STICKY LIME ROAST CHICKEN

4 limes , halved
2kg chicken
8 garlic cloves , 4 whole, 4 chopped
1 chilli , deseeded and chopped
large piece ginger
small bunch coriander stalks
2 tbsp soft brown sugar
1 tbsp fish sauce
sliced cucumber , shredded spring onions and coriander sprigs, to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Squeeze all the limes into a bowl and pop the lime halves into the chicken cavity with the whole garlic, half the chilli, half the ginger and the coriander stalks. Place the chicken in a roasting tin and roast for 1 hr.
  • While the chicken is roasting, make a sticky glaze. Add the remaining garlic, chilli, ginger, brown sugar and fish sauce to the lime juice and use a hand blender or small blender to blitz until smooth. Transfer to a small pan and reduce until thick enough to coat the chicken.
  • When the chicken has been cooking for 1 hr, tip some water into the bottom of the tin. Pour half the glaze over the chicken and continue to roast for 45 mins more, covering with foil if it starts to brown too quickly. When cooked, leave to the side to rest.
  • Pour the juices from the roasting tray, discarding the fat, into the rest of the glaze and pour into a small pan. Simmer over a low heat and taste, adding more sugar or fish sauce if it needs it. Serve the chicken with the cucumber, spring onions and coriander around it and the gravy on the side.

4 tablespoons vegetable oil, divided
8 chopped scallions
1/4 cup chopped peeled fresh ginger
4 garlic cloves
1 teaspoon lime zest
1 tablespoon coarse salt, plus more for seasoning
Ground pepper
1 whole chicken (4 to 5 pounds)
1 3/4 pounds parsnips, cut into 3-inch pieces
12 ounces brussels sprouts, halved
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 425 degrees F. In a food processor, combine 3 tablespoons vegetable oil, scallions, ginger, garlic, lime zest, and 1 tablespoon salt; rub half of paste under skin. Tie legs together, and tuck wing tips beneath body. Place on a rimmed baking sheet.
  • Toss parsnips with olive oil; season with salt. Scatter parsnips around chicken; roast 20 minutes.
  • Flip parsnips and add brussels sprouts, tossed with 1 tablespoon vegetable oil, to pan; season with salt and pepper. Roast until an instant-read thermometer inserted into thickest part of a thigh reads 165 degrees F, 25 to 35 minutes. Let rest 10 minutes before carving and serving. Return parsnips and brussels sprouts to oven and roast until golden, 10 minutes. Serve with remaining paste.

HONEY-LIME ROAST CHICKEN

1 small bunch fresh thyme
Juice of 2 limes
4 cloves garlic, smashed
3 jalapeno peppers, halved, seeded and thinly sliced
1/2 cup extra-virgin olive oil
2 tablespoons honey
Kosher salt
3 half chickens (about 1 1/2 pounds each)
3 tablespoons unsalted butter, cut into pieces

Steps:

  • Strip the thyme leaves from the stems; combine the leaves and stems with the lime juice, garlic, jalapenos, olive oil, honey and 1 teaspoon salt in a large bowl. Add the chicken and turn to coat. Cover and marinate 30 minutes to 1 hour at room temperature.
  • Position a rack in the upper third of the oven; preheat to 425 degrees F. Put the chicken, skin-side up, on a foil-lined rimmed baking sheet and tuck the wing tips underneath. Pour the marinade on top, season with salt and dot with the butter.
  • Roast the chicken, basting with the pan juices halfway through, until the skin is amber and a thermometer inserted into the thigh registers 160 degrees F, about 45 minutes. Transfer to a platter and top with the pan juices.

4 chicken legs or 8 chicken thighs
3 limes
1 tablespoon balsamic vinegar
2 tablespoons olive oil

Steps:

  • Joint the chicken legs and slash the skin of each piece of chicken a couple times, so the marinade can be easily absorbed.
  • Mix the juice of one lime together with the vinegar and olive oil.
  • Smear this over the chicken and leave for up to 30 minutes, turning a couple times.
  • Place the chicken in a lightly oiled dish and pour over the marinade.
  • Bake at 400F or 200C for 30-40 minutes, basting occasionally.
  • Turn once, halfway through.
  • During the last 10 minutes of cooking, halve the two remaining limes and arrange them around the chicken.

A delectable and elegant way of cooking a whole chicken for a special dinner party or for Sunday lunch! I have also cooked this chicken to take on a picnic - it is wonderful cold, AND in sandwiches or salads. Try to use an organic reared chicken - the flavour is more superior than a poor factory/battery farmed chicken - and, you will be doing your "bit" to stamp out this unnatural way of rearing poultry.

1 small limes or 1 small lemon, finely chopped, pips removed
1 small onion, finely chopped
2 -3 garlic cloves, crushed
100 g butter, softened
1 (2 -3 kg) roasting chickens
4 sprigs lovage or 4 stalks celery & leaves, roughly chopped
1 tablespoon lavender flowers
50 ml olive oil
2 tablespoons lavender honey
salt & freshly ground black pepper
lavender, and lovage sprigs (to garnish)

Steps:

  • Preheat the oven to 190C, 400F, gas mark 5.
  • Combine the lime(lemon), onion and garlic with the butter. Stuff half of this under the skin of the chicken, working carefully under the skin of the breast. Put the remaining flavoured butter inside the bird, with the chopped lovage (celery stalks/leaves) and the lavender flowers. Secure the skin over the neck with a skewer and put the chicken in a roasting tray.
  • Combine the olive oil and honey in a pan and heat gently so the honey liquefies. Stir, then pour over the chicken. Season well.
  • Roast for 45 minutes per kg plus 20 minutes, basting every 20 minutes or so.
  • If the chicken seems to be browning too quickly, cover it with foil half way through cooking. To test whether the chicken is cooked, pierce it with a skewer in the thickest part. If the juices run clear, it is cooked. Leave to stand, covered with foil, for 20 minutes before carving.
  • Garnish with lavender and lovage sprigs.
  • Carve at the table and serve with the pan juices, green beans and apple & potato purée.

1/4cup lightly packed fresh mint leaves
2tablespoons kosher salt
6 medium garlic cloves, peeled and roughly chopped
1tablespoon ground black pepper
1tablespoon ground cumin
1tablespoon sugar
2teaspoons smoked paprika
2teaspoons dried oregano
2teaspoons finely grated zest and 1/4 cup juice from 2 limes
1teaspoon minced habanero chile (see note)
1(3 1/2-to 4-pound) whole chicken

Steps:

  • 1. Process all ingredients except chicken in blender until smooth paste forms, 10 to 20 seconds. Using fingers or handle of wooden spoon, carefully loosen skin over thighs and breast and remove any excess fat. Rub half of paste beneath skin of chicken. Spread entire exterior surface of chicken with remaining paste. Tuck wingtips underneath chicken. Place chicken in gallon-size zipper-lock bag and refrigerate at least 6 hours and up to 24 hours. 2. Adjust oven rack to lowest position and heat oven to 325 degrees. Place vertical roaster on rimmed baking sheet. Slide chicken onto vertical roaster so chicken stands upright and breast is perpendicular to bottom of pan. Roast until skin just begins to turn golden and instant-read thermometer inserted into thickest part of breast registers 140 degrees, 45 to 55 minutes. Carefully remove chicken and pan from oven and increase oven temperature to 500 degrees. 3. When oven is heated to 500 degrees, place 1 cup water in bottom of pan and return pan to oven. This is a variation of a recipe I learned from http://TheFrugalChef.com. You can do the chicken with skin on or off - up to you. Or mix with drumsticks or whatever you have. I use extra garlic and chilli flakes but use less if you prefer. You could use the juice from an orange or just use ready-prepared orange juice if you are lazy like me. When I say Turkish pepper, I mean the longer skinnier type, about the size of a regular carrot. I have lots of Turkish grocery stores in my neighbourhood and they sell all kinds of peppers. Any of them will do - some are a bit sweet and others a bit spicy, but you don't want the firey type. The chicken will give off some of its own fat and mix with the lime and orange juice. This is nice to pour over some baby potatoes on the side.

1 (4 lb) whole chickens
1 lime
1/2 cup cream cheese with garlic and herbs
1 mild red chili peppers or 1 jalapeno pepper, seeded and finely chopped

Steps:

  • Preheat oven to 400°F.
  • Use the point of a knife and your fingers to carefully separate the skin from the meat of the chicken across the breast and over the tops of the legs. Just loosen the skin with the knife, then carefully run your fingers underneath. Try not to tear the skin.
  • Grate the lime and beat the rind into the cream cheese along with the chopped pepper.
  • Pack the cream cheese stuffing under the skin of the chicken, using a teaspoon, until fairly evenly distributed.
  • Push the skin back into place, then smooth out the stuffing into an even layer by gently rubbing your hands over the skin.
  • Put the chicken in a roasting pan and squeeze the juice from the lime all over top.
  • Roast for 1 1/2 hours, or until the chicken is cooked through. If the top of the chicken becomes too browned, cover the chicken with foil towards the end of the cooking time.
  • Carve the chicken, spoon the pan juices over top, and serve.

Authentic versions of Peruvian garlic-lime chicken require a wood-fired oven and hard-to-find ingredients. We wanted to replicate this robustly flavored dish using an oven and supermarket staples. A paste of salt, garlic, oil, lime zest, and cumin rubbed underneath and on top of the skin produced well-seasoned meat and a heady flavor. To this basic paste we added fresh mint (replacing the black mint paste called for in authentic recipes), oregano, pepper, and minced habanero chile for tangy spice, while a little smoked paprika subtly mimicked the smokiness we were missing from the rotisserie. Roasting the chicken vertically allowed it to cook evenly, while using two different oven temperatures helped us achieve both moist meat and well-browned skin.
