1 (15 ounce) can solid-pack pumpkin
1 (12 fluid ounce) can evaporated milk
1 cup white sugar
3 eggs
4 teaspoons pumpkin pie spice
1 (18.25 ounce) package yellow cake mix
¾ cup butter, melted
1 ½ cups chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix pumpkin, evaporated milk, sugar, eggs, and pumpkin pie spice together in a bowl. Pour pumpkin mixture into prepared baking dish. Sprinkle cake mix over pumpkin mixture; drizzle with butter. Sprinkle pecans atop butter layer.
  • Bake in the preheated oven until a knife inserted in the center comes out clean, about 1 hour.

3 large egg whites, lightly beaten
2/3 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Dash ground cloves
1 can (15 ounces) solid-pack pumpkin
1 teaspoon vanilla extract
1 can (12 ounces) fat-free evaporated milk

Steps:

  • In a large bowl, beat the egg whites, sugar, cinnamon, salt, ginger, nutmeg and cloves. Add pumpkin and vanilla; mix well. Gradually beat in milk. Pour into eight ungreased 6-oz. custard cups. , Place the cups in a 13x9-in. baking pan; add 1 in. of water to pan. Bake at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Serve warm or chill.

1 (18.25 ounce) package yellow cake mix
⅓ cup butter, melted
1 egg
1 (29 ounce) can pumpkin
½ cup brown sugar
.66 cup milk
3 eggs
2 tablespoons pumpkin pie spice
¼ cup butter, chilled
½ cup white sugar
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish.
  • Set aside 1 cup of cake mix. Combine remaining cake mix with melted butter and 1 egg and mix until well blended; spread mixture in the bottom of the prepared baking dish.
  • In a large bowl combine pumpkin, brown sugar, milk, 3 eggs and pumpkin pie spice; mix well and pour this mixture over cake mix mixture in baking dish.
  • In a small bowl with a pastry blender, or in a food processor, combine chilled butter and white sugar with reserved cake mix until mixture resembles coarse crumbs. Sprinkle over pumpkin mixture. Sprinkle chopped walnuts over all.
  • Bake 45 to 50 minutes, until top is golden.
