ZA'ATAR CHICKEN THIGHS WITH PEARL COUSCOUS



Za'atar Chicken Thighs with Pearl Couscous image

8 small skin-on, bone-in chicken thighs (about 2 1/2 pounds)
Kosher salt
5 tablespoons za'atar
1 tablespoon sumac
7 tablespoons extra-virgin olive oil
1 large red onion, halved and thinly sliced (about 2 cups)
1/4 cup golden raisins
1 1/2 cups pearl couscous
1 3/4 cups low-sodium chicken broth
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup pomegranate seeds

Steps:

  • Season the chicken generously with salt. Mix together 3 tablespoons za'atar, the sumac and 3 tablespoons olive oil in a large bowl. Add the chicken and toss to coat.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add the chicken skin-side down and cook until lightly browned and crisp, 6 to 8 minutes. Flip and continue cooking until lightly browned on the other side, 2 to 3 minutes. Remove to a plate.
  • Reduce the heat to medium and add the red onion to the pan. Cook until lightly browned and tender, scraping up any browned bits from the bottom of the pan, 4 to 5 minutes. Stir in the raisins and couscous and cook, stirring, until lightly toasted, about 30 seconds. Add the chicken broth and parsley, then return the chicken to the pan and bring to a boil. Reduce the heat to a simmer, cover and cook until the couscous is tender and the chicken is cooked through, 15 to 20 minutes.
  • Meanwhile, stir the remaining 2 tablespoons za'atar and 2 tablespoons olive oil in a small bowl. Divide the chicken and couscous among plates. Drizzle the chicken with the za'atar oil and top the couscous with the mint and pomegranate seeds.

1/2 cup dark raisins
1 cup port wine
2 tablespoons extra virgin olive oil, divided
4 breasts of chicken
2 shallots, diced
1/4 pound fresh mushrooms
2 tablespoons balsamic vinegar
1 cup heavy cream, or evaporated milk
1/4 teaspoon grated fresh nutmeg
1 tablespoon cornstarch mixed with 1 tablespoon water
Salt and freshly ground pepper, to taste
Fresh herbs for garnish

Steps:

  • Soak the raisins in the port wine at least 1 hour or, preferably, overnight. Preheat oven to 375 degrees. In a saute pan, heat 1 tablespoon of the olive oil. When hot, saute the chicken breasts on one side until golden brown. Turn the chicken over and transfer to an ovenproof dish. Bake for 10 minutes. In the meantime, in the saute pan, heat the remaining 1 tablespoon olive oil. Add the shallots and sweat them for 2 minutes. Add the mushrooms and saute them for 2 minutes. Add the vinegar and reduce until almost dry. Stir in the raisins and their soaking liquid. Cook until the liquid is reduced by half. Add the cream or evaporated milk, nutmeg, and cornstarch mixture. Cook for 2 more minutes, but do not bring to a boil. Adjust the seasoning with salt and pepper. Spoon the sauce onto serving plates, set a chicken breast on top, and garnish with fresh herbs.

2 cups couscous
2 cups water
1 tablespoon butter
Salt and pepper
1/2 bunch scallion, finely sliced
1/4 cup fine diced Spanish onion
1 to 2 tablespoons rice wine vinegar

Steps:

  • Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice wine vinegar.

4 bone-in, skin-on chicken breasts (each about 3/4 pound)
1 teaspoon kosher salt
1 lemon, halved
1/2 cup Castelvetrano olives, pitted if desired
1/2 cup cherry tomatoes
8 to 10 sprigs fresh thyme

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat the oil in a large ovenproof skillet or shallow Dutch oven over medium-high heat until hot. Thoroughly pat the chicken very dry and sprinkle with the salt. Place skin-side down in the skillet and cook until the skin is crisp and golden brown, about 5 minutes.
  • Flip the chicken over. Add the lemon halves, olives, tomatoes and thyme to the skillet and transfer to the oven. Roast until the chicken is cooked through, about 25 minutes.
