The ultimate birthday cake! This cake is so delicious, moist and rich, you won't believe it has less than 30% fat. Top it with chocolate syrup, sprinkle to decorate and don't forget the candles....

125 g margarine (soft)
1 1/2 cups sugar (300 grams)
2 whole eggs (120 grams)
1 egg white (35 grams)
4 tablespoons cocoa (stuffed - 80 grams)
3 1/2 cups prepared chocolate pudding (Swiss Miss Low-Fat - 400 grams)
2 cups self rising flour (280 grams)
75 g natural applesauce

Steps:

  • Preheat oven to 390 degrees F. (180 C).
  • Grease baking pan with a little bit of the margarine.
  • Mix the rest of the margarine with sugar and 1 whole egg until mixture is unified.
  • Gradually and alternately add: flour, cocoa, 1 whole egg, pudding, flour, cocoa, apple sauce, pudding -- and so on, until all mixes up nicely to a homogeneous mixture.
  • Pure into greased baking pan (square or round) and bake for about 30 minutes, or until cake is ready: dry and bouncy to touch.
  • When the cake is ready I take it out of the oven and cover-seal it with aluminum foil until cools. This ensures the crust keeps moist.
  • To decorate, I use chocolate syrup, usually Hershey's (w/0g fat)- and spread it all over as if it was frosting. It's good enough for the sprinkles to stick, and it adds additional moist and chocolaty flavor.

This cake is almost fat-free, if you are in need of a chocolate fix and watching your fat intake then this might be what you are looking for ;-) don't bother licking the spoon before baking as the yogurt makes it taste kind of tingly and weird, lol! Watch closely, do not overbake this cake you will need to experiment with length of cooking time to suit your oven and baking pan. 1 2/3 cups flour
1 1/4 cups sugar (can use half white sugar and Splenda if desired)
2/3 cup unsweetened baking cocoa, sifted
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup applesauce
1 1/2 cups skim milk yogurt (or use low-fat or fat-free sour cream)
1 tablespoon vanilla
4 egg whites (or use 2 whole eggs)

Steps:

  • Set oven to 350°F.
  • Generously grease a 13 x 9-inch baking pan.
  • In a medium bowl sift the flour with cocoa powder, baking soda and salt.
  • In another bowl beat the sugar with egg whites and vanilla until well combined.
  • Mix in the yogurt and applesauce until thoroughly combined.
  • Mix the wet ingredients into the dry ingredients and beat on low speed until just combined.
  • Transfer to prepared baking dish.
  • Bake for about 30-35 minutes or until cake tests done (watch closely, do not over bake!).

1 1/2 cups unbleached flour
1 cup unbleached cane sugar
1/3 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
2/3 cup water
1/2 cup cold brewed coffee or 1/2 cup espresso
3 tablespoons safflower oil
1 teaspoon vanilla
1 tablespoon cider vinegar

Steps:

  • In a large bowl mix together the flour, sugar, cocoa powder, baking soda, and salt, and set aside.
  • In a measuring cup or small bowl, whisk together all of the wet ingredients, except the cider vinegar.
  • Add the wet ingredients into the dry ingredients, and whisk well to combine.
  • Drizzle the cider vinegar over the top of the batter and whisk quickly to incorporate.
  • Pour batter into greased 9inch pan. Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
  • *Note: Double the recipe to make a two layer 9-inch cake or 9x13-inch cake.

1 1/2 teaspoons baking soda (7.5g)
1 teaspoon salt (6g)
1 1/4 cups brown sugar, packed (275g)
1/2 cup powdered sugar (60g)
95 g butter, soft, room temperature
1 teaspoon vanilla extract (4g)
2 egg whites, beaten (66g)
1/3 cup 1% low-fat milk (90g)
280 g semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F (175°C).
  • Mix flour, baking soda and salt.
  • In a large bowl mix brown sugar, powder sugar, butter and vanilla extract.
  • Add bitten egg whites to sugar mixture.
  • Gradually alternate and add milk and dry ingredients to the sugar + egg mixture.
  • Mix in the chocolate chips.
  • Using two spoons, place cookie portions onto baking sheet lined with baking paper. Make sure to leave a lot of space between cookies.
  • Bake for 10-12 minutes, until center of cookie is stable - DO NOT over bake!.
  • Place baked cookies on cooling net.
  • * When cookies are ready they are moist and soft - they are not supposed to be dry and hard.

Steps:

  • Mix dry ingredients together in large bowl.
