This Creamy Pineapple Rice pudding is absolutely delicious. The perfect side dish for the holidays.

Steps:
- In a large bowl while rice is cooking mix all the other ingredients together. Once rice is cooked mix it into your other ingredients. Spray a casserole dish and fill with rice mixture. (Can add another 1/2 teaspoon nutmeg on top if you like nutmeg.)
- Bake in preheated 325 degree oven 55 -60 minutes. Serve warm with rum sauce over top. Makes about 10 to 12 servings. Keeps well for several days in refrigerator. Reheat in microwave

Steps:
- Add marshmallows to cooked rice while it's still hot. Stir until marshmallows melt.
- Add crushed pineapple and stir.
- Stir in whipped cream. Add to parfait dishes and chill in the fridge until cold.

- Melt butter in a small skillet over medium heat. Mix in brown sugar, cinnamon, salt, and nutmeg. Add apples; cook and stir until apples have softened, about 10 minutes. Set aside.
- Bring water and rice to a boil in a medium saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 20 minutes.
- Stir 1 1/2 cups milk into rice mixture; cook until hot, 2 to 3 minutes. Add brown sugar and stir until well combined. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in cooked apples, remaining 1/2 cup milk, and beaten egg. Cook, stirring constantly, until heated through, about 2 minutes. Remove from heat and stir in butter and vanilla extract. Serve warm.

THIS WONDERFUL old recipe was a treat during the Depression. We didn't have dairy topping in those days, so we enjoyed it with real, heavy cream. Mother served this as a special treat for our family. - In a small bowl, combine the rice and pineapple; set aside. In a small bowl, beat cream, sugar and vanilla until soft peaks form. Fold into rice mixture. Cover and chill until serving. Garnish with cherries and mint if desired.

- Let the mint steep in the brewed tea for 30 minutes. Add the sugar syrup to make it very sweet. Add lemon juice to bring back the tea flavor and to reduce the sweetness. Freeze in an ice cream machine according to manufacturer's instructions.
- In a saucepan, combine sugar and water. Bring to a boil and simmer until sugar is dissolved, but no color is reached. Remove from the heat and let cool.
EARL GREY TEA RICE

- Rinse the rice under running water until the water runs clear. Then put it in a small pot with one cup of water and let it soak for thirty minutes. Stir the rice well and turn on the flame to high. let the rice come to a boil and then stir well again turn flame down to the lowest flame possible cover the pot with a tight fitting lid and let cook for 11 minutes. Then move the rice off the heat and let sit, still covered, for five more minutes. Let the rice cool for 10 minutes then stir in the Earl Grey tea, and the salt and pepper. Taste and adjust the seasoning.
PINEAPPLE RICE PUDDING
I have made this pudding for several years. It is so creamy and rich it is hard to stop eating. This recipe is quite variable as it is equally as good without the sauce. You can also omit the cream cheese to make a less rich pudding.

- 1. Combine 3-1/2 cups of the milk with rice, sugar, and salt in saucepan. Bring to a boil over medium heat and cook for about 15 minutes stirring occasionly. It should be thick and creamy. In a mixing bowl, beat cream cheese and eggs together with remaining milk. Stir into rice mixture and cook for another 2 minutes, stirring constantly. Remove from heat and add 1 teaspoon of the vanilla. Divide into dessert bowls to chill.
- 2. Drain the pineapple. Combine the reserved pineapple juice with brown sugar, cornstarch, butter, and salt in saucepan. Bring to a boil and cook for 2 minutes or until thickened. Stir in the remaining vanilla and the pineapple. Spoon over pudding.
