One dish meal served in bowls topped with Parmesan Cheese. Recipe courtesy of Everyday Italian. Reviewers said it was easy and enjoyed by picky eaters, too. Others made with filet mignon to flat iron steak.

4 tablespoons olive oil, divided
24 ounces rib eye steaks
salt
pepper
2 onions, thinly sliced
2 carrots, peeled and thinly sliced
4 garlic cloves, minced
1 teaspoon dried oregano
3/4 cup dry red wine
26 ounces marinara sauce
1 cup beef broth
16 ounces rigatoni pasta
3 ounces parmesan cheese (shaved or grated)

Steps:

  • Heat 2 T Olive Oil in heavy frying pan over high heat.
  • Sprinkle steaks with salt and pepper to taste.
  • Cook Steaks until they are brown BUT still RARE in the center, about 3 minutes each side. Transfer steaks to a plate to cool down. Save steak juices in plate.
  • Add 2 T Olive Oil to same pan. Saute the onion and carrots until onions are translucent, about 8 minutes, with add'l salt & pepper to taste.
  • Add Garlic and Oregano, saute for another minute.
  • Add Marinara Sauce and broth. Cover and simmer over medium-low heat to allow the flavors to blend, about 10 minutes. Season with salt & pepper to taste.
  • Meanwhile, trim fat from each steak and cut into bite-size pieces and set aside.
  • Bring a large pot of SALTED water to boil over high heat. Add Rigatoni and boil until tender but firm to the bite (al dente), about 10 minutes, stirring often. Drain.
  • Toss the Rigatoni and steak pieces and any accumulated juices from the steaks with the sauce to coat.
  • Transfer to individual serving bowls, top with cheese.

BAKED RIGATONI WITH BECHAMEL SAUCE

1 stick unsalted butter (4 ounces)
1/2 cup and 2 tablespoons all-purpose flour
1 quart whole milk, at room temperature
Pinch fresh nutmeg
Sea salt and white pepper
1 cup grated fontina
1/2 pound thinly sliced prosciutto, julienned
1 pound dry rigatoni
3 tablespoons unsalted butter, diced

Steps:

  • Preheat oven to 425 degrees F.
  • Bechamel sauce:
  • In a 2 quart saucepan, melt the butter over medium heat. Add the flour and whisk until smooth, about 2 minutes. Always stirring, gradually add the milk and continue to whisk until the sauce is smooth and creamy. Simmer until it is thick enough to coat the back of a spoon. This will take approximately 10 minutes. Remove from heat and stir in nutmeg, 1/2 cup fontina, prosciutto and season with salt and white pepper. Set aside.
  • In a large pot, bring to a boil 6 quarts of salted water. Add the rigatoni and cook for about 5 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander. Return pasta to the pot and pour in bechamel sauce. Using a wooden spoon, mix well until all the pasta is coated with the sauce.
  • Into a greased 13 by 9-inch baking dish, pour the pasta with cream sauce. Smooth out top and sprinkle with remaining 1/2 cup fontina. Dot the top with diced butter and bake in oven for 25 minutes or until bubbling and the top is golden brown.

This is one of my cousin's recipes. I made this for my Saturday night date with Marvin and he loved every bite.

4 tablespoons olive oil
24 ounces rib eye steaks
2 onions (sliced thin)
2 carrots (peeled and sliced thin)
4 garlic cloves (minced)
1 teaspoon dried oregano
3/4 cup dry red wine
1 (26 ounce) jar marinara sauce
1 cup beef broth
16 ounces rigatoni pasta
3 ounces parmesan cheese (shredded)
salt and pepper

Steps:

  • Heat 2 Tablespoons of oil in large pan.
  • Sprinkle steaks with salt and pepper.
  • Cook the steak's until brown on outside, but still rare in the middle, about 3 minutes per side.
  • Transfer to plate and set aside to cool completely.
  • Add 2 more Tablespoons of oil to pan.
  • Sauté onions and carrots until onions are translucent, about 8 minutes.
  • Add salt and pepper to taste.
  • Add garlic and oregano and sauté 1 minute.
  • Add wine and simmer 1 minute.
  • Add marinara sauce and beef broth.
  • Cover and simmer over medium-low heat about 10 minutes.
  • Season too taste with salt and pepper.
  • Meanwhile trim off any fat from steaks.
  • Cut into bite size pieces-set aside.
  • Cook rigatoni according to package directions.
  • About 10 minutes, drain, toss with sauce and juices.
  • Transfer to serving bowl and top with Parmesan Cheese and serve.
  • You don't have to use Rib Eyes in this recipe. You can use a nice sirloin if you prefer.

1 pound rigatoni pasta
2 tablespoons olive oil
2 shallots, minced
1 clove garlic, minced
Salt and freshly ground black pepper
1 pound assorted mushrooms, (such as cremini, shiitake and button), cleaned and sliced
1/2 cup white wine
1/2 cup vegetable stock
1 cup (8 ounces) mascarpone cheese, at room temperature
1/2 cup grated Parmesan
1/4 cup chopped fresh chives

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
  • While the pasta is cooking:
  • Heat the oil in a large skillet over medium-high heat. Add the shallots and garlic to the pan. Season with salt and pepper. Cook until soft, about 2 minutes. Add the mushrooms to the pan and season with salt and pepper. Cook until mushrooms are tender, stirring occasionally, about 5 to 7 minutes. Turn the heat to high. Add the wine and cook for 3 minutes until all the liquid evaporates. Add the stock and simmer until liquid is slightly reduced. Remove the pan from the heat. Add the mascarpone cheese. Stir until creamy. Drain the pasta, reserving about 1 cup of the pasta water, and transfer to a serving bowl. Add the mushroom mixture and the Parmesan. Season with salt and pepper, to taste. Toss well to coat pasta, adding the reserved pasta water, if needed, to loosen the pasta. Garnish with the chopped chives. Serve immediately.
