Ritz Cracker Cookies are a timeless, effortless, crazy delicious sweet and salty treat that are a must for tailgating, birthday parties, cookie exchanges, and holidays.

Number Of Ingredients 4

1 cup cookie butter ((see note))
60 Ritz crackers (2 sleeves)
3 cups chocolate candy melts
sprinkles

Steps:

  • Line a large baking sheet with parchment paper.
  • Spread a generous teaspoon (or more!) of nut butter onto 40 of the crackers; sandwich those together with nut butter side facing up. Then top with the final 20 plain crackers, to form a cookie stack.
  • Melt the candy melts according to package directions until melted and smooth.
  • Place formed cookie stacks on a fork and dip in the melted chocolate; using a spoon to poor chocolate over the tops. Gently tap fork on the edge of the bowl to allow any excess chocolate to drip off.
  • Transfer back to the prepared baking sheet and decorate with sprinkles or candies of your choice.
  • Place baking sheet in the freezer for about 10 minutes to harden.
  • Serve and enjoy!

I've been making these for years now. Everyone always loves them. They are super easy. I know there are a few other recipes out there for these cookies - most use almond or candy bark... these use the "candy melt wafer discs" from craft stores, candy shops, or Walmart Craft Dept., I also microwave the candy melts instead of using a double boiler. Plus, these candy melts come in many colors to suit your needs - think pink candy melts with pink M&M's for October Breast Cancer Awareness, white on white for Bridal Showers... They are so pretty for the Holidays - you can decorate these with any color sprinkles, candy M&M's, I've even used Hershey's Hugs mini-morsels.. the possibilites are endless, just make to suit your occasion... great with bright sprinkles for birthdays, or pastel M&M's for Easter, etc. - have fun! Also good for bridal or baby shower take-home goodie bags. Note: I always use the MINI M&M over the regular size just not to overpower the cracker flavors... just an FYI...

80 Ritz crackers (1 whole box that contains 4 sleeves)
3/4 cup creamy peanut butter
3 (14 ounce) bags white chocolate candy melts (white chocolate candy melt wafer discs)
1/3 cup miniature M&M's chocolate candies

Steps:

  • In Ritz cracker box there are 4 sleeves of crackers.
  • Take 2 sleeves of crackers and top each cracker with enough peanut butter to coat gently - then top with remaining 2 sleeves of crackers which makes cracker sandwiches.
  • Microwave candy melts according to package directions. (I basically cook at 1/2 power and 30 second intervals until candies are melted stirring after each 30 second interval).
  • Drop cracker sandwich into melted chocolate, coat completely & remove with fork shaking off excess chocolate. Top immediately with mini M&M's or sprinkles, or colored sugar, etc.
  • Cool completely before serving/storing.

No-Bake Chocolate-Peanut Butter Cookies image

My great aunt Pat makes these cookies every year during the holidays. She always has them on hand for drop-in guests and puts them on the dessert buffet at our family Christmas Eve party. I like making multiple batches and storing them in holiday tins for gifts. Be careful, they're addictive! You might want to make an extra batch (or two).

1 cup peanut butter
60 buttery crackers, such as Ritz (2 sleeves)
2 1/2 cups milk chocolate chips
Red or green sprinkles, for decorating

Steps:

  • Line a baking sheet with parchment. Spread a generous 1 teaspoon peanut butter onto half of the crackers and then top with the remaining crackers. Place on the prepared baking sheet and refrigerate until the peanut butter is firm, 20 to 30 minutes.
  • Put the chocolate chips in a microwave-safe bowl and microwave on medium in 15-second intervals, stirring after each interval, until melted, 1 minute 15 seconds to 1 minute 30 seconds. Use 2 forks to dip each sandwich into the melted chocolate until completely coated. If the chocolate starts to stiffen, return it to the microwave. After dipping in chocolate, decorate with red or green sprinkles.
  • Put the sandwich cookies back on the baking sheet. Refrigerate until firm, about 30 minutes. Store in an airtight container at room temperature for up to 1 week.
