Just a little something extra to warm the change of seasons. Wonderful aroma. Try using one of these varieties: Granny Smith, Spys, Cortlands, or Pippins.

1 recipe pastry for a 9 inch double crust pie
6 cups thinly sliced apples
1 lemon, juiced
½ cup packed light brown sugar
½ cup white sugar
2 teaspoons ground cinnamon
¼ teaspoon freshly grated nutmeg
3 tablespoons all-purpose flour
¼ cup butter, chilled and diced
9 caramel squares, quartered
1 tablespoon white sugar
