⅓ cup bourbon (such as Maker's Mark®)
¼ cup low-sodium soy sauce
3 tablespoons packed brown sugar
2 teaspoons Worcestershire sauce
½ teaspoon dried basil
½ teaspoon dried rosemary
½ teaspoon ground black pepper
1 tablespoon clarified butter (ghee), or more as needed
1 ½ pounds baby bella mushrooms, sliced
2 small shallots, sliced, or to taste
1 cup heavy cream
salt to taste

Steps:

  • Combine bourbon, soy sauce, brown sugar, Worcestershire sauce, basil, rosemary, and pepper in a small bowl; whisk until blended and sugar is dissolved.
  • Heat a skillet over medium heat. Add 1 tablespoon clarified butter and 1/3 of the mushrooms; saute until nicely browned, 5 to 7 minutes. Remove mushrooms to a plate and repeat with remaining batches, adding more butter as needed.
  • Add shallots to the skillet and saute until tender, about 5 minutes. Return browned mushrooms to the skillet and pour in bourbon mixture. Cook over medium heat until slightly reduced, scraping the bottom as you cook, 2 to 3 minutes. Reduce heat and stir in heavy cream. Simmer until blended and thickened to desired consistency, 3 to 5 minutes. Season with salt.

2 tablespoons butter
3/4 cup thinly sliced onion
1/4 pound fresh mushrooms, sliced
2 tablespoons all-purpose flour
1/4 teaspoon ground marjoram
1/4 teaspoon garlic salt
Salt and pepper to taste
3/4 cup beef broth
1/4 cup ketchup
8 slices leftover cooked roast beef

Steps:

  • In a skillet, melt butter over medium heat. Saute onion for 5 minutes. Add mushrooms and saute 2-3 minutes. Stir in the flour and seasonings. Add broth and ketchup. Bring to a boil, stirring constantly. Reduce heat to low; simmer 10 minutes. Add beef and heat through.

1 pound roma tomatoes, quartered
1 pound sliced button mushrooms
5 cloves garlic, chopped
2 tablespoons extra virgin olive oil
salt and pepper to taste
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon dried oregano leaves
¼ teaspoon dried marjoram leaves
¼ teaspoon dried thyme leaves
¼ teaspoon dried rosemary, crushed
¼ teaspoon dried sage leaves, crushed
¼ teaspoon dried basil leaves
¼ teaspoon garlic powder
¼ teaspoon onion powder

2 ¼ pounds pork chops

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • In a 9x13 inch baking dish, toss tomatoes, mushrooms, garlic, and olive oil with salt and pepper to taste. Mix lightly with hands to coat all ingredients with oil, and spread the tomato-mushroom mixture to the edges of the dish, leaving the center free for the pork chops.
  • Combine 1 teaspoon salt, 1/2 teaspoon black pepper, cumin, ground coriander, oregano, marjoram, thyme, rosemary, sage, basil, garlic powder, onion powder, ground paprika, sugar, and crushed red pepper in a bowl to make a spice rub.
  • Sprinkle the pork chops with the spice rub, working the rub well into both sides of the meat. Place pork chops in the center of the baking dish, surrounded by the tomato and mushroom mixture.
  • Roast in preheated oven until the pork is no longer pink in the center and mushrooms are tender, about 45 to 50 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C). Transfer pork chops to a serving dish and top with roasted tomato-mushroom mixture and all pan juices to serve.

1 center cut-fillet of beef, well trimmed and tied, about 2 pounds
1 tablespoon vegetable oil
Salt and freshly ground pepper to taste
2 cups thinly sliced chanterelles, morelles, shiitake or any wild mushroom
2 tablespoons finely chopped shallots
1/2 cup Madeira wine
1/2 cup reduced fresh chicken broth
2 teaspoons tomato paste
1 tablespoon fresh tarragon or 2 teaspoons dried
2 tablespoons butter

Steps:

  • Preheat oven to 450 degrees.
  • Brush the meat with oil. Sprinkle on all sides with salt and pepper to taste.
  • Place the fillet in a small, shallow roasting pan, and place the pan on the bottom rack of the oven for about 25 minutes for rare. Turn and baste once or twice as it roasts.
  • Transfer the meat to a warm platter, cover loosely with foil, and keep warm.
  • Pour off most of the fat from the pan. Place on top of the stove. Add the mushrooms and salt and pepper to taste. Cook stirring over medium heat until lightly browned. Add the shallots. Cook briefly, stirring, and add the Madeira. Cook, stirring and scraping the bottom of the pan to dissolve the brown particles that cling to the bottom, until the liquid is reduced by half.
  • Add the broth, tomato paste and tarragon and any juices that may have accumulated around the fillet. Cook over high heat for a few minutes until the sauce is reduced to 1 1/4 cups. Swirl in the butter and remove from heat. Keep warm.
  • Transfer the fillet to a warm serving platter, slice it on the diagonal, and serve with the sauce.

Try this simple, flavour-packed sauce with top quality beef - it's best carved into thick slices

1 ¼kg piece centre-cut beef fillet , trimmed
2 tbsp sunflower oil
1 tbsp olive oil
8 shallots , peeled and finely sliced
20 button mushrooms , finely sliced
75ml sherry vinegar
1 bottle fruity red wine , such as Rioja
1l good-quality beef stock
25g cold butter

Steps:

  • To make the sauce, heat the olive oil in a large frying pan. Add the shallots and mushrooms, then fry for about 10 mins until golden and caramelised. Pour in the vinegar, then simmer until almost evaporated. Add the red wine, then simmer until almost evaporated. Add the beef stock, bring to the boil, then reduce by two-thirds. Pass the mixture through a fine sieve, then keep warm until ready to serve. Can be made the day before and reheated.
  • Heat oven to 200C/fan 180C/gas 6. Season the beef generously with salt and pepper. Heat the sunflower oil in a large ovenproof frying pan on a high heat. Add the beef, then sear for 10 mins, turning, until browned all over. Transfer to the oven, then roast for approximately 20 mins, turning after 10 mins. This will give you beef that is medium rare; for medium, roast for an extra 5 mins. Allow the beef to rest on a rack, loosely covered in foil, for 10 mins, then slice into 6 thick slices. Add all juices from the beef to the sauce, then gently heat the sauce up and whisk in the butter.

Remove from pan, reserving drippings; keep warm., In same pan, heat drippings and remaining butter over medium-high heat; saute mushrooms and green onion until tender.
