1 1/4 lbs unsalted butter, room temperature
2 cups granulated sugar
2 cups dark brown sugar
5 eggs
2 tablespoons vanilla
1 teaspoon baking soda
1 teaspoon kosher salt
6 cups flour
5 cups semi-sweet chocolate chips

Steps:

  • Line a baking sheet with parchment paper. Set aside.
  • Cream butter and sugars together until light and fluffy, about 2 minutes.
  • Add eggs and vanilla and mix until incorporated.
  • Stir the dry ingredients in (baking soda, salt and flour) until evenly combined and finally the chocolate chips.
  • Chill dough for 24 hours.
  • Preheat oven to 350°.
  • Scoop batter onto baking sheet on large mounds, 2-3 inches apart.
  • Bake 10-12 minutes until edges are golden and centers are almost set.
  • Transfer to wire rack to cool completely.

1 lb cold butter (4 sticks)
3 cups light brown sugar
1 tsp salt
3 eggs
3 1/4 cups chocolate chips
4 cups all-purpose flour
2 tsp vanilla
1 1/2 tsp baking powder

Steps:

  • In the bowl of an electric stand mixer fitted with the paddle attachment, beat butter until soft, approximately 2 minutes.
  • Add sugar, eggs, and vanilla, mixing well.
  • Add flour, salt, baking powder. Mix well. Add chocolate chips.
  • Divide the dough into 36 balls and refrigerate for an hour.
  • Place chilled cookie dough on a parchment lined baking sheet.
  • Bake for 15 minutes. Cool on wire rack.
