DRY BRINED ROASTED CHICKEN
After years of dealing with the mess of a wet brine, I came across the technique of dry brining. So easy and so tasty. My family raves about it and I hope yours does too. Use the drippings as a great base for gravy. This method is great on turkey as well!

Steps:
- Remove chicken from packaging, remove giblet packet from cavity, and pat thoroughly dry with paper towels. Place in a 9x13-inch baking dish.
- Mix salt, orange zest, rosemary, and thyme together in a small bowl; rub 3/4 of the mixture all over outside of chicken; rub remaining mixture inside cavity. Cover loosely with plastic wrap and refrigerate 1 to 3 days.
- Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from chicken.
- Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, 2 to 2 1/2 hours depending on size. An instant-read thermometer inserted into the thickest part of the thigh near the bone should read 165 degrees F (74 degrees C). Remove chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 20 minutes before carving.

CLASSIC PAN GRAVY FOR HERB BRINED PAN-ROASTED CHICKEN
Steps:
- Transfer chicken to a cutting board and strain the drippings through a fine mesh strainer into a liquid measuring cup. Reserve 2 tablespoons for the roux. Combine the remaining strained drippings with enough chicken stock to make 1 1/2 cups.
- To make roux: To a large skillet set over medium-high heat, add chicken fat drippings or butter. Add shallot and garlic and cook until translucent, about 2 minutes. Reduce heat to medium-low and whisk in flour to make a thick paste called a roux. Cook, whisking continuously until flour colors lightly and smells like toasted almonds, about 2 minutes.
- To make the gravy: Increase heat to medium-high. Slowly add the stock into the skillet while whisking vigorously. Once the gravy is thickened and bubbling, add herbs. Reduce heat to a simmer and cook, stirring occasionally, until gravy has a rich, velvety texture, about 10 minutes. Taste and adjust seasoning with salt and pepper. (Recipe can be prepared up to this stage 1-2 days in advance, covered and refrigerated and rewarmed before continuing.)
- To finish the gravy: Taste and adjust seasoning with salt and pepper. Pour over herb-brined chicken and serve immediately.
MOLASSES-BRINED ROASTED CHICKEN
A moist and delicious molasses-brined chicken plus a recipe for Roasted Chicken Jus. Don't be put off by the length of the ingredient list and directions -- this recipe is a little labor intensive, but the rewards will be worth it. Recipe from Southern Living Magazine

- 1. Bring 4 cups water to a boil in a large Dutch oven over medium-high heat. Add kosher salt and molasses. Reduce heat to low and simmer, stirring occasionally, 2-3 minutes or until salt and molasses dissolve. Transfer to a very large bowl, add ice and next 4 ingredients. Let stand, stirring occasionally, 30 minutes or until mixture cools to room temperature. Cover and chill 30 minutes to 1 hour or until cold.
- 2. Submerge chicken in cold brine. Cover and chill 6-8 hours.
- 3. Preheat oven to 400 degrees F. Remove chicken from brine; rinse and pat dry. Sprinkle with garlic salt.
- 4. Heat 1 tbsp. oil in a 14-inch nonstick or cast-iron skillet over medium-high heat. Add 4 unpeeled garlic cloves, 1 thyme sprig, and half of chicken. Cook 5 minutes or until skin is browned and crisp (the molasses in the brine will brown the skin quickly). Turn chicken and garlic, and cook 5 minutes or until browned. Remove chicken and place on a wire rack in a jelly-rolls pan. Wipe skillet clean. Repeat with remaining oil, chicken, garlic and thyme.
- 5. Bake chicken, skin side up, at 400 degrees for 10-20 minutes or until a meat thermometer inserted into thickest portion registers 165 degrees (breasts will cook faster than legs, so check for doneness after 10 minutes). Cover with foil. Let stand 10 minutes before stirring. Serve with Roasted Chicken jus,, if desired.
- 6. Substitutions: 8 chicken leg quarters or 8 chicken breasts may be substituted.
- 7. To make roasted chicken jus: Preheat oven to 450 degrees. Chop each carcass into 4 pieces; place in a lightly greased jelly-roll pan. Roast, turning occasionally, 35-45 minutes or until browned.
- 8. Cook onion and next 3 ingredients in hot oil in a Dutch oven over medium-high heat, stirring occasionally, 3 to 4 minutes or until tender. (Do not overcook).
- 9. Add white wine to onion mixture, increase heat to high, and bring to a boil. Boil, stirring occasionally, 3- 5 minutes or until wine is reduced by three-fourths. Add carcass pieces and water to cover by 2 inches. Return to a boil over high heat; reduce heat to low and simmer, stirring occasionally, 1 1/2 hours.
- 10. Pour sauce through a fine wire mesh strainer into a small saucepan, discarding solids. Let stand 10 minutes, and skim fat from sauce. Bring sauce to a boil over medium-high heat.
- 11. Whisk together constarch and 1 tbsp. water. Whisk constarch mixture into sauce. Return to a boil over medium-high heat, stirring constantly. Reduce heat or to a desired consistency. Stir in parsley and chives; add salt and pepper to use.
- 12. Substitution: 2-3 lbs. chicken backbones or wings may be subsituted.
BRINED ROASTED CHICKEN - 500 DEGREES
Crispy and tender. I count soak time as passive cooking time, and do most of the prep while chicken is soaking.

- Thoroughly dissolve sugar and salt into water.
- Soak chicken in brine for 1-3 hours (in refrigerator).
- Mix softened (room temperature) butter with herbs while chicken is in brine.
- Thoroughly rinse chicken and allow to drain, pat dry.
- Cut backbone out of chicken and flatten bird.
- Spray bottom part of broiler pan with vegetable oil.
- Scrub potatoes and cut into small bite sized pieces.
- Place potatoes in pan.
- Place flattened bird in top part of broiler pan, over potatoes.
- Loosen skin from flesh.
- Place herb butter between skin and flesh.
- Bake in hot oven (500 degrees) for 45 minutes to an hour. (or more, if potatoes are not browned).
- Serve with cooked spinach and hot crusty bread.

Steps:
- 1. mix the salt and pepper together. Rinse the chicken and pat dry. Rub the salt and pepper mixture over the chicken. Carefully loosen the skin and tuck the herbs under the skin. Place on a plate and place inside a plastic grocery bag and tie loosely. Store in fridge for up to 3 days.
- 2. Preheat the oven 475 degrees. Pour the chicken stock and wine into a roaster. Remove the herbs and throw them into the roaster. Place the chicken in the roaster.
- 3. Roast breast up for 45 minutes. Turn the chicken and roast another 30 minutes or until no longer pink. Let the chicken rest for 20 minutes then carve.
HERB BRINED PAN-ROASTED CHICKEN

- To a small bowl, add salt, fresh herbs and lemon zest
- Stir to combine
- Loosen skin from the chicken breast and thighs with your fingers or the end of a wooden spoon. With your hands, rub the salt and herb mixture liberally over the chicken and under the skin. Transfer chicken to a baking dish and refrigerate, uncovered, on the bottom shelf for 24 hours.
- Preheat oven to 400F
- To roast chicken: To a large ovenproof skillet set over medium-high heat, add 1 tablespoon of oil. When the oil is shimmering, add chicken, skin-side down and cook until golden brown, about 5 minutes. Turn the chicken, add the vegetables to the skillet and gently stir the vegetables to coat in the oil, season with salt and pepper. Transfer skillet to the oven and roast until chicken is cooked through and the vegetables are tender, about 35 minutes or until instant read thermometer inserted into the thickest part of the meat registers 165F
- Remove skillet from oven and transfer the chicken and vegetables to a platter; cover loosely with foil to rest. While chicken is resting, pour pan juices from the roasting pan into a fat separator and set aside or making gravy.
- To serve, plate immediately and serve.
ROASTED BRINED CHICKEN
I looked at several recipes for brining and roasting a chicken. I did not find one that I liked but did like several parts of different recipes so I made up my own. I had never brines before and WOW what a difference. My DH was shocked as was I at how moist the chicken was.

- Mix all ingredients for brine in a container and place whole washed bird in liquid make sure it is completely immersed. Refrigerate over night. Next morning take bird out of brine, rinse and pat dry. Add seasoning to skin of bird and place back in fridge until ready to roast.
- I roasted my chicken for 60 minutes at 400 degrees.
