2 medium size beets, roasted
2 1/2 cups chicken stock
1/4 cup olive oil
3/4 cup Arborio rice
Salt and pepper
3 tablespoons butter, cubed
3 1/2 cups hot water
1/2-ounce dried shiitake and chanterelle mushrooms
2 tablespoons balsamic vinegar
6 tablespoons olive oil
1 tablespoon sherry wine
Salt and pepper
1 cup spinach
2 tablespoons olive oil
Salt and pepper
1 medium carrot
1 tablespoon honey
1/2-ounce olive oil
4 (6-ounce) center-cut salmon fillets
1/2 recipe Mushroom Vinaigrette
Salt and pepper
2 tablespoons olive oil
1 medium beet
1 medium carrot
1/2 recipe Reserved Mushroom Vinaigrette
4 pinches micro-greens

Steps:

  • Let beets cool until cool enough to handle, then peel and cut into chunks. Transfer beets to a blender or food processor along with 1 1/4 cups of stock and blend together. Add the remaining stock and blend. Add oil to a small saucepan and heat over medium heat. Add the rice to the oil and toast it for a couple minutes. Add half the beet puree to the rice, then slowly add the rest of the beet puree, stirring constantly. Season with salt and pepper, to taste. Cook until rice is tender and then fold in the butter. Keep warm in a hot water bath.
  • Heat the water, but do not boil it. Place mushrooms in a bowl; add hot water directly to the bowl and let sit about 15 minutes. Squeeze mushrooms free of water, reserving 1/4 cup of the mushroom water, and transfer mushrooms to a different bowl and set aside. (Mushrooms will be almost 5 ounces when soaked in water.) In a small bowl, whisk the reserved mushroom water with the balsamic. Whisk in the olive oil. carefully pour the sherry into a small skillet over medium-high heat and flambé. Immediately pour it into the vinaigrette. Season with salt and pepper, to taste, and set aside.
  • Wash the spinach well, dry it, and remove stems. Heat up a saute pan, then add oil. Add spinach and let wilt. Season with salt and pepper, to taste, and keep warm in a hot water bath. Wring spinach dry before serving.
  • Peel carrot and juice it. Pour the juice into a small saucepan. Add honey and oil and reduce over medium heat until syrupy, about 20 minutes. Place in a plastic sauce bottle.
  • Marinate the salmon in the mushroom vinaigrette for about 30 minutes at room temperature. Remove salmon and pat dry with a paper towel. Season salmon with salt and pepper. Heat a large nonstick skillet over medium-high heat. Add the oil and when hot, but not smoking, add salmon, skin side up, in pan. Sear for 3 to 5 minutes, flip, and continue cooking another 3 to 4 minutes. Remove from heat and keep warm until ready to serve.
  • Peel and put the beet through a suziewah (turning slicer); place in cold water. Peel and put the carrot through a suziewah; place in cold water. Toss with remaining mushroom vinaigrette. Reserve micro-greens for plating and set salad aside.
  • To serve: Place a ring mold in the center of a dinner plate. Add the beet risotto until full. Remove the ring mold. Place the sauteed spinach on top of risotto. Place a salmon fillet on top of the spinach. Place the wild mushrooms on top of the salmon. Put the micro-greens on the center of the fillet. Place several curls of beet and carrot on micro-greens. Garnish the plate with dots of carrot sauce. Wipe the plate clean of debris and repeat process for remaining 3 plates. Serve immediately.

Seared Scallops with Sweet Potato 'Risotto' and Chanterelles Truffle-Haricot Verts Salad image

4 shallots, brunoise
1 tablespoon butter
4 large sweet potatoes, brunoise (needs to be the size of risotto)
3 to 4 cups hot chicken broth
2 pounds large scallops, U-10's or bigger (10 scallops/pound)
1 tablespoon minced garlic
1/2 tablespoon minced ginger
1 pound chanterelles, cleaned
Salt and black pepper to taste
Canola oil to cook
Juice of 1 lemon
1 tablespoon truffle oil
1/2 cup virgin olive oil
1 pound haricot verts, blanched and shocked
1 bunch chives cut into batons (1-inch)
Truffle oil to garnish
Salt and Black pepper to taste
1 large sweet potato, spaghetti cut using turning slicer
1 Peruvian purple potato, peeled and sliced
Salt to taste
Canola oil for frying

Steps:

  • It is important that the sweet potato 'risotto' dice are all the same size. Traditional risotto cooking technique is used. In a 2 quart casserole, first saute the shallots in butter and season. Add the sweet potato and saute. Slowly add the hot chicken stock, one ladle at a time. Only add more stock after the previous ladle is fully absorbed. Continue adding stock until the 'risotto' gets creamy, but not mushy. The individual grains of 'risotto' should remain distinct.
  • Season the scallops with salt and pepper. In very hot saute pan, coat with oil and sear the scallops until brown. Flip scallops and brown other side. Total cooking time should be about 8 minutes. Wipe pan out, return to high heat, coat with canola oil, add garlic and ginger and saute until soft. Add chanterelles and season. Cook for about 6 to 8 minutes.
  • HARICOTS VERTS SALAD: In a stainless steel bowl, mix lemon juice, truffle oil and olive oil. Season with salt and pepper. Toss vinaigrette with the haricots verts. Check for seasoning. Garnish with chives.
  • FUNKY SWEET POTATO GARNISH: Wrap the sweet potato hair around a slice of purple potato. In a 300-degree fryer, fry until golden brown, about 4 to 5 minutes. Salt to taste and drain well.
  • PLATING: Using a ring mold or pvc pipe, fill bottom third with the hot chanterelles, then cover with 'risotto.' Place in the center of a plate. Surround with scallops and top with haricot verts salad. Garnish with truffle oil, chive batons and funky garnish.

MUSHROOM AND THYME RISOTTO CAKES WITH ROASTED TOMATO AND ARUGULA SALAD



Mushroom and Thyme Risotto Cakes with Roasted Tomato and Arugula Salad image

In order to be kosher when served with meat, the risotto in these cakes is dairy-free. It gets its creaminess exclusively from the starchy rice, so it's important to cook it slowly, stirring continuously, to release as much starch as possible. If you don't need to avoid dairy, you could replace half the vegetable oil with melted unsalted butter and stir in 1/2 cup grated Parmesan cheese with the mushrooms and thyme for extra flavor.

3/4 cup plus 3 tablespoons vegetable oil
3 large cloves garlic, minced
12 ounces white mushrooms, thinly sliced
1 1/4 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 cups chicken stock or low-sodium chicken broth
1 medium Spanish onion, finely diced
1 1/4 cups arborio rice (12 ounces)
1/2 cup dry white wine
1/4 cup fresh thyme leaves
1 cup plus 2 tablespoons all-purpose flour
3 eggs, lightly beaten
1 1/2 cups plain bread crumbs
Accompaniment: Roasted Tomato and Arugula Salad

Steps:

  • In large heavy sauté pan over moderate heat, heat 3 tablespoons oil until hot but not smoking. Add 1/2 of garlic and sauté until softened, about 2 minutes. Add mushrooms, 1/2 teaspoon salt, and 1/4 teaspoon pepper and sauté until mushrooms begin to give off liquid, about 5 minutes. Transfer to colander and let drain until ready to use.
  • In medium saucepan over low heat, bring stock to simmer. Cover and keep simmering.
  • In large heavy pot over moderate heat, heat 1/4 cup oil until hot but not smoking. Add onion and remaining garlic and sauté until softened, about 4 minutes. Add rice and sauté 4 minutes.
  • Add wine and cook, stirring constantly, until absorbed, about 2 minutes. Stir 1/2 cup simmering stock into rice and cook, stirring constantly, until absorbed. Continue cooking and adding stock, about 1/2 cup at a time, stirring constantly and letting each addition be absorbed before adding next, until rice is tender and creamy-looking but still al dente, about 18 minutes. (You will have about 1 cup stock left over.)
  • Remove from heat and stir in drained mushrooms, thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cool to room temperature, then refrigerate, covered, until cold, about 4 hours. (Risotto can be made ahead and refrigerated, covered, up to 24 hours.)
  • Preheat oven to 250°F.
  • Transfer 1 cup flour, eggs, and bread crumbs to 3 separate shallow bowls. Stir 1/4 teaspoon salt and 1/4 teaspoon pepper into flour. Stir remaining 1/4 teaspoon salt and 1/4 teaspoon pepper into bread crumbs.
  • Stir remaining 2 tablespoons flour into risotto, then, using wet hands, shape into 12 (1/2-inch-thick) patties.
  • In heavy large sauté pan over moderate heat, heat 1/4 cup oil until hot but not smoking. Working in batches of 4 and adding 2 tablespoons oil after each batch, dredge cakes in flour (tapping off excess), then egg (letting excess drip off), then bread crumbs, and fry until golden brown, about 2 minutes per side. Keep warm in oven while frying remaining batches.
  • Serve warm with salad.

2 shallots, sliced
2 cloves garlic, roughly chopped

1 cup chicken stock
2 tablespoons cold butter, diced
Salt and freshly ground black pepper
4 boneless, skinless chicken breast halves, about 1 pound, preferably organic, trimmed and squared off a bit
Kosher salt and freshly ground black pepper
16 slices bacon, not thick cut, from 16-ounce package
2 tablespoons olive oil
2 tablespoons freshly squeezed Meyer lemon juice
1 tablespoon extra-virgin olive oil
Salt and freshly ground black pepper
2 cups baby arugula, 2 ounces, trimmed and washed
1 small fennel bulb, thinly sliced, 1 1/2 cups
1 tablespoon olive oil
2 (1/4-inch) thick slices pancetta, 4 3/4-ounces, diced, 1 cup
3 cloves garlic, minced
1 shallot, finely chopped
1 1/3 cups Arborio rice, 9-ounces
1/2 cup white wine
3 cups chicken stock, heated
1/4 cup grated Parmesan cheese, 1-ounce
2 tablespoons mascarpone cheese, 1 1/2-ounces
1-ounce goat cheese
1/4 cup fresh basil leaves, thinly sliced
1 tablespoon butter

Steps:

  • Preheat the oven to 375 degrees F.
  • Sauce:
  • In a medium saucepot, over medium heat, combine the wine, shallots, and garlic and bring to a simmer. Add the basil, cloves, and bay leaf, and let simmer until the liquid is reduced to about 1 cup. When reduced, add the chicken stock, and continue to simmer until reduced by half. Strain into another sauce pan and stir in the butter. Season the mixture with salt, and pepper, to taste. Keep warm.
  • Chicken:
  • Season the chicken lightly with salt, and pepper, to taste. Lay 4 slices of bacon crosswise on a cutting board with the slices slightly overlapping. Put a chicken breast on top of the bacon. Bring the bacon slices up and around the chicken so the entire breast is wrapped. Repeat with the remaining chicken breasts and bacon.
  • In a large oven-proof skillet, heat 2 tablespoons olive oil over medium heat. Get the pan and oil hot, and then add the bacon-wrapped chicken and cook until the bacon is crispy on both sides, about 8 minutes per side. Transfer the pan to the oven and bake, until the chicken is cooked through, about 15 to 18 minutes.
  • Salad:
  • Whisk together the lemon juice and olive oil. Season the salad with salt, and pepper, to taste. Put the arugula and fennel into a large bowl and toss until well coated.
  • Scoop some risotto nicely into the center or each plate, making sure it has some height so the chicken can stand up. Cut the chicken on a bias and put on top of the risotto. Drizzle some of the red wine sauce around the plate and directly over the chicken. Top each plate with some arugula salad and serve.
  • Serving suggestion: Three Cheese Creamy Risotto, recipe follows.
  • Heat a large pot (wider is better than taller) over medium heat and add the olive oil and pancetta. Cook the pancetta until it begins to crisp, and then add the garlic and shallots. Cook the shallots and garlic until they begin to brown in color. Add the rice and stir well to coat. Cook the rice for 1 minute.
  • Add wine and stir well. Stir the rice until the wine is almost completely absorbed. Add in some chicken stock until rice is just covered and stir again until the stock is absorbed into the rice. Continue to gradually add the stock, stirring well after each addition, until the rice is cooked through, but still has a bite. You may not use all of the stock.
  • When rice is cooked, stir in the cheeses and basil. Remove from heat and stir in the butter. Season with salt, and pepper, to taste. The risotto should be smooth, creamy, rich, and delicious.

LEMON-MINT BULGUR "RISOTTO" WITH GARLIC SHRIMP AND TOSSED SALAD



Lemon-Mint Bulgur

3/4 teaspoon kosher salt
1 tablespoon olive oil
6 to 8 stalks green onions, finely chopped
1 cup bulgur, uncooked
4 cups spinach, washed and torn
1/3 cup chopped fresh mint leaves
1 tablespoon grated lemon rind
2 tablespoons fresh lemon juice
1 tablespoon olive oil
4 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound giant shrimp, peeled and deveined
Lemon wedges, for garnish
1 bag mixed greens
10 grape tomatoes
1/4 cup sliced almonds
1/2-pound fresh mozzarella, sliced
Olive oil, for dressing
Balsamic vinegar, for dressing
Salt and freshly ground black pepper

Steps:

  • To make the risotto: In a medium saucepan, combine the water and salt and bring to a simmer. Keep warm over low heat. In a medium saute pan, heat the oil over medium heat. Add the green onions and cook until soft, about 1 minute, stirring constantly. Add the bulgur and cook until fluffy, about 2 minutes, stirring constantly. Add the warm water, 1/2 cup at a time, stirring frequently until each portion is absorbed before adding the next, about 20 minutes total. Remove from heat. Add the spinach, mint, lemon rind, and lemon juice. Stir until the spinach wilts, about 2 minutes. Keep the bulgur risotto warm until ready to serve.
  • To make the shrimp: In a medium nonstick skillet, heat the oil over medium-high heat. Add the garlic and saute until soft, about 30 seconds. Add the salt, pepper, and shrimp, and saute until the shrimp are just cooked through, about 2 minutes. Remove from heat.
  • To make the salad: In a large bowl, combine all ingredients and toss together. Add oil and vinegar and salt and pepper, to taste.
  • Divide the Lemon-Mint Bulgur "Risotto" evenly among 4 small plates and arrange the Garlic Shrimp evenly over the "Risotto". Garnish with lemon wedges, if desired. Serve with Tossed Salad.

3 cups white wine
1/2 cup tomato sauce
2 cups veal stock
1/3 cup diced onion
1/4 cup diced shallots
1 tablespoons minced garlic
1 1/2 tablespoons olive oil
1 1/2 cups Arborio rice
1/4 teaspoon saffron
Salt and pepper to taste
1 cup white wine
4 cups chicken stock
1 tablespoons butter
14 cup Parmesan cheese
1/4 cup olive oil
1 medium red onion, peeled and finely diced
Kosher salt and freshly ground pepper to taste

16-ounce can Italian plum tomatoes, crushed by hand

Steps:

  • Pre-heat oven to 325 degrees. Using a small, thick-bottomed rondeau, heat the olive oil and butter over medium high. Season the veal shanks thoroughly with salt and pepper. Coat the veal shanks with flour, shake to remove any excess, and brown well. Remove veal shanks from rondeau.
  • Make the sachet:
  • Add the vegetables and the sachet to the pan. Stir to coat and place the veal shanks on top. Add the wine, tomato sauce and stock, adjust the seasoning, and bring the mixture to a boil. Cover and cook the veal shanks in the oven for 1 1/2 hours, or until the meat is very tender.
  • Make the risotto:
  • In a large sauce pot over medium heat, sweat the onion, shallots and garlic in the olive oil.
  • When vegetables are soft, add the rice and saffron, and salt and pepper to taste. Stir and continue cooking to toast the rice. When the rice is slightly browned, add the wine, stirring constantly.
  • In a separate sauce pot, bring the chicken stock to a boil. Add the hot stock to the rice in three batches, stirring constantly until the liquid is fully absorbed.
  • Continue the osso buco: Remove the shanks from the rondeau and reduce the jus to your taste.
  • Make the tomato fondu:
  • Warm olive oil in a stainless sauce pot over medium heat. Add the onions and simmer for 5-10 minutes until the onions are soft. Season with salt and pepper. Add the chopped garlic and simmer for 1-2 minutes, carefully cooking but not browning the garlic (the oil should stew the vegetables). Add the tomatoes, and continue cooking another 10 minutes, or until the liquid is reduced and slightly thickened.
  • Make the gremolata: Combine and reserve.
  • Make the salad: Peel an orange down to the flesh. Using a knife, separate each segment from the surrounding membrane and remove. Place segments in a bowl. Squeeze orange halves over bowl to release any remaining juice.
  • Using a sturdy Japanese mandolin, shave the fennel, white bulb down at an angle. Place fennel in a mixing bowl, and then shave the onion. Add onion to bowl, and toss. Add the juice of 1/2 lemon, the juice from the orange, salt and pepper to taste, and the olive oil. Toss again. Add the orange segments and chives, tossing once more, and serve.
  • Fold the butter and cheese into the risotto, reserve over low heat.
  • Pour jus over the shanks, top with gremolata, and serve with saffron risotto.

MUSHROOM, CHICKEN & BACON RISOTTO WITH A SPINACH SALAD



Mushroom, chicken & bacon risotto with a spinach salad image

Steps:

  • Soak the dried mushrooms in 500ml boiling water for 20 mins, then sieve the mushrooms and add liquid to a saucepan. Quickly rinse the mushrooms to ensure no dirt present, then chop and add to the chestnut mushrooms.
  • Add the stock to the saucepan holding the mushroom liquid, bring to the boil, and keen on a low simmer.
  • Season the chicken thighs with salt and pepper.
  • Heat a frying pan on a medium heat. Add 25g butter to a frying pan, along with some olive oil (to avoid the butter burning), and once the butter melted, add the chopped chicken thighs. Cook for a few minutes, stirring, until the thighs are browned. Then put the chicken on a plate to the side.
  • Put frying pan back on heat, add 25g butter and allow to melt. Add bacon and cook until starting to turn golden brown. Then add the chopped onion and cook until it's translucent and soft. Then add the sliced mushrooms and porcini mushrooms and cook for a further 8--10 minutes.
  • Add the rice to the frying pan and stir continuously until the rice is completely coated in butter, shiny, and the edges of the grain start to look transparent.
  • Pour the white wine into the frying pan and simmer until totally evaporated.
  • Add one ladleful of stock, and stir the rice over a low heat until liquid is absorbed. Add another ladleful of stock and continue stirring. Repeat until the rice is cooked al dente (after say 25-30 mins). It should be slightly firm but with a starchy bite in the middle. The risotto should be creamy and slightly soupy, and when you draw a wooden spoon through it, there will be a wake that holds for a few moments.
  • Add the final ladle of stick and add the chicken thigh to reheat. Stir in the chopped parsley, parmesan, and 10g of butter. Leave to rest for a few minutes, then serve.
  • To make the salad: Put balsamic vinegar, lemon juice, olive oil, and a good pinch of salt and pepper into a large salad bowl. Add the pine nuts, sliced spinach leaves, mint leaves, sun-dried tomatoes, and cucumber. Toss together and serve.

3 cups chicken stock or 3 cups vegetable stock
1/2 cup onion, finely chopped
salt
2 tablespoons olive oil
1/4 cup fresh lemon juice
1/4 cup capers, drained
12 cherry tomatoes or 12 grape tomatoes
1/4 cup flat leaf parsley, finely chopped
1/4 cup fresh basil leaf, shredded
2 garlic cloves, crushed
1/4 cup extra virgin olive oil
fresh ground black pepper or crushed red pepper flakes

Steps:

  • Rinse the rice well in cool water.
  • Drain well and set aside.
  • Bring the stock to a gentle boil in a medium-size saucepan, then reduce to a simmer.
  • Heat the 2 tablespoons olive oil in a large, heavy pot over medium-high heat.
  • Add the onions and cook, stirring, until just soft, 1 to 2 minutes.
  • Add the rice and cook, stirring constantly, until the grains are opaque, about 4 minutes.
  • Add the stock and salt to taste.
  • Stir gently until the liquid comes to a boil. Cover tightly, reduce the heat to low, and cook until all the liquid is absorbed, about 20 minutes. Remove from heat and let stand for about 15 minutes before stirring.
  • Transfer the rice to a large bowl and gently stir to cool, breaking up any lumps with a wooden spoon.
  • Add the lemon juice and toss gently to mix. Cover with a clean towel and let cool.
  • When ready to serve, add the capers, tomatoes, parsley, basil, garlic and extra-virgin alive oil.
  • Toss gently to mix.
  • Season with the black pepper or crushed red pepper flakes.
  • Serve at room temperature.

1/2 pound red Treviso or other radicchio or red-leaf lettuce
1/3 cup imported sun-dried tomatoes (in virgin olive oil) cut into slivers
2 tablespoons large bottled capers, drained
3 tablespoons lightly toasted pine nuts, optional
1/2 teaspoon crushed red peppercorns, optional
2 teaspoons balsamic vinegar
1/4 cup virgin olive oil

Steps:

  • Remove any core from the radicchio. Rinse the leaves and pat or spin dry. Put the leaves in a salad bowl.

1 tablespoon(s) balsamic vinegar
1 tablespoon(s) olive oil
1/8 teaspoon(s) salt
1/8 teaspoon(s) freshly ground black pepper
1/4 cup(s) torn fresh basil leaves
Risotto Cakes:
Reserved risotto (see Butternut Squash Barley Risotto recipe)
1 large egg
1/4 cup(s) grated Pecorino Romano cheese
1/4 cup(s) finely chopped fresh basil leaves
1/4 teaspoon(s) freshly ground black pepper
1 teaspoon(s) vegetable oil

Steps:

  • Combine tomatoes, garlic, balsamic vinegar, olive oil, salt, and black pepper in large bowl. Stir in fresh basil leaves. Combine reserved risotto, egg, Pecorino Romano cheese, basil, and freshly ground black pepper in another large bowl. Using a 1/3-cup measuring cup, form mixture into 12 3/4-inch-thick patties. Heat vegetable oil in 12-inch nonstick skillet, on medium 1 minute. Add half of patties. Cook 8 minutes or until golden brown. Carefully turn over and cook 4 minutes or until golden brown. Repeat with remaining mixture, cooking each side 4 minutes. Serve with tomato salad.
