From a local source. Be sure the asparagus spears are of uniform size so that they roast evenly. I used this recipe: Recipe #194248 for making my own homemade sun-dried tomatoes. Saved $$!

1 1/2 lbs asparagus, bottoms trimmed
1 bunch scallion, ends trimmed and sliced into 1-inch pieces
2 tablespoons finely chopped sun-dried tomatoes packed in oil, plus
1 -2 tablespoon sun-dried tomato olive oil (from the jar or read intro^^)
salt, to taste
cracked black pepper, to taste

Steps:

  • Heat oven to 450 degrees.
  • In a large bowl, combine the asparagus, scallions, and the oil from the sun-dried tomatoes. Toss to coat well. (Time willing, I try to combine the ingredients at least an hour in advance to allow the mixture to marinate.).
  • Transfer the asparagus to a baking sheet and arrange in single layer.
  • Season with salt and pepper.
  • Roast 7 minutes. Stir the mixture and roast until tender and slightly browned, approximately 5 minutes longer.
  • Stir in the chopped sun-dried tomatoes.
  • Serve immediately or at room temperature.

2 bunches green onions
1 1/2 lbs asparagus, cut into 2 to 3 inch pieces
1 medium onion, cut into thin wedges
2 tablespoons olive oil
2 (14 ounce) cans chicken broth
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup light cream or 1/2 cup milk
1 tablespoon snipped fresh dill
fresh dill sprig (optional)

Steps:

  • Preheat oven to 450*F.
  • Trim root ends from green onions.
  • Cut white parts into 1-inch lengths.
  • Cut green tops into 1-inch lengths and reserve.
  • Place the white parts, asparagus, and onion wedges in an even layer in a shallow large roasting pan.
  • Drizzle vegetables with olive oil.
  • Roast, uncovered, for 15 to 20 minutes or until vegetables are charred and tender.
  • Place half of the roasted vegetables in a food processor or blender.
  • Add half a can of broth.
  • Cover; process or blend until smooth.
  • Transfer to a large saucepan.
  • Repeat with remaining asparagus, onion wedges, and half a can broth.
  • Stir in remaining can of broth, salt, and pepper.
  • Heat through.
  • Stir in half-and-half and snipped fresh dill.
  • To serve, ladle soup into bowls.
  • Top with reserved green sections of onoion and dill sprigs.
  • Makes 6 servings.

This simple soup can be ready in under an hour and takes full advantage of the flavor of asparagus by pan-roasting it before puréeing. Fresh tarragon takes it up a notch.

1 1/2 pounds thin asparagus (if only thick spears are available, peel them first)
2 tablespoons butter or extra virgin olive oil
10 fresh tarragon leaves, or 1/2 teaspoon dried tarragon
4 cups chicken or other stock
Salt and pepper

Steps:

  • Break off bottom part of each asparagus stalk, and discard. Coarsely chop the rest of stalks, leaving 12 or 16 of the flower ends whole. Put butter or oil in a large, deep skillet over medium-high heat. A minute later, add asparagus and tarragon, raise heat to high, and cook, stirring occasionally, until nicely browned, about 10 minutes. Remove whole flower ends; set aside.
  • Add stock and some salt and pepper; bring to a boil, reduce heat and simmer until asparagus is very tender, about 10 minutes. Cool at least a few minutes.
  • Pour soup into a blender, in batches if necessary, and carefully purée. Return to pan, and, over medium-low heat, reheat gently. When soup is hot, adjust seasoning. Put 3 or 4 asparagus flower ends in each of 4 bowls; ladle in soup, and serve.

Risotto With Asparagus and Sun-Dried Tomatoes image

I love risotto and am always trying new versions. This one incorporates two of my favorites - asparagus and sun-dried tomatoes. It is simple enough, but as with any risotto, you do a lot of stirring. I usually add more asparagus and tomatoes than called for here.

1 lb asparagus, trimmed
6 cups chicken broth, please see the note below
2 tablespoons butter
1 small onion, finely chopped
2 cups arborio rice
2 sun-dried tomatoes packed in oil, drained or 2 sun-dried tomatoes, reconstituted
1/4 cup parmesan cheese, grated
2 tablespoons fresh parsley, chopped
pepper

Steps:

  • NOTE:.
  • Zaar won't let me enter this in the ingredients section, so the 6 cups of chicken broth should actually consist of the cooking water from blanching the asparagus, and then adding enough chicken broth to measure the 6 cups.
  • Blanch the asparagus in a large skillet or pan of rapidly boiling water 2-3 minutes or until vivid green. Remove the asparagus from the pan and reserve the cooking water. Measure the cooking water and add stock to equal 6 cups and pour into a saucepan set over low heat. Allow to come to a low simmer.
  • Cut the asparagus into 1-inch pieces. Melt the butter in a large pot set over medium heat and add the chopped onion, rice, and all the asparagus except the tips. Stir this mixture until the rice and vegetables are coated and the onion becomes translucent.
  • Add 1/2 cup of the simmering broth and cook, stirring until the liquid is absorbed. Continue adding the broth slowly, 1/2 cup at a time, stirring until it is absorbed. Work slowly and do not add more broth until the previous 1/2 cup is fully absorbed. Work until all the broth is absorbed. Taste the risotto; it should be firm but not hard and the mixture creamy. If it is still tough, you may need to add more broth (bring to a simmer first).
  • Off the heat, gently stir in the reserved asparagus tips along with the remaining ingredients. Serve immediately.

PARMESAN ROASTED ASPARAGUS

2 tablespoons good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan
2 lemons cut in wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.

I found this recipe in an old magazine that was just laying around on my coffee table and it looked good so I decided to make it for Easter. What an absolutely awesome dish! Even the asparagus haters loved it. This recipe can be prepared ahead of time and reheated or served at room temperature. It is excellent served with roast lamb.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon dried thyme leaves
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon brown sugar
2 cups grape tomatoes or 2 cups cherry tomatoes
2 bunches asparagus

Steps:

  • Preheat the oven to 300 degrees F.
  • Whisk together the olive oil, balsamic vinegar, thyme, garlic, salt, pepper and brown sugar.
  • Cut the tomatoes in half and toss to combine with the olive oil mixture.
  • Spread the tomatoes in a roasting pan and place in the oven.
  • Cook, stirring occasionally, for 30 minutes, or until the tomatoes are shrivelled.
  • Break the ends from the asparagus at their natural breaking point. Add the tender lengths of asparagus to the tomatoes and continue to cook for 25 minutes or until the asparagus is tender.
