6 ounces baking chocolate
1 ounce Rice Krispies
candy sprinkles, for decoration

Steps:

  • Break the chocolate into squares and put in a microwavable bowl.
  • Heat the chocolate until it has all melted 1 min or 45 seconds, depending on the microwave.
  • Mix the Rice Krispies into the chocolate, stirring until Krispies are covered.
  • Using a teaspoon spoon the mixture into cake cases.
  • Top with sprinkles, or you could break up a Flake for decoration or for Easter use Mini Eggs.
  • Leave to set.

Make a kids' classic with these chocolate Rice Krispie cakes and decorate with sweets, nuts or dried fruit for the ultimate hometime treat

100g milk chocolate, broken up
50g dark chocolate, broken up
100g butter
4 tbsp golden syrup
100g rice pops (we used Rice Krispies)
50g milk chocolate, melted
sprinkles, mini marshmallows, nuts, Smarties, dried fruit or white chocolate buttons

Steps:

  • Put the chocolate in a heatproof bowl with the butter and golden syrup and gently melt in 10-second bursts in the microwave, or melt it over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, then take off the heat and stir in the rice pops, coating them gently with the chocolate until they are all completely covered.
  • Divide the mixture between nine cupcake or 12 fairy cake paper cases - it's easier if you slide these into a muffin tin as it will help them hold their shape. Leave to set. If you want them to set faster, put in the fridge for 1 hr.
  • Drizzle with a little melted chocolate and decorate with sweets, dried fruit or nuts while they are still wet enough to stick them on. Will keep in an airtight container for five days.

Fun to make with kids or as a cute Christmas canape, top chocolate, peanut and raisin puffed rice cakes with white chocolate and festive holly icing.

50g rice pops (we used Rice Krispies)
30g raisin , chopped
50g butter
100g milk chocolate , broken into pieces
2 tbsp crunchy peanut butter
30g mini marshmallow
80g white chocolate
ready-made icing holly leaves (we used Sainsbury's Christmas cake decorations)

Steps:

  • Put the rice pops and raisins into a bowl. Put the butter, milk chocolate, peanut butter and marshmallows into a small saucepan. Place on a medium to low heat and stir until the chocolate and butter have melted but the marshmallows are just beginning to melt.
  • Pour onto the rice pops and stir until well coated. Line an egg cup with cling film. Press about a tablespoon of the mixture into the egg cup. Press firmly and then remove, peel off the cling film and place the pudding into a cake case, flat-side down. Repeat with the remaining mixture. Chill until firm.
  • Melt the white chocolate in the microwave or in bowl over a saucepan of barely simmering water. Spoon a little chocolate over the top of each pudding. Top with icing holly leaves.
