1 pound Yukon Gold potatoes, peeled, cut into 3/4-inch-wide wedges
8 large skinless chicken thighs with bones
2 tablespoons (or more) fresh lime juice, divided
1/3 cup fresh orange juice
3 tablespoons chili powder
1 tablespoon paprika
1 tablespoon smoked paprika
2 teaspoons finely grated orange peel
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil
1 cup low-salt chicken broth
2 tablespoons coarsely chopped fresh cilantro, divided
1 tablespoon coarsely chopped fresh parsley
50 olives (preferably mixed colors and sizes)
Ingredient info: Smoked paprika is available at many supermarkets, at specialty foods stores, and from latienda.com.
Equipment tip:
A heavy-duty rimmed baking sheet, a.k.a. half sheet pan or jelly roll pan (12x17 inches), is ideal for roasting the chicken thighs and lots of other foods. The low rim allows for efficient roasting, and this sturdy pan won't buckle at high heat.Try Chicago Metallic's large jelly roll pan ($16 at target.com).

Steps:

  • Preheat oven to 400°F. Cook potatoes in large saucepan of lightly salted water until almost tender, about 7 minutes. Drain.
  • Meanwhile, place chicken thighs on large heavy-duty rimmed baking sheet. Sprinkle chicken generously with salt; drizzle with 1 tablespoon lime juice and set aside. Whisk 1 tablespoon lime juice, orange juice, chili powder, both paprikas, grated orange peel, ground cumin, dried oregano, and 1/2 teaspoon salt in small bowl. Rub chili mixture all over chicken. Arrange potato wedges on baking sheet, nestling around chicken. Drizzle olive oil over chicken and potatoes. Bake chicken and potatoes 20 minutes. Increase oven temperature to 425°F. Turn chicken and potato wedges; spoon juices over. Bake 10 minutes longer. Add chicken broth, 1 tablespoon chopped cilantro, and chopped parsley, stirring to scrape up any chili bits at bottom of baking sheet. Turn chicken over. Bake until chicken is cooked through and beginning to brown in spots, about 10 minutes longer.
  • Carefully transfer chicken and potatoes to platter, keeping potatoes intact. Place baking sheet over 2 stovetop burners. Boil sauce until reduced to 1 cup, about 3 minutes. Mix in olives. Season sauce to taste with salt and pepper and additional lime juice, if desired. Pour sauce over chicken and potatoes; top with remaining tablespoon cilantro and serve.

1/4 cup olive oil
1 tablespoon minced fresh chervil or 1 teaspoon dried chervil

1 broiler/fryer chicken (3 to 4 pounds)
2 orange slices
2 lemon slices
2 onion slices

Steps:

  • In a spice grinder or with a mortar and pestle, grind mustard seed to a powder; transfer to a small bowl. Stir in oil, chervil, vinegar, Worcestershire sauce and pepper. Rub over outside and inside of chicken; place on a large plate. Refrigerate, covered, overnight., Preheat oven to 350°. Place chicken in a shallow roasting pan, breast side up. Loosely stuff chicken with orange, lemon, onion and parsley. Tuck wings under chicken; tie drumsticks together., Roast 1-1/4 to 1-3/4 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°. Coarse salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1 lemon, quartered
1 orange, quartered, plus 1/2 cup fresh juice (from 2 to 3 oranges)
1/4 cup dry white wine, such as Sauvignon Blanc
12 large soft dates, such as medjool or khadrawi, halved and pitted
3 sprigs thyme
1 cup large green olives, such as Cerignola

Steps:

  • Preheat oven to 450 degrees. In a large roasting pan, season chicken with salt and pepper; drizzle with oil. Squeeze lemon and orange over chicken, then add fruit to pan. Add wine, orange juice, half of dates, and thyme. Roast 25 minutes.
  • Remove pan from oven; rotate chicken pieces if browning unevenly. Add olives and remaining dates. Roast until a thermometer inserted in chicken breast (avoiding bone) registers 160 degrees, about 15 minutes more. Transfer chicken and citrus to a platter.
  • Place roasting pan over high heat, mashing some of dates with the back of a wooden spoon, until sauce is reduced and thickened, about 3 minutes. Pour over chicken; serve.

1 pound small red potatoes, halved

¼ cup grated Parmesan cheese
3 clementines
¼ cup fresh lemon juice, or as needed
2 tablespoons melted butter
1 teaspoon Italian seasoning
¾ teaspoon garlic powder, or to taste, divided
2 cups broccoli florets
2 clementines, sliced

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  • Slice chicken breasts into 3 or 4 tenders about 2 inches wide.
  • Toss potatoes with olive oil to coat; sprinkle with 1/3 the sage. Season with salt and pepper. Lay potatoes in a single layer on the prepared baking sheet.
  • Bake in the preheated oven until golden, 20 to 25 minutes.
  • Combine bread crumbs, Parmesan cheese, and another 1/3 the sage in a shallow bowl.
  • Zest, halve, and juice 3 clementines. Add enough lemon juice to make 1/2 cup of citrus juice. Quarter juiced clementines; reserve.
  • Combine citrus juice, melted butter, Italian seasoning, and 1/2 teaspoon garlic powder in another bowl. Dip chicken tenders one at a time into the juice mixture; coat with the bread crumb mixture.
  • Toss broccoli with the remaining juice mixture and sage.
  • Reduce oven temperature to 400 degrees F (200 degrees C).
  • Scrape potatoes from the pan using a spatula; toss slightly to make room for chicken and broccoli. Add the coated chicken and top with 2 sliced clementines. Add broccoli in a single layer. Sprinkle remaining garlic powder on top; season with salt and pepper. Scatter reserved clementine quarters around the pan.

Here is what is stated about the recipe: " These oven-roasted wings get plenty of flavor from a marinade of orange juice, soy sauce, sriracha and garlic. Serve by themselves, or with a little bit of sweet Thai chili sauce for dipping." Update 10/13/2013: I have now made these deliciously different wings and loved them. I still made a batch of baked buffalo wings for DH but I just ate these wings. The only change I made was to decrease the oven temp to 425 degrees, as mine seemed to be getting very caramelized/charring at 450.

2 limes, quartered
1 (3 lb) chicken, washed and patted dry
2 tablespoons ground cumin
kosher salt

1 cup chicken stock (more if needed)

Steps:

  • Preheat oven to 400 degrees.
  • Remove the zest from 2 orange wedges and 2 lime wedges and set aside.
  • Rub chicken with juice of those wedges.
  • Season the entire chicken, including the cavity, with the cumin, salt and pepper to taste.
  • Inside the cavity, place the used orange and lime wedges, plus 3 orange wedges, 3 lime wedges, 2 cloves of garlic and 3 sprigs of oregano.
  • Place a small roasting pan over high heat and add the oil.
  • When the oil smokes, place the chicken, breast-side down in the pan.
  • Sear, rolling slightly for even browning, until the breast is golden brown, about 4 to 5 minutes.
  • Remove the chicken from the pan, slip a flat rack on bottom of pan, then place the chicken on the rack, breast-side up.
  • Add the stock, remaining garlic cloves and a couple more sprigs of oregano to the pan.
  • Squeeze the juice of the 7 orange wedges and remaining lime wedges into the pan, adding the juiced wedges to the pan as well.
  • Roast until the chicken juices run clear when the leg is pieced near the joint, about 1 hour and 30 minutes.
  • Check the moisture in the pan a few times while cooking, adding chicken broth if the pan juices are drying up.
  • Transfer chicken to a warm platter, and allow it to rest for 20 minutes before carving. Remove the fruit wedges, oregano and garlic from the pan, then place the pan juices in a small saucepan.
  • Bring to a simmer over medium heat, taste and adjust seasoning, adding more orange juice from the remaining wedges if desired.
  • Remove from heat and add the reserved zest. Carve the chicken and serve with the sauce.

4 large bone-in, skin on chicken breasts, about 3 pounds
4 large whole chicken thighs, about 2 pounds
1/2 navel orange, zested, plus the juice of 1 whole orange
2 limes, 1 zested, both juiced
1/2 cup extra-virgin olive oil
4 large cloves garlic, peeled and smashed
1 teaspoon kosher salt, plus more for seasoning
Freshly cracked black pepper

Steps:

  • Put the chicken in a large nonmetalic bowl. Put the orange and lime zests in a small bowl and add the fruit juices. Whisk in the olive oil, garlic, 1 teaspoon salt, and a generous grind of black pepper. Pour the marinade over the chicken and toss until well coated. Marinate for 20 to 30 minutes but no longer than 45 minutes.
  • Preheat the oven to 375 degrees F. Put a rack on a rimmed baking sheet. With tongs, remove the chicken pieces from the marinade and arrange them on the rack leaving space between each piece. Drizzle a small spoonful of the marinade over the top of each chicken piece; season well with salt and pepper, to taste. Citrus Marmalade-Glazed Chicken Livers with Roasted Potatoes and Crispy Brussels Sprouts image

3 tablespoons unsalted butter, divided
6 red potatoes, quartered
3 tablespoons olive oil, divided
Kosher salt and freshly ground black pepper, to taste
1 tablespoon fresh thyme, finely chopped, divided
3 strips Canadian bacon, chopped
1 pound chicken livers
2 tablespoons Big Chef's Bold Citrus Marmalade, recipe follows
1 pound Brussels sprouts, sliced thin
6 Ruby Red grapefruits, peeled and sectioned, 1 thinly sliced peel reserved
1 cup granulated sugar
1 cup dry sweet wine (recommended: German Riesling)
1/4 cup rice wine vinegar

Steps:

  • Preheat the oven to 400 degrees F. Melt 1 tablespoon butter.
  • On a baking sheet, toss the potatoes with the melted butter, 1/2 tablespoon olive oil, salt, pepper, and 1/2 tablespoon thyme. Put them in the oven for 30 minutes.
  • Meanwhile, heat a large skillet and add 1 tablespoon oil. Add the chopped bacon and cook for a few minutes. You don't want to over-crisp the bacon before you add the livers. If the bacon gets too crisp before the livers go in just take it out and lay on a paper towel to drain. Season the livers with salt, and pepper, and add to the pan. We are looking for a great dark sear on each side so let the livers cook about 3 minutes per side. Put the livers on one side of pan and the bacon on the other. After the livers are cooked, add the marmalade and the remaining thyme and give it a good toss or stir. Turn off the heat and let stand. While the livers are resting, in another saute pan add 1 tablespoon oil and 1/2 tablespoon butter. Put the pan over high heat and when the butter starts to brown, add the sliced Brussels sprouts and spread out across the entire pan. Cook for 2 minutes, add salt, and pepper, and toss like a pancake or simply stir them up. The edges will start to brown and you'll get a deep nutty crispness.
  • Place the Brussels sprouts down on a plate and lay the livers on top and then flank it with the new potatoes.
  • To make Citrus Marmalade:
  • Heat a large pot over medium heat and stir in the grapefruit sections, grapefruit peel, sugar, wine, and rice wine vinegar. Bring the mixture to a boil, then lower the heat and simmer for 90 minutes or until it's nice and thick. Transfer the mixture to a food processor or blender and quickly pulse. Do not fully puree it. Keep the mixture in a jar to use with meats or desserts.

1 whole (3-1/2-pound) free-range chicken
1/2 cup smoked olive oil
Kosher salt and freshly cracked black pepper
1 -1/2 pounds baby creamer potatoes in assorted colors
2 limes
1 navel orange
1 grapefruit
Extra-virgin olive oil
Kosher salt and freshly cracked black pepper
6 breakfast radishes
3 tablespoons finely chopped fresh chives
Flowering cilantro buds
Fleur de sel

Steps:

  • Roast the chicken. Preheat the oven to 375 degrees F. Using a sharp knife or kitchen shears, cut along both sides of the backbone and discard it. Flatten the chicken and cut it in half through the breast so you have two halves-each with a leg and breast. Rub all over with some of the smoked olive oil, ensuring it gets in all the crevices. Season all over with salt and pepper.
  • Set the chicken in a large roasting pan over two burners and heat over medium-high heat. When the pan is hot, add the chicken halves skin-side down and sear for 4 to 5 minutes. Turn the chicken over, add the potatoes to the pan, and drizzle with more smoked olive oil. Season with salt and pepper. Roast in the oven for 45 minutes, or until an instant-read thermometer inserted in the joint between the thigh and drumstick reads 160 degrees to 165 degrees F. The potatoes should be golden on the outside and tender in the middle. Remove from the oven and allow the chicken to rest for 5 minutes.
  • Make the citrus salsa. Use a sharp knife to cut away the rind and pith from each of the citrus fruits. Holding the fruit over a bowl, carefully cut between the membranes to free the segments. Let the juices and segments fall into the bowl. Add about cup extra-virgin olive oil to the bowl and season with salt and pepper. Cut the radishes into very fine matchsticks on a mandoline or with a sharp knife. Fold them into the citrus salsa, and add the chives.
  • Serve the roasted chicken with the potatoes and citrus salsa, and garnish with flowering cilantro. Season with fleur de sel.

1/2 c kosher salt

1 thinly sliced lemon, reserve zest for roasting chicken

5-6 fresh sage leaves
2 bay leaves
2 lime kaffir leaves
4 garlic cloves, roughly chopped
1 Tbsp black & red peppercorns
ROASTED CHICKEN
1 1/2 Tbsp fresh rosemary leaves, finely chopped
1 1/2 Tbsp fresh thyme leaves, finely chopped
1 1/2 Tbsp fresh sage leaves, finely chopped
3-4 garlic cloves, minced
1/2 toasted fennel seeds, crushed
reserved lemon & lime zest
1/4 c olive oil, extra virgin
kosher salt
fresh cracked black pepper
cold butter pieces
handful parsley stems
1 onion, quartered
2 stalk(s) celery, roughly chopped
lemon & lime slices

Steps:

  • 1. Whisk together the water, salt and sugar in an 9-10 quart container. Add the chicken and remaining brine ingredients, cover and refrigerate 12-24 hours.
  • 2. Rinse chicken inside out with cold water and pat dry. Let chicken reach room temperature, about 30 minutes.
  • 3. Preheat oven to 450 degrees. Combine roasted chicken ingredients except for butter, parsley, onion celery, lemon and lime slices. Carefully slide fingers between skin and flesh of chicken. Season chicken inside/out of chicken and inside cavity. Put butter pieces underneath skin of chicken. Place parsley, onion and celery inside chicken cavity.
  • 4. Place chicken on rack on top of roasting pan. Pour 1 cup of water to roasting pan with lemon and lime slices.
  • 5. Bake at 450 degrees for 15 minutes, reduce heat to 350 and cook for 1 hour 15 minutes or until internal temperature reaches 165 degrees and juices run clear. Baste a few times while roaring with pan juices.
  • 6. Allow chicken to rest for 15-20 minutes before slicing, enjoy!

1 orange
1 lemon
4 tbsp fine cut marmalade , Tiptree Orange and Tangerine Fine Cut are best
2 tbsp olive oil
4 boneless chicken breast fillets , skin on or off
a small bunch of fresh thyme
3 medium red onions , peeled and cut into thin wedges
200g couscous
1 tbsp fresh parsley , chopped

Steps:

  • Preheat the oven to 200C/Gas 6/fan oven 180C. Cut the orange and lemon in halves and squeeze juice from one half of each fruit into a small bowl. Mix in the marmalade and 1 tablespoon of the olive oil. Season well and set aside.
  • Cut 3-4 diagonal slashes in each chicken breast, then stuff a sprig of thyme in each slash. Put chicken and onion into a large gratin dish or roasting tin.
  • Cut the remaining orange and lemon halves into thin wedges, arrange around the chicken and onion and spoon marmalade mixture over the top. Scatter over a few more thyme sprigs and season with black pepper. (You can prepare up to this point a couple of hours ahead, and keep in the fridge covered in cling film.)
  • Bake for 30-35 minutes until golden and cooked through. Ten minutes before you are ready to serve, prepare the couscous according to the packet instructions, then stir in remaining olive oil and chopped parsley.
  • Put a chicken breast on each plate, surround with the onion and fruit wedges and spoon juices over. Serve the couscous in a bowl, for people to help themselves.

1 pound Yukon Gold potatoes, peeled, cut into 3/4-inch-wide wedges
8 large skinless chicken thighs with bones
4 tablespoons (or more) fresh lime juice, divided
2/3 cup fresh orange juice
4 tablespoons chili powder
2 tablespoon paprika
2 tablespoon smoked paprika
4 teaspoons finely grated orange peel
2 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
4 tablespoons extra-virgin olive oil
1.5 cup low-salt chicken broth
2 tablespoons coarsely chopped fresh cilantro, divided
1 tablespoon coarsely chopped fresh parsley
50 olives (preferably mixed colors and sizes)

Steps:

  • Preheat oven to 400°F. Cook potatoes in large saucepan of lightly salted water until almost tender, about 7 minutes. Drain. Meanwhile, brown chicken thighs then place on large heavy-duty rimmed baking sheet. Sprinkle chicken generously with salt; drizzle with 1 tablespoon lime juice and set aside. Whisk 1 tablespoon lime juice, orange juice, chili powder, both paprikas, grated orange peel, ground cumin, dried oregano, and 1/2 teaspoon salt in small bowl. Rub chili mixture all over chicken. Arrange potato wedges on baking sheet, nestling around chicken. Drizzle olive oil over chicken and potatoes. Bake chicken and potatoes 20 minutes. Increase oven temperature to 425°F. Turn chicken and potato wedges; spoon juices over. Bake 10 minutes longer. Add chicken broth, 1 tablespoon chopped cilantro, and chopped parsley, stirring to scrape up any chili bits at bottom of baking sheet. Turn chicken over. Bake until chicken is cooked through and beginning to brown in spots, about 10 minutes longer. Carefully transfer chicken and potatoes to platter, keeping potatoes intact. Place baking sheet over 2 stovetop burners. Boil sauce until reduced to 1 cup, about 3 minutes. Mix in olives. Season sauce to taste with salt and pepper and additional lime juice, if desired. Pour sauce over chicken and potatoes; top with remaining tablespoon cilantro and serve.

ROSEMARY CITRUS ROAST CHICKEN (OVERNIGHT MARINADE) WITH ROASTED POTATOES

This rosemary citrus roast chicken recipe is absolutely one of the easiest ways to prepare the tastiest chicken with a minimal of fuss!

one roasting chicken, preferably organic
2 or 3 tangerines
1 or 2 oranges
2 or 3 lemons (note: citrus can be any combination, or solely lemons, lemon/lime;
1 lime mix and match any you like-I like this combination)
1/2 grapefruit
sprig of fresh rosemary
5 or 6 cloves or garlic
about 3/4 cup (6 oz) white wine
2 tsp salt
black pepper

Steps:

  • Wash the chicken, removing giblets, and any feathers, fat etc. Place in a large glass bowl and squeeze all the citrus juices on to the chicken. Add the wine.
  • Pull the rosemary off the stem and scatter in and on the chicken, then sprinkle the salt inside and outside, also.
  • Slice the garlic and place it on top and inside the chicken, along with some freshly ground black pepper. Cover with plastic wrap and let marinate overnight, at least 12 hours. I turn the chicken over once during this time.
  • When you're ready to cook the birdie, place it in a roasting pan, I trussed (cut a hole in each side of the skin opposite each leg, and pulled the legs through, but it usually opens up while cooking; use string if you want to be sure to keep it tied up properly) the chicken, but it's not necessary (do not add the marinade.)
  • Once the chicken is in the oven. Boil some potatoes in salted water until just partially cooked, drain the water and, with the lid on, shake the pot to "rough up" the potatoes. Add them to the roasting pan, next to the chicken. Taste a little of the potato to see if it needs additional salt, and if so, sprinkle some on. Continue to cook, until the chicken is done.
  • You can increase the oven temp by a bit if you want more browning or crispiness, the last few minutes (thermometer inserted in the thickest part of the bird, between the breast, thigh and leg should read 165ºF or 74ºC.) The chicken should be golden brown.
  • Let the chicken cool for about 10 minutes, covered loosely with a tent of aluminum foil, before slicing, to allow the juices to reabsorb into the meat.

CITRUS PAN-ROASTED CHICKEN

One 3- to 3 1/2-pound chicken
2 Meyer or regular lemons
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 sprig fresh thyme
1 sprig fresh rosemary

Steps:

  • To spatchcock the chicken: Put the chicken breast-side down on a work surface and use poultry shears to cut along both sides of the backbone. Open up the chicken and use the tip of a knife to score alongside the keel bone (the dark oblong bone in the middle of the breast); this makes it easier to flatten. Turn the chicken breast-side up and press down strongly with the heel of your hand on the center of the breast. You should hear a crack and feel the bones give way.
  • Refrigerate the chicken, skin-side up and uncovered, for 1 1/2 hours to air-dry. Remove and allow to air-dry at room temperature for an additional 30 minutes before cooking.
  • Preheat the oven to 450 degrees F.
  • Halve the lemons, then slice one of the lemon halves into rounds. Using your index finger, separate the skin of the chicken from the meat and slide the lemon slices underneath the skin. Season the chicken with salt and lots of freshly ground pepper.
  • In a large cast-iron pan, heat the oil over medium-high heat. Add the chicken skin-side down and cook until the skin is well browned, 8 to 10 minutes. Scatter the thyme and rosemary on top (leave the chicken skin-side down) and place the 3 remaining lemon halves in the pan cut-side down. Transfer to the oven and roast until the juices run clear and an instant-read thermometer inserted in a thigh registers 165 degrees F, about 40 minutes. Rest the chicken on a plate or baking sheet skin-side up for 20 minutes before carving. Squeeze the roasted lemons over as desired.

  • Preheat the oven to 400°. Finely grate the zest of 1 lemon and 1 orange. Quarter the zested lemon and orange. Set the chicken on a rack in a roasting pan. 2/3 cup fresh lime juice, divided
1/2 teaspoon ground cumin
1/2 teaspoon chili powder

1 cup red bell pepper, chopped

  • Place chicken in a heavy-duty, zip-top plastic bag.
  • Reserve 1 tablespoon lime juice; pour remaining juice over chicken.
  • Seal bag, and shake until chicken is well coated.

This recipe is what I'd describe as pretty clean and healthy. You may choose to remove the skin to make it very healthy, but I do like the skin. It's really good with a pasta salad; even better with sweet potato fries. I hope you enjoy it!

1 whole chicken, cut up
1 medium navel orange, cut in half
1 medium lime, cut in half
1/2 large sweet onion
4 carrots, chopped
1 Tbsp dark brown sugar
1 tsp cayenne pepper
1 c chicken broth
4 clove garlic
1/2 c extra virgin olive oil
1 Tbsp mediterranean sea salt
2 tsp garlic powder

Steps:

  • 1. Cut whole chicken down the middle, discarding back and chicken liver/gizzards, or purchase whole chicken, cut up. Rinse chicken, then pat dry. Pour 1/4 cup olive oil on chiken and place covered in the refrigerator for at least an hou. In a bowl, combine the juice the orange and lime, brown sugar and pepper. Pour the mixture onto the chicken and massage onto each piece. Place orange and lime halves, diced sweet onions and carrots onto floor of the roaster.Place chicken pieces on bed of vegetables. Place lid and roast for 1-1/2 hours at 375 degrees.Spinkle garlic powder and a bit of sea salt over chicken in the last ten minutes of roasting.
