1 tablespoon olive oil
½ cup sofrito
2 cloves garlic, chopped
1 (1.41 ounce) package sazon seasoning with achiote
½ tablespoon adobo seasoning
2 cups medium-grain white rice
2 cups chicken broth
1 ½ cups water
1 (15 ounce) can gandules (pigeon peas), drained and rinsed
2 tablespoons chopped fresh cilantro

Steps:

  • Heat olive oil over medium heat in a medium-sized caldero or nonstick pan. Stir in sofrito, garlic, sazon, and adobo; cook for 4 minutes, making sure not to burn garlic. Stir in rice until coated well; pour in chicken broth and water and stir once more.
  • Bring mixture to a boil and cook over medium-high heat until all liquid has been absorbed and rice looks like it has little holes throughout, 20 to 25 minutes. Reduce heat to low. Stir in peas and cilantro gently from bottom to top, once or twice only. Cover and let sit for 10 minutes.
  • Turn off heat and let rice sit, uncovered, for 10 minutes more.

2 cups white rice (short grain)
1 (15 ounce) can pigeon peas
1 (5 g) packet sazon goya
4 ounces tomato sauce
1 teaspoon chicken bouillon
2 tablespoons sofrito sauce
2 cups water
2 tablespoons olive oil
2 teaspoons adobo seasoning

Steps:

  • Pour olive oil in a cast iron/aluminum pot until hot.
  • Bring the temp up to med-high and pour in water, bullion, tomato sauce, sofrito, adobo, and sazon until it comes to a boil.
  • Pour in pigeon peas (gandules) and let boil for a minute.
  • Pour in rice.
  • Stir ONCE and put the lid on it, sealing tightly.
  • Let sit for 20 minutes on low-medium.
  • If the rice looks gummy DO NOT STIR IT, just put the lid back on and wait until the rice is firm (ready).
  • If you desire the crunchiness on the bottom, once the rice is done cooking, put the temp on very low temp and let it sit for about 5 minutes. The bottom will loosen up from the moisture (since it it's done cooking).

This recipe starts with fresh pigeon peas and I am translating it from Spanish. It comes from an old cookbook, originally published in 1954 called "Cocina Criolla" by Carmen Aboy Valldejuli who was born in 1912. So I suppose she would know Puerto Rican cooking if anyone does!

1 lb pigeon peas, picked over and rinsed clean (fresh gandules)
10 cups water, divided
4 teaspoons kosher salt
1/2 ounce bacon, minced
1 ounce ham, minced
1 medium onion, minced
1 aji bell peppers, seeded and minced (small sweet pepper that resembles an habanero)
1 green bell pepper, seeded and minced
1 medium tomatoes, minced
3 stems culantro, minced
3 fresh cilantro stems, minced
3 tablespoons achiote oil (Achiote Oil)
1/4 cup tomato sauce
3 pimento stuffed olives
1/2 teaspoon capers
2 1/4 cups long grain white rice

Steps:

  • Soak pigeon peas overnight in 6 cups of water; drain and discard water.
  • In a large, covered pot, combine peas with 4 cups water and bring to a boil over high heat; cover, reduce heat to medium, and cook 30 minutes.
  • Season with salt and cook 15 minutes more; drain, reserving 3 cups of the cooking liquid (you may need to add more water to end up with the 3 cups).
  • Meanwhile, in a Dutch oven, lightly brown the bacon and ham; add in the remaining sofrito ingredients and saute, over low heat until all the ingredients are tender and the tomatoes break down.
  • Stir in the additional ingredients and combine well; stir in the peas and rice.
  • Add the 3 cups of reserved cooking liquid and let cook, uncovered, until almost dry (it will look like little volcanos are erupting); stir up the rice from the bottom.
  • Cover and turn the heat down to the lowest setting and let cook 30 minutes, turning the rice, from the bottom, once halfway through cooking.
  • NOTE: This is how the dish is supposed to be cooked. I prefer to add the olives after the last turning of the rice for a "cleaner" flavor.

BROWN RICE AND PIGEON PEAS (ARROZ CON GANDULES)

This is one of my favorite recipes of any kind. It's tasty, healthy, easy, quick, and I'm happy eating it for days on end. It's based on a Goya recipe that I adapted to use brown rice for better nutritional value. If you want to eat more whole grains but just can't find appetizing ways to prepare them, give this a try. It can also be made with long-grain white rice if you prefer (not jasmine rice or anything like that, just the ordinary kind). The canned pigeon peas and sazon can both be found in the latino/hispanic/international section of most US supermarkets.

2 slices smoked bacon, diced
1/2 cup onion, diced
2 garlic cloves, minced

Steps:

  • Heat oil in a large, deep skillet. Add the bacon and onion and cook three minutes. Add the garlic and cook two minutes longer.
  • Stir in all remaining ingredients except rice. Bring to a boil.
  • Stir in rice, cover, and reduce heat to a simmer. Simmer until rice is tender (about 40-45 minutes if you're using brown rice, 25-30 minutes if you use white rice.

2 tablespoons vegetable oil
1/4 lb butter
8 teaspoons sofrito sauce (found in the ethnic aisle)
16 stuffed olives
2 teaspoons salt
1 lb pigeon peas, fresh or canned
4 cups long grain rice
8 cups water

Steps:

  • In a big pot heat up 2 tbsps oil on a low flame and put in the Sofrito and all the other ingredients except rice and water.
  • Stir fry for 3 minutes.
  • Then put the rice in and stir well.
  • Next add the water, leave the pot uncovered, cook over medium heat and let the rice dry out.
  • As soon as the rice is dry, turn the rice over,in the pot, put the cover back on and put on low flame for 20 minutes.
  • After 20 minutes turn rice over again and serve.

1 tablespoon sofrito sauce (check out recipe # from my recipes)
1 (15 ounce) can pigeon peas (any canned bean will do)
0.5 (4 ounce) can tomato sauce
1 teaspoon salt
1 (4 ounce) can Spam (don't ask a lot of people use it, substitute a ham steak)
2 tablespoons cooking oil
1 (1/4 ounce) package sazon goya
6 -10 pitted green olives
2 cups rice (rinsed)
4 cups water

Steps:

  • Rinse starch off the rice, this IS important.
  • Dice ham steak or Spam.
  • Pour oil into 4-5 quart cooking pot ( make sure its a large wide pot, not a thin deep one).
  • Add sofrito and fry on medium heat for 1 minute.
  • Add ham and fry for 1 more minute.
  • Add tomato sauce and heat through for 30 seconds.
  • Add sazon, salt and water and bring to a boil.
  • Add pigeon peas and olives and boil 5 minutes.
  • Add rice and mix around with spoon once.
  • Bring to boil on HIGH heat until water has evaporated to the rice line.
  • Lower temperature to low/medium low and cover TIGHT with lid ( add foil or banana leaf if need be to make it a tight seal).
  • Cook for 25-30 minutes.
  • Uncover, serve and enjoy!

1 (15 ounce) can pigeon peas
3 cups long-grain white rice
water (depends what type of rice if you use regular long grain rice it's 1 1/2 cups water per 1 cup rice, i)
1/4-1/2 lb pork, cut into little cubes like 1/2 inch big (like pork shoulder or boneless leg of pork, etc.)
1 small green bell pepper, finely minced
1 medium onion, finely minced
5 -6 garlic cloves, mashed to a paste (through a garlic press)
salt, to taste at least 2 teaspoons
1/2-1 teaspoon ground cumin (to taste don't over do it for this dish or it will over power it)
1 sazon goya con culantro y achiote
lard (my grandmother prefers bacon grease or lard leftover from making fried pork rinds to cook this dish,) or bacon grease (my grandmother prefers bacon grease or lard leftover from making fried pork rinds to cook this dish,)

Steps:

  • Wash rice really well until water runs clear, strain well, put in rice cooker and add water, set aside.
  • Heat pan on medium high heat, add olive oil or lard, let it heat up a bit like 5 minutes more or less. Be sure the oil is hot enough, you can test it by dipping a wooden spoon if it sizzles it's ready.
  • Season pork cubes with 1 teaspoon salt (trust me) and add to hot oil, let it fry in one layer underdisturbed until browned. About 5 minutes more or less. Add minced onion and bell pepper and cook down together with pork for about 5-7 minutes, add minced garlic afterwards and cook for 2 minutes or so until fragrant.
  • Turn off heat and dump this sautee into the rice cooker with the rice and water, mix well. Add drained can of pigeon peas, 1 teaspoon salt, 1 teaspoon "Bijol", and 1/2- 1 teaspoon cumin. Mix well. Taste the water in there, it should be salty like ocean water, if not add more salt carefully. Increasing by 1/2 teaspoons and so on but don't use more than 3 teaspoons.
  • Cover and turn on rice cooker and set to cook, when it beeps the rice is done. Fluff it and it's ready.
  • Serve with whatever you want, I like it with a simple salad, of sliced tomato, cucumber, and onion dressed in lime and salt along with a meat dish that's grilled or pan-fried.
  • NOTE:.
  • (1)You can adjust this to your stove top, fry the pork, and make the sofrito (sautee of onion, garlic, and bell pepper) add the cleaned drained rice stir well to coat with sofrito, add water, salt, cumin, bijol, and drained can of pigeon peas, bring to a boil, stir, then cover and lower heat to low to cook for about 30 minutes covered, then open to check if it's done if so turn off heat and fluff.

1/4-1/2 lb pork
4 -5 cups hot water, approx
1/2 cup ready made sofrito sauce
1 (15 ounce) can of cooked green pigeon peas (gandules, undrained)
1 teaspoon salt
1/4 teaspoon black pepper
20 green olives
1 sazon goya con culantro y achiote
1 (8 ounce) can tomato sauce
3 tablespoons oil
salt & pepper

Steps:

  • Cut pork into biting sizes and season with adobo, sazon, salt and pepper to taste.
  • In a medium size caldero (rice pot) add the oil and heat on medium heat.
  • Add the pork and fry until almost done.
  • Add tomato sauce, olives, sofrito, sazon, salt and pepper.
  • Cook over for 4 minutes.
  • Add all other ingredients, and enough water to cover the rice 1" above the rice line. Stir.
  • Bring to a boil and cook over med/high heat until most of the water is absorbed.
  • Once the water has been absorbed, stir gently from bottom to top - once or twice only, cover and turn the heat down to low.
  • You can cover the rice with aluminum paper or better yet a banana leaf and then put on the cover.
  • Cook for 30 minutes or until the rice is tender.

6 boneless skinless chicken thighs
2 cups chicken broth
2 cups rice
1 (10 ounce) can of goya gandule beans
2 (2 ounce) packages , sazon
3 tablespoons sofrito sauce
1/4 cup canola oil for frying chicken
1 tablespoon canola oil, for pressure cooker

Steps:

  • Season chicken well and Brown chicken in a large skillet with 1/4 cup oil do not fully cook through, after browning take out and on a chopping board cut into small chunks.
  • Push the meat/chicken button on cooker, Add 1 tbsp oil to pressure cooker and continue to cook chicken just to add flavor to cooker.
  • Add the can of gandules to the cooker on top of the chicken.
  • Add the rice.
  • In a measuring cup Add the 2 packets of sazon and the sofrito to the chicken broth mix well and pour over the top of rice.
  • Mix well.
  • Seal the pressure cooker set to rice or 6 min.
  • When cooker is finished Let sit till steam has released entirely on its own 10-15 min.
  • Release steam valve open lid and stir completly.
  • Eat yummy chicken and rice ��.

It is most often eaten with meat but you can also enjoy meatless. In Puerto Rico this dish is a national dish known as Arroz con Gandules. 1 large sweet onion chopped fine
2 clove(s) garlic smashed or put through a garlic press
2 tablespoon(s) or a tad bit more light olive oil
2 cup(s) basmanti or jasmine rice, rinsed twice in cool water and drained of all the water
1 1/4 cup(s) water
10 ounce(s) chicken broth
1/2 cup(s) unsweetened coconut milk
15 ounce(s) can goya pigeon peas, rinsed, & drained
1 teaspoon(s) salt
1 cup(s) cooked ham, chicken, pork, bacon diced small optional
1/2 cup(s) green bell pepper diced optional
1 small envelope goya sazon with achiote & cilantro

Steps:

  • in a large skillet saute garlic, onion and green pepper in hot olive oil. Add the pigeon peas and stir well being carefull not to break up the peas
  • Add rice, water, chicken broth, and coconut milk and salt. Bring to a boil. Add the Cover and reduce the heat.
  • Simmer for about 25/30 minutes.or until liquid is absorbed. Sometimes in Trinidad they will add some diced cubed chicken, cubed ham, pork meat or bacon pieces. Meat should be precooked; if you would like to add meat to your peas and rice; then put it in on step two (2) when adding water and chicken broth. Enjoy
  • Pictured above are my peas & rice; I made today. I like to add small cubes ham and 2 slices crumbled left over bacon from breakfast and some sweet green bell pepper. these are optional but they give the peas and rice a delicious flavor. Bon Appetite

  • -In pan, Put oil- Saute ham or pork -Add sazon, Sofrito, 2 C water, gandules, tomato sauce, salt, pepper, oregano. -bring to boil, turn down to simmer for 10-12 min - add rice and sausages, cook uncovered
