3 pounds carrots, cut into 1/2-inch slices
1/4 cup olive oil
2 teaspoons cumin
1 teaspoon cinnamon
Salt, to taste
1/4 teaspoon freshly ground black pepper
2 tablespoons unsalted butter
2 cups whole milk
1 teaspoon lemon juice

Steps:

  • Heat the oven to 450 degrees F. In a roasting pan, combine the carrots with the oil, cumin, cinnamon, salt and pepper. Roast the carrots, stirring occasionally until tender and browned, about 25 minutes. In a food processor puree the carrots with the butter, milk, and lemon juice.

6 medium-size carrots, peeled and cut into 1-inch rounds
2 roasted red peppers, coarsely chopped
2 teaspoons soft, unsalted butter or 4 teaspoons low-fat yogurt
1/4 teaspoon ground mace
1 1/2 teaspoons salt

Steps:

  • Place the carrots in a medium-sized saucepan and cover with water. Bring to a boil over medium-high heat. Reduce heat and simmer until tender, about 10 minutes. Drain well.
  • Place the carrots in a food processor with the roasted red peppers. Process until smooth, stopping to scrape down the sides of the bowl. Add the butter or yogurt, mace and salt. Process until well combined. Divide among 4 plates and serve immediately.

1 lb sweet potato, peeled, cut into 1/2-inch pieces (about 3)
8 carrots, peeled, cut into 1/2-inch slices (about 1 lb.)
3 tablespoons olive oil
2 tablespoons brown sugar
1 teaspoon salt
1 1/2 cups chicken broth, divided
4 ounces Philadelphia Cream Cheese (1/2 of 8-oz. pkg.)

Steps:

  • HEAT oven to 375ºF.
  • COMBINE first 5 ingredients; spread onto bottom of 15x10x1-inch pan. Pour 1 cup broth over vegetable mixture.
  • BAKE 45 to 55 minute or until broth is absorbed and vegetables are tender and caramelized, stirring occasionally.
  • SPOON vegetables into food processor. Add remaining broth and cream cheese; process until smooth. Return to pan; cook 10 minute or until heated through, stirring frequently.

3 large acorn squash (1 1/2 lb. each)
2 1/2 lbs carrots
1/2 cup apple butter

Steps:

  • Preheat oven to 325°F Cut each squash in half and remove seeds. Cut off rind with a small sharp knife. Cut squash into 1-inch cubes.
  • Peel carrots and cut into 1-inch pieces. Mix squash and carrots with 5 tablespoons apple butter, 1/2 teaspoons salt, and freshly ground black pepper. Place mixture on baking sheet big enough to accommodate vegetables in one layer. Add 3 tablesooons water and cover with foil.
  • Bake for 1 hour. Remove foil. Add 1/2 cup water and bake for 20 minutes more.
  • Transfer vegetables to food processor and process until very smooth. This must be done in several batches.
  • Transfer to medium pot. Add remaining 3 tablespoons apple butter and salt and pepper to taste. Reheat gently before serving. (This dish can also be made early in the day and reheated).

My brother and I have a game each holiday where he tries to figure out which dishes prepared for our Thanksgiving table are lowfat and which are "real food." Let's see if he gets this one right. LOL. Using apple butter in this combination brings what looks like a flavorful side to the table in three simple ingredients and the dish can be prepared the day before and easily reheated. Directions are long, but it is really easy.

4 1/2 lbs acorn squash or 4 1/2 lbs butternut squash, about 2-3 large gourds
2 1/2 lbs carrots
1/2 cup apple butter, divided
1/2 teaspoon salt

Steps:

  • Preheat oven to 325 degrees F.
  • Prepare roasting pan or baking sheet with a lip with a good dose of cooking spray. Lining the pan with foil is a good time saving option here.
  • Prepare the vegetables by cutting both into 1 inch pieces. Even sizes assures even cooking and will be worth the effort.
  • With the squash, use a large chef's knife to cut the squash in half lengthwise, the scoop out the seeds. Use the knife to peel the squash. (Trimming a small amount from the bottom helps the veggie sit on the board.).
  • Peel carrots and cut into 1-inch chunks.
  • Mix squash and carrots with 5 tablespoons apple butter, 1/2 teaspoon salt, and freshly ground black pepper. Place mixture on baking pan, sprinkle with 3 tablespoons water and cover with foil. Bake for 1 hour.

8 medium-size carrots, peeled and cut into 2-inch lengths
6 medium-size turnips, peeled and quartered
1/2 cup hot chicken broth, homemade or low-sodium canned
1 tablespoon salt, plus more to taste
Freshly ground pepper to taste

Steps:

  • Preheat oven to 400 degrees. Place the carrots and turnips in a roasting pan. Roast until vegetables are very tender, stirring frequently, about 1 hour. Place the carrots and turnips in a food processor with the chicken broth.
  • Process until smooth, stopping several times to scrape down sides of bowl. (The puree will have a slightly rough texture.) Add salt and pepper to taste. Divide among 4 plates and serve immediately.

1 pound head of cauliflower, separated into 2-inch florets
1 cup heavy cream
6 tablespoons unsalted butter
Salt and pepper
1 cup of root beer
1 cup balsamic vinegar
1/3 cup sorghum
Sea Scallops
Olive Oil
Salt and pepper
Roasted Baby Carrots
Chopped chives
Micro greens

Steps:

  • CAULIFLOWER: Preheat the oven to 325. In a large pot of boiling salted water, cook the cauliflower florets until tender, about 7 minutes. Drain well. Spread the cauliflower on a large rimmed baking; sheet. Bake for about 5 minutes, to dry out. In a small saucepan, combine the cream with the butter and bring to a simmer over moderate heat just until the butter is melted. Working in batches, puree the cauliflower in a blender with the warm cream mixture; transfer the puree to a medium microwave-safe bowl. Season with salt and pepper. Just before serving, reheat the puree in the microwave in 1 minute intervals, stirring; occasionally. GASTRIQUE: Combine ingredients in a saucepan and bring to a light boil over medium heat. Cook, stirring occasionally 10 to 15 minutes until mixture is reduced and coats a metal spoon but still runs off in a fluid stream. Cool completely and store in refrigerator for up to 2 weeks. SCALLOPS: Season scallops with salt and pepper. Heat saute pan with olive oil until very hot. (Scallops must sizzle when added to pan) After scallops are golden brown on one side turn over with a spoon and brown on the other side. Takes about 3-4 minutes total. TO PLATE: Spoon puree in center of a plate. Arrange scallops on puree leaving center open. Top each scallop with micro greens. Spoon gastrique around edge of plate. Place Roasted Carrot in center. Sprinkle with chopped chives. Serve with Gruner Velt-Liner
