BLACK & WHITE RICE SALAD WITH CUMIN-ROASTED BUTTERNUT SQUASH

Number Of Ingredients 15

1 small butternut squash (about 375g/13oz), peeled and cubed
1 tbsp olive oil
2 tbsp cumin seeds
250g basmati & wild rice
140g dried cranberries
200g pomegranate seeds
100g blanched hazelnuts , toasted and halved
small pack dill , leaves and stalks finely chopped
small pack flat-leaf parsley , leaves and stalks finely chopped
1 large red onion , finely diced
200g feta , to serve
zest and juice 1 large unwaxed orange
4 tbsp clear honey
4-5 tbsp sherry vinegar
4 tbsp olive oil

Steps:

  • Heat oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Put the squash on the baking tray, drizzle over the olive oil, scatter on the cumin seeds and season generously - use your hands to ensure each piece is evenly coated with oil and seasoning. Roast for 30-35 mins until the edges are caramelised, then remove from the oven and leave to cool.
  • Meanwhile, bring a large saucepan of water to the boil. Cook the rice for 20-25 mins or according to pack instructions, then strain and rinse well with cold water until all the starch is washed off and the rice is cold. Allow to drain well.
  • Put the cranberries, pomegranate seeds, hazelnuts, herbs, onion and rice in a large bowl and mix well. Make the dressing by combining all the ingredients in a bowl with a generous amount of seasoning to taste. Once the squash is completely cool, gently mix it into the bowl of other ingredients. Pour over the dressing, mix well and serve on a large platter with the feta crumbled over the top.

2 cups water
1 cup uncooked white rice
salt to taste
2 tablespoons olive oil
2 teaspoons cumin seeds

Steps:

  • Bring water and rice to a boil in a saucepan. Season with salt. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 10 to 15 minutes. Drain.
  • Heat oil in a pan over medium-high heat. Add cumin seeds to the hot oil and cook until sputtering, about 2 minutes. Pour cumin seeds and oil onto the hot rice and mix well.

1 tablespoon butter

Steps:

One-Pot Chicken and Rice With Ginger and Cumin image

Inspired by Indian flavors, this one-pot chicken-and-rice pilaf comes together in under an hour by taking advantage of spices that pack a punch: Mustard seeds bring heat, cumin adds nutty notes and cardamom provides depth and warmth - and all of the spices are toasted in oil and butter, which concentrates their flavor. Golden raisins lend a touch of sweetness. To make it a vegetarian side, omit the chicken and use vegetable broth or even water in place of the chicken broth.

3 tablespoons extra-virgin olive oil
2 pounds boneless, skinless chicken thighs, each thigh cut into 2 equal pieces
Kosher salt and black pepper
3 tablespoons unsalted butter
2 large shallots, thinly sliced (about 1 cup)
2 tablespoons minced fresh ginger
2 tablespoons minced garlic
1 tablespoon brown mustard seeds
1 1/2 teaspoons cumin seeds
1/4 teaspoon ground green cardamom (optional)
2 cups basmati rice (about 14 ounces)
1/4 cup golden raisins (about 1 1/2 ounces)
3 cups low-sodium chicken broth or vegetable broth
2 medium carrots (about 6 ounces), peeled and very thinly sliced into rounds (about 1 cup)
1/4 cup chopped fresh cilantro
Hot sauce and yogurt, for serving (optional)

Steps:

  • In a large Dutch oven or heavy pot, heat 2 tablespoons oil over medium. Add half the chicken, season with salt and pepper, and cook, turning halfway, until browned, 4 to 6 minutes. Transfer chicken to a plate. Repeat with remaining chicken.
  • Add butter, shallots and remaining oil and cook, stirring, until butter is melted and shallots are softened, about 2 minutes. Add the ginger, garlic, mustard seeds, cumin seeds and cardamom (if using), and stir until very fragrant, 2 minutes.
  • Add rice and raisins, season well with salt and pepper and stir to coat, 30 seconds. Add broth, scraping bottom of pot to remove any browned bits.
  • Nestle chicken with any accumulated juices into the mixture and bring to a boil over high heat. Reduce heat to low, cover and cook until rice is tender and liquid is absorbed, about 15 minutes. Sprinkle with carrots, then cover and turn off heat. Let carrots steam for 5 minutes.
  • Add cilantro and fluff rice with a fork. Divide among bowls and serve with hot sauce and yogurt, if desired.

1 1/2 teaspoons cumin seeds
2 small acorn squashes (about 1 pound each), halved, seeded, and cut into 1-inch wedges
1 teaspoon ground coriander
Coarse salt and freshly ground pepper
3 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Toast sesame seeds in a small skillet over medium-high, shaking pan frequently, until golden brown, 1 to 2 minutes. Add cumin seeds and toast until fragrant, about 30 seconds more. Transfer seeds to a small bowl; let cool.
  • Toss squashes with coriander, 2 teaspoons salt, 1/4 teaspoon pepper, and oil on a rimmed baking sheet. Spread in a single layer; roast 15 minutes. Add sesame mixture and toss to coat, then flip slices. Roast until squashes are tender and golden brown, about 15 minutes more; serve.

1 tablespoon reduced-sodium soy sauce
1/2 teaspoon dried savory

  • In a large saucepan, saute the mushrooms, squash, onions and green pepper in oil until crisp-tender. Add garlic; saute 1 minute longer., Stir in the rice, broth, soy sauce and savory. Cover and cook over medium-low heat for 13-15 minutes or until squash is tender. Stir in almonds.

2 tablespoons olive oil
1 onion (5 ounces), chopped (about 1 cup)
2 or 3 large garlic cloves, peeled, crushed and chopped (2 teaspoons)
2 cups long-grain converted rice
1 tablespoon ground cumin
4 cups unsalted, homemade chicken stock or canned low-salt chicken broth
Salt to taste

Steps:

  • Heat the oil in a heavy saucepan with a lid. When the oil is hot, but not smoking, add the onions and saute them for 30 seconds.
  • Add the garlic; then, stir in the rice and cumin. Stir well to coat the grains of rice with the oil, and then add the chicken stock or broth. Bring to a boil, uncovered, stirring occasionally, over high heat. Then, reduce the heat to low, cover, and cook for 20 minutes. The liquid should be completely absorbed by the rice, which should be tender.
  • Fluff the rice with a fork and serve it with the cusk.
