You can make the dressing while the potatoes cook or it can be made ahead and stored in an airtight container in refrigerator for up to 2 days. Let the chilled dressing stand 30 minutes before using. If you cannot find fingerling potatoes, you can use 1 1/2 lb. small red potatoes, halved, with a bake time of 35 minutes or 1 1/2 lb. russet potatoes, quartered, with a bake time of 40 minutes. 1 1/2 lbs fingerling potatoes
1 1/2 tablespoons olive oil, divided
1 teaspoon salt, divided
3/4 teaspoon cracked pepper, divided
1/2 lb tiny green beans (haricots verts)
1/4 cup buttermilk
2 tablespoons fresh lemon juice
1 teaspoon sugar
1 teaspoon dijon-style mustard
3/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1/2 cup olive oil
2 tablespoons finely chopped green onions
1 tablespoon chopped fresh tarragon

Steps:

  • Preheat oven to 425°.
  • Cut fingerlings in half lengthwise, and place in a large bowl.
  • Toss with 1 tablespoons olive oil, 1/2 teaspoons salt, and 1/2 teaspoons pepper.
  • Place potato halves, cut sides up, in a jelly-roll pan.
  • Toss green beans with remaining 1/2 tablespoons oil, 1/2 teaspoons salt, and 1/4 teaspoons pepper, and place in another jelly-roll pan.
  • Bake potatoes at 425° for 30 to 32 minutes or until tender and browned.
  • While the potatoes are baking, make the sauce.
  • Whisk together first 6 ingredients in a small bowl until combined.
  • Gradually whisk in oil in a slow, steady stream, whisking constantly until smooth.
  • Whisk in green onion and tarragon.
  • Use immediately, or store in an airtight container in refrigerator up to 2 days.
  • Let chilled dressing stand 30 minutes before using.
  • Remove potatoes from oven, and let potatoes stand in pan.
  • Bake green beans at 425° for 12 minutes.
  • Arrange green beans around roasted potatoes on a serving platter.
  • Drizzle with Creamy Tarragon Dressing.

12 ounces fingerling or baby red potatoes
8 ounces green beans, cut in half
1 pound asparagus, trimmed and cut into 1-inch pieces
1 pound gemelli or tubetti (or any short pasta you choose)
1/2 cup pesto
one 15 1/2-ounce can cannellini beans (drained and rinsed)
one 6-ounce jar roasted peppers, sliced into strips
salt and pepper to taste

Steps:

  • 1. Place 12 ounces fingerling or baby red potatoes in a medium saucepan and cover with cold water. Bring to a boil and cook until the potatoes are tender when pierced with a fork, about 10 minutes. Spread them out on a baking sheet to cool, then slice the potatoes into 1/2-inch coins.
  • 2. Bring a large pot of water to a boil and add 1 teaspoon salt. Prepare a bowl of ice water. Add 8 ounces green beans, cut in half, and 1 pound asparagus, trimmed and cut into 1-inch pieces so they're about the size of the pasta you're using, and blanch the vegetables just until they're bright green, 1 to 2 minutes. Scoop the vegetables out of the hot water with a spider or a strainer, rinse them with cold water, and submerge them in the ice water until completely cool, then drain, pat dry, and set aside.
  • 3. Add 1 pound gemelli or tubetti (or any short pasta you choose) to the boiling water and cook until al dente. Drain the pasta and put it in a large bowl to cool a bit.
  • 4. Toss in the potatoes, asparagus, green beans, 1/2 cup pesto, one 15 1/2-ounce can cannellini beans (drained and rinsed), one 6-ounce jar roasted peppers, sliced into strips, and salt and pepper to taste. If preparing ahead of time, combine all of the ingredients 1 to 2 hours before serving.

  • Preheat oven to 500 degrees F and place a baking sheet inside to heat.

1 pound fingerling or small potatoes
1/3 cup good olive oil
Kosher salt and freshly ground black pepper
1 pound French string beans (haricots verts), trimmed
1/4 cup freshly grated Parmesan cheese

  • Preheat the oven to 425 degrees F.
  • Cut the fennel bulbs into 6 wedges each, cutting through the core to keep the wedges intact. Place on a sheet pan. Cut the potatoes in half lengthwise and place them on the pan with the fennel. Drizzle the olive oil on the vegetables, then sprinkle with 2 teaspoons salt and 1 teaspoon pepper. Toss with your hands.
  • Roast the vegetables for 25 to 30 minutes, until the potatoes are tender, tossing once while cooking. Handful asparagus spears, woody ends trimmed
Handful green beans, ends trimmed
1 to 2 tablespoons olive oil
Sea salt and fresh cracked pepper, to taste

Steps:

  • Preheat the oven to 400°F. Par-cook the fingerling potatoes for 5 to 6 minutes in a large pot of boiling water. Remove from water and let cool. Line a baking sheet with tin foil for easier clean up then spray with cooking spray. Slice the potatoes into half, lengthwise and put on the baking sheet, drizzle with half of the olive oil and season with salt and pepper to taste. Bake for 10 to 15 minutes or until golden brown. While the potatoes are cooking, toss the asparagus and green beans with remaining olive oil and season with salt and pepper to taste. Remove the potatoes from oven and toss the asparagus and green beans on the baking sheet with the potatoes. Return to the oven and cook for an additional 4 to 5 minutes or until the veggies are tender but still a bit crisp. Enjoy.
