No more dry, lackluster burgers. These are juicy, and spices can be easily added or changed to suit anyone's taste. Baste frequently with your favorite barbeque sauce. If you find the meat mixture too mushy, just add more bread crumbs until it forms patties that hold their shape.

2 pounds ground beef
1 egg, beaten
¾ cup dry bread crumbs
3 tablespoons evaporated milk
2 tablespoons Worcestershire sauce
⅛ teaspoon cayenne pepper
2 cloves garlic, minced

Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.
  • Lightly oil the grill grate. Grill patties 5 minutes per side, or until well done.

This came from "The Great Big Burger Book," by Jane Murphy and Liz Yeh Singh. It makes a rich and tasty splurge of a hamburger. This would also be good served with a mustard-horseradish sauce. An English recipe brought across the ocean to end up in the Northeast and Mid Atlantic states.

Number Of Ingredients 19

1 lb lean top sirloin steak
1 shallot, minced
1 tablespoon minced fresh chives
1 tablespoon Dijon mustard
2 dashes Tabasco sauce
2 large egg yolks
2 dashes Worcestershire sauce
1 tablespoon cognac
1/2 teaspoon sea salt
4 teaspoons capers, drained and chopped
1 tablespoon cracked black peppercorns
kaiser rolls or other good hot dog bun
1 tablespoon butter, melted
1/4 cup ketchup
1 tablespoon cider vinegar
1/2 teaspoon dark brown sugar, packed
1 garlic clove, minced
1 teaspoon Worcestershire sauce
2 -6 drops Tabasco sauce

Steps:

  • CUT the beef into 1-inch chunks.
  • Place in food processor in two batches and pulse until it's coarsely ground.
  • (Don't overprocess; you want it a little chunky.) Put meat in a bowl and add the shallots, chives, mustard, Tabasco, egg yolks, Worcestershire, cognac, sea salt, capers and pepper.
  • With very clean hands, work the ingredients into the meat, then form into three or four burgers about 1 1/2 inches thick.
  • PLACE burgers in the refrigerator to chill and firm up while you start a fire in the grill.
  • Grill over direct heat about 5 to 6 minutes per side.
  • Insert an instant-read thermometer from the side to make sure the center is 160 degrees.
  • While burgers are grilling, brush the insides of the rolls with melted butter.
  • Place on the grill, cut side down, to toast lightly.
  • Serve with Brooklyn Ketchup and your favorite toppings.
  • For Brooklyn Ketchup: BEAT all the ingredients together in a small bowl or cup.
  • The authors note that the garlic flavor gets stronger if you let it stand for an hour, but don't make it more than 24 hours in advance.
  • Makes about 1/4 cup.

BEEF PATTIES:
2 lb ground beef
2 c finely crushed soda crackers
2 c milk
1 c finely chopped onion
salt and pepper to taste
GRAVY:
1 can(s) cream of mushroom soup, undiluted
1 can(s) water

Steps:

  • 1. Mix all the ingredient together. Then press into a large flat pan. Cover pan with foil or plastic wrap. Let this set overnight in the refrigerator.
  • 2. Preheat oven to 325 degrees. When ready to bake cut in squares, dip each piece in flour and brown in a skillet with a little oil in it. Then put the browned pieces in a casserole.
  • 3. Make gravy by combining 1 can cream of mushroom soup mixed with 1 can water. Pour gravy mixture over meat pieces and bake slowly (325 degrees) for 2 hours or until meat is done.
  • 4. Grandma always served these with mashed potatoes and hot fresh yeast rolls.

½ onion, finely chopped
½ cup shredded Colby Jack or Cheddar cheese
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1 egg
1 (1 ounce) envelope dry onion soup mix
1 clove garlic, minced
1 tablespoon garlic powder
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon crushed dried rosemary
salt and pepper to taste

Steps:

  • Preheat a grill for high heat.
  • In a large bowl, mix together the ground beef, onion, cheese, soy sauce, Worcestershire sauce, egg, onion soup mix, garlic, garlic powder, parsley, basil, oregano, rosemary, salt, and pepper. Form into 4 patties.
  • Grill patties for 5 minutes per side on the hot grill, or until well done. Serve on buns with your favorite condiments.
