina Entertaining Friends) Since we are garlic lovers I added a tablespoon of garlic powder to the rub and 3 chopped garlic cloves to the stuffing. TIPS: Line the baking sheet pan with foil under the wire rack for an easy clean-up. The veggies and herbs stuffed in the cavities of the hens will impart flavor to the meat as it cooks. Be sure not to crowd the hens on the baking sheets or else the skin won't crisp up properly and they will take much longer to cook.

1 tablespoon salt
2 tablespoons lemon-pepper seasoning
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 (1 1/2 lb) Cornish hens, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning.
  • Rub olive oil all over the hens and season each with the salt mixture.
  • Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans.
  • Loosely stuff the cavities of each hen with some green bell pepper, celery and onion.
  • Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear.
  • Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

Recipe is from one my old cookbooks, Caprial's Cafe. "Make the salsa bout 1 hour in advance of serving with the cornish hens."

SWEET CORN SALSA
1 cup(s) fresh corn kernels
1 - red onion, finely chopped
3 - garlic cloves, chopped
2 - red bell peppers, finely chopped
1 - lime, juiced
1 - lemon, juiced
1/3 cup(s) olive oil
1/2 teaspoon(s) ground cumin
2 - jalapeno peppers, seeded and finely chopped
1 teaspoon(s) fresh cilantro, chopped
- salt and freshly ground black pepper to taste
FOR THE HENS
4 - cornish game hens
1 - lime, halved
2 teaspoon(s) olive oil
1/4 teaspoon(s) chili powder
1/4 teaspoon(s) ground cumin
- salt and freshly ground black pepper to taste

Steps:

  • For the Sweet Corn Salad - mix together well the corn kernels, onion, garlic and red peppers in a medium non-reactive bowl. Add the lime juice, lemon juice and olive oil and mix well. Add the cumin, jalapeno peppers, cilantro, salt and pepper. Mix well and set aside for at least 1 hour to allow the flavors to blend.
  • Meanwhile, preheat the oven to 375 degrees and prepare the hens. Place the hens in a large roasting pan and rub them all over with the cut halves of the lime. Drizzle with olive oil. Sprinkle the chili powder and cumin over chicken, as well as, salt and pepper.
  • Roast the hens for 30 minutes or until the hens are done and juices run clear. Allow the hens to rest 2-3 minutes before serving. Halve the game hens and place on a platter. Spoon the Sweet Corn Salsa over the top of the hens. Serve immediately.

3/4 cup bottled fruit salsa
1 1/2 tablespoons chopped fresh thyme
1/2 teaspoon hot pepper sauce
1 tablespoon olive oil
3/4 teaspoon ground allspice
1 1 3/4-pound Cornish game hen, split in half along backbone

Steps:

  • Preheat oven to 450°F. Mix first 3 ingredients in medium bowl. Transfer 3 tablespoons salsa mixture to small bowl and stir in oil and allspice. Place hen halves on rack set on baking sheet. Sprinkle with salt and pepper; brush with oil mixture. Roast until juices run clear when thigh is pierced, about 25 minutes. Transfer hen halves to plates. Spoon remaining salsa mixture on top.
