1/2 cup maple syrup
1 tablespoon grated orange rind
1/2 cup orange juice
1/4 cup dried cranberries
1 teaspoon cinnamon
6 apples, peeled and cored (such as Golden Delicious)
1/2 cup toasted chopped pecans
3 egg yolks
1/4 cup granulated sugar
1/2 vanilla bean, halved lengthwise (or 1 tsp/5 mL vanilla)
1 cup whipping cream (heavy cream)
2 tablespoons Bourbon or 2 tablespoons whiskey

Steps:

  • Bourbon Crème Anglaise:.
  • In small bowl, whisk egg yolks with sugar; set aside. If using vanilla bean, use tip of knife to scrape seeds into saucepan. Add pod and cream; heat over medium heat just until bubbles form around edge. Discard pod.
  • Gradually whisk cream into egg mixture. Return to saucepan and cook over medium-low heat, stirring and being careful not to boil, until thick enough to coat back of wooden spoon, 3 to 5 minutes. Strain into pitcher.
  • Stir in vanilla (if using) and bourbon.
  • Pre-heat oven to 400.
  • In large bowl, whisk maple syrup, orange rind and juice, cranberries and cinnamon. Cut each apple into 8 wedges; add to bowl along with pecans and toss gently.
  • Arrange in 13- x 9-inch (3 L) glass baking dish. Cover and roast in 400°F (200°C) oven, basting and stirring twice, until apples are tender, about 30 minutes. Uncover and roast until very tender and sauce is thickened, about 20 minutes.
  • Pool some of the crème anglaise on 6 dessert plates. Top with apples; drizzle with remaining crème anglaise.

5 large sweet potatoes (about 5 lb)
3 Golden Delicious apples, peeled, cut into 1/3-inch wedges
1/4 cup fresh lemon juice
2/3 cup packed brown sugar
1/2 cup honey
6 tablespoons unsalted butter, cut into pieces
1/4 cup bourbon
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
2/3 cup coarsely chopped pecans

Steps:

  • Heat oven to 400°F. Prick sweet potatoes with fork; place on ungreased cookie sheet. Bake 1 hour or until almost tender. Cool 45 minutes. Peel potatoes; cut into 1/3-inch wedges.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, toss apples and lemon juice. In baking dish, arrange potatoes and apples in alternating layers. Pour lemon juice from bowl over potatoes and apples.
  • In 2-quart saucepan, mix brown sugar, honey, butter, bourbon, cinnamon, salt and ginger. Heat to boiling over medium heat, stirring occasionally; boil 2 minutes or until slightly thickened. Pour glaze over potatoes and apples.
  • Roast uncovered 30 minutes. Brush potatoes and apples with glaze that collects in bottom of dish; sprinkle pecans over top. Roast 14 to 15 minutes longer or until apples are golden brown and tender.

6 Granny Smith apples, peeled, cored, chopped (about 3 1/2 pounds)
1/4 cup all-purpose flour
1/2 cup brown sugar
1 tablespoon lemon juice
1/4 cup maple syrup
1 cup all-purpose flour
3/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
8 tablespoons (1 stick) chilled butter, cut into pieces
1/4 cup coarsely chopped pecans
1 cup heavy cream
1/4 cup confectioners' sugar
1 tablespoon bourbon

Steps:

  • Preheat oven to 350 degrees F.
  • For the Filling:
  • Butter a 9 by 13-inch casserole dish. In a large bowl mix all the filling ingredients together and toss to coat all the apples. Pour in the prepared baking dish.
  • For topping:
  • In a food processor combine the flour, brown sugar, cinnamon and salt in large bowl. Pulse to blend. Pulse in the butter until mixture forms pea size lumps. Add the pecans and pulse 1 or 2 more times. Sprinkle over filling. Bake crisp for 45 to 50 minutes. Cool 10 minutes before serving.
  • For Bourbon cream:
  • a medium sized bowl, beat the cream until it begins to thicken. While beating, add the sugar and bourbon and beat until soft peaks form. Dollop over servings of apple crisp.

Bourbon Creme Anglaise image

This great bourbon cream anglaise recipe should be used in Virginia Willis's Mama's Angel Food Cake with Bourbon Creme Anglaise.

Number Of Ingredients 5

2 cups whole milk
6 large egg yolks
1/4 cup sugar
Pinch of fine sea salt
1 tablespoon bourbon

Steps:

  • Prepare an ice-water bath; set aside.
  • Place milk in a medium saucepan and bring to a boil over medium heat. In a medium bowl, whisk together egg yolks, sugar, and salt until thick and light. Slowly pour in half of the hot milk, while stirring constantly. Slowly pour the egg mixture into the remaining milk mixture, stirring constantly. Stir in bourbon.
  • Place saucepan over low heat and bring to a gentle simmer, stirring constantly. Continue cooking until mixture is thick enough to coat the back of a spoon and reaches 180 degrees on an instant-read thermometer. Remove from heat.
  • Strain creme anglaise through a fine mesh sieve set over a medium bowl. Set bowl in ice water bath and stir creme anglaise until cooled. Keep refrigerated until ready to use, up to 1 day.
