8-10 pieces bone in chicken (see notes to use boneless chicken)
1 pound whole small red potatoes
1 pound Andouille sausage links, cut into 3" pieces (or susbstitute any link sausage. Cooked or uncooked.)
1 large onion cut large chunks
salt and pepper
1 lemon - juiced
1/4 cup olive oil
4 cloves garlic - chopped
1 tablespoon smoked paprika (regular paprika will work )
Pinch red pepper chili flakes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400 degrees.
  • Arrange chicken, sausage, potatoes and onion in a 9 x 13 inch baking pan. Sprinkle with salt and pepper.
  • Combine marinade ingredients in small bowl or jar.
  • Pour marinade over chicken and gently toss to coat.
  • Bake one hour or until chicken reaches 165 degrees internally and potatoes are tender.
  • Serve with bread and a simple green salad if desired.

3 cups frozen diced hash brown potatoes (from 32-oz bag)
2 large bell peppers (any color), seeded, coarsely chopped
2 tablespoons vegetable oil
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/8 teaspoon pepper
1 package (12 oz) cooked chicken sausages (any flavor)
1/3 cup finely shredded sharp Cheddar cheese

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with heavy-duty foil; spray foil with cooking spray.
  • In pan, mix potatoes and bell peppers; toss with oil. Sprinkle with salt, garlic powder, onion powder, paprika and pepper; toss until evenly coated. Spread evenly in pan.
  • Poke tops of sausages with fork; arrange on top of potato mixture. Bake 20 minutes.
  • Stir potato mixture; spread evenly in pan. Rearrange sausages on top. Bake 20 minutes longer or until vegetables are tender and sausages are golden brown on top.
  • Sprinkle cheese over potato mixture and sausages. Bake 1 to 2 minutes longer or until cheese is melted.

This oven roasted chicken dinner is delicious and very easy to assemble! Marinated skin-on chicken pieces are cooked in the same pan with sausage, potatoes and onions, making this dish perfect for even the busiest weeknights.

3 pounds chicken pieces (a combination of thighs, drumsticks and bone-in breasts)
1/2 cup Brazilian sofrito
8 ounces bacon, cubed
1/4 cup unsalted butter
1/2 cup white wine
20 ounces pearl onions, peeled
2 pounds baby potatoes
1 pound sausage (I use calabresa sausage, but you can use whatever kind you like), cut into 2-inch pieces
Salt and pepper, to taste
1/4 cup chopped parsley

Steps:

  • In a large bowl, combine the chicken with the sofrito. Cover and refrigerate for 12-24 hours.
  • Preheat oven to 400 degrees F.
  • In a large skillet, over medium heat, cook the bacon until golden brown, about 8 minutes. Add the butter and cook until melted. Then, add the white wine and cook, scraping the browned bits from the bottom, until the wine is reduced by half. Reserve this mixture.
  • Remove the chicken from the marinade and arrange, skin side up, in a deep baking dish.
  • Add the baby potatoes to the chicken marinade, mixing well so they get coated. Transfer the potatoes and marinade to the baking dish, with the chicken.
  • Arrange the sausages and onions around the chicken.
  • Pour the wine mixture with the bacon over the chicken, sausage and potatoes.
  • Cover with foil and roast in the preheated oven for 1 hour. Then, remove the foil, turn the sausages so they cook evenly, and continue roasting for 30 minutes, basting at least once with the juices, or until golden brown. You can also broil for a couple of minutes if you want a deeper golden brown color.
  • Garnish with chopped parsley and serve!

3 tablespoons extra-virgin olive oil
1 12-ounce package smoked chicken-apple sausage, cut into 1-inch pieces
1 pound small red potatoes, quartered
2 onions, thickly sliced
2 bulbs fennel, trimmed, quartered, cored and sliced into thick wedges, fronds reserved
Kosher salt and freshly ground pepper
1 tablespoon tomato paste
2 tablespoons apple cider vinegar
1 tablespoon honey

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, stirring, until browned, about 2 minutes. Remove to a plate with a slotted spoon.
  • Add the potatoes to the skillet and cook until lightly browned, 3 to 4 minutes. Add the onions and fennel and stir to combine; season with 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions and fennel just begin to soften, 4 to 5 minutes.
  • Make a space in the center of the skillet and add the tomato paste. Cook, stirring, until the tomato paste darkens slightly, about 1 minute. Add 1 cup water and stir everything together. Reduce the heat to medium low, cover and cook until the vegetables are tender, 7 to 8 minutes.

4 large links hot Italian sausage
2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced
½ yellow onion, sliced
4 large Yukon Gold potatoes, quartered
2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon Chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
  • Cut two slashes down to the bone on the skin side of each chicken thigh.
  • Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
  • Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
  • Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
  • Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

Mmm...cheesy goodness. This is especially good on those cold days. I got this recipe from my mom and her best friend a couple of years ago and have been enjoying it ever since.

1 (1 lb) package sausage, sliced (the kind that comes in two curved links)
5 large potatoes, peeled and thinly sliced (or as much as you would like)
Nice & Cheesy cheese (or you could use Velveeta, use as much as you would like. I use about half a small box)
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 375°F.
  • Put oil in skillet and place over medium heat until hot.
  • Brown sausage on both sides.
  • Place sausage in between layers of paper towels to get out as much of the grease as possible.
  • Spray deep baking dish with Crisco and place sausage into it.
  • Brown potatoes, (but do not fry until done) in the sausage grease left in skillet.
  • You may need to add a bit more oil.
  • Follow the same paper towel method as you did in step #3. This time with the potatoes.
  • Place potatoes on top of sausage in deep baking dish.
  • Bake at 375°F until potatoes are soft (about 45 minutes). Check often, as not to burn.
  • Place a layer of sliced cheese over top when potatoes are soft.
  • Put back in the oven until cheese is melted (about 5 minutes).
  • Serve and enjoy.
