Each winter in early February my friends and I gather for an outdoor show called Mittenfest. We skip the Bloody Marys and fill our thermoses with these hot cocoas instead.

2/3 cup heavy whipping cream
1 cup 2% milk
4 ounces dark chocolate candy bar, chopped
3 tablespoons sugar
Vanilla rum, optional
Sweetened heavy whipping cream, whipped

Steps:

  • In a small saucepan, heat heavy whipping cream, milk, chocolate and sugar over medium heat just until mixture comes to a simmer, stirring constantly. Remove from heat; stir until smooth. If desired, add rum. Pour into 2 mugs; top with sweetened whipped cream.

½ cup unsweetened cocoa

6 ½ cups hot water
3 10 miniatures Mini marshmallows

  • In large saucepan over medium heat, combine sweetened condensed milk, cocoa, vanilla and salt; mix well. Slowly stir in water. Heat through, stirring occasionally. Do not boil. Top with marshmallows, (optional). Store covered in refrigerator.

6 ounces semisweet chocolate, broken into pieces
1 1/2-2 tablespoons cocoa powder
1 -2 tablespoon sugar
1 cup double cream
2 cups full-cream milk
1 cinnamon stick (optional)
1 cup double cream, whipped to stiff peak

Steps:

  • In a heavy-based saucepan, add in the broken pieces of chocolate and double cream and over medium heat, stir continously till melted.
  • Add in the cocoa powder, sugar, milk and cinnamon stick (if using) and whisk continously till it comes to boil.
  • Then, take it off heat and gently fold in the whipped double cream till smooth.
  • Re-heat again and whisk vigourously to make it frothy.
  • Pour into mugs and sprinkle cocoa powder on top.
  • Enjoy!
