2 tablespoons pine nuts
3 cups packed fresh cilantro sprigs
1 garlic clove
3/4 cup long-grain white rice
1 1/2 tablespoons olive oil
1 1/2 cups water
1/2 teaspoon salt

Steps:

  • In a dry small heavy saucepan toast pine nuts over moderate heat, stirring, until golden, about 5 minutes, and transfer to a small bowl. Finely chop cilantro and reserve 1/4 cup for garnish. Mince garlic. In pan cook rice in oil with garlic and remaining cilantro over moderate heat, stirring, 3 minutes and add water and salt. Bring mixture to a boil and cook, covered, over low heat 15 minutes, or until water is absorbed and rice is tender. Remove pan from heat and let rice stand, covered, 5 minutes.
  • Serve rice sprinkled with pine nuts and reserved cilantro.

1 1/2 cups uncooked basmati rice
1/2 cup orange juice
2 tablespoons pine nuts
1/2 cup raisins
3 scallions, chopped (white & light green parts only)
3 tablespoons fresh cilantro, chopped
salt and pepper
2 cups water

Steps:

  • Use a med to lge sauce pan.
  • Cook pine nuts over low heat about 3 minutes or until browned, then remove from pan and reserve.
  • In same pan add 2 cups water, rice, juice, S&P and bring to boil; cover, reduce heat to low and cook until liquid is absorbed, about 15 minutes.
  • Uncover and stir in raisins, scallions and cilantro.
  • Let stand 5 minutes then sprinkle with pine nuts just before serving.

1 tablespoon olive oil
2 tablespoons finely chopped onion
1 teaspoon finely chopped garlic
1 cup converted rice
1 cup raisins
1/4 cup pine nuts
1 1/2 cups water
1 tablespoon butter
Salt and pepper to taste

Steps:

  • Add the olive oil to a saucepan, and then the onion and garlic. Cook over medium heat, stirring, until wilted. Add the rice, raisins and the pine nuts.
  • Add the water, salt and pepper. Bring to a boil, stirring; cover, and simmer for exactly 17 minutes.
  • Add the butter, stir to fluff the rice, and blend well.

1 1/2 cups water
1 cup long-grain white rice
Coarse salt and freshly ground pepper
1/4 cup pine nuts, toasted (see page 365)
1 tablespoon extra-virgin olive oil
1/2 teaspoon finely grated lemon zest, plus 1 tablespoon lemon juice

Steps:

  • In a medium saucepan, bring the water to a boil. Add rice; season with salt and pepper, and return to a boil. Reduce to a simmer, cover, and cook until rice is tender and has absorbed all liquid, 15 to 17 minutes. Remove from heat and let stand, covered, 5 minutes.
  • Fluff rice gently with a fork, then toss with pine nuts, oil, and lemon zest and juice. Season with salt and pepper, and serve.
