RICH N CREAMY POTATO CASSEROLE
My husband, a pastor, and our three children enjoy these potatoes so much that I don't wait until the holidays to make them. This casserole often comes out when we invite church members over for a family-style meal.

Steps:
- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain and cool. Peel and grate potatoes; place in a large bowl. Add the sour cream, cheddar cheese, 3 tablespoons butter, green onions, salt and pepper., Transfer to a greased 2-1/2-qt. baking dish. Drizzle with remaining butter. Bake, uncovered, at 350° for 30-35 minutes or until heated through. Refrigerate any leftovers.

- 1. In large bowl, blend soups and cream cheese. Microwave til creamy and cheese is melted, stirring occasionally. Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes. Fold well til all potatoes are coated. Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly. Sprinkle top with rest of shredded cheese. COVER and bake at 350º for 50-55 minutes. Uncover, top with onions. Bake UNCOVERED for another 5 minutes or til onions are lightly browned. *Nice additions: 1 cup diced, fully-cooked ham. Cooked, crumbled bacon (4-6 slices). Sauted onions. Sauted mushrooms.

I got the recipe for these irresistible potatoes from a friend in my country line-dance club several years ago. It's a favorite at every potluck I've taken it to. So when I married Cliff on our farm, this saucy dish was automatically part of the wedding menu.

- In a large bowl, combine the potatoes, 1/2 cup butter, sour cream, soup, onions, cheese, salt and pepper. Transfer to two greased shallow 3-qt. baking dishes. Combine cornflakes and remaining butter; sprinkle evenly over tops. Bake, uncovered, at 350° for 55-60 minutes or until bubbly.

Steps:
- Peel and chop potatoes. Grease 9x12 casserole dish. In a large saucepan, melt 4 tablespoons butter; stir in flour. Gradually add cream and cook until sauce bubbles and thickens; add salt pepper, onion and nutmeg. Stir to mix well. Add potatoes. Pour into cassorole dish and dot with remaining butter. Bake for 45 minutes or until brown.
