1/2 lb coarsely-chopped imitation crabmeat (the spices in this dish will over power the delicate taste of real crab, but you can still use if yo)
1 lb shrimp (peeled and deveined and coarsely chopped)
1/2 lb baby shrimp
1 medium onion, chopped
1 small chopped bell pepper (any color)
2 (6 1/2 ounce) boxes Spanish rice mix (such as Rice-A-Roni)
salt and pepper
Old Bay Seasoning (don't substitute)
olive oil

Steps:

  • Prepare Spanish rice mix per the package instructions omitting the tomatoes.
  • While rice cooks, sauté onions and bell peppers in a small amount of olive oil until soft and lightly caramelized.
  • Add imitation crab, shrimp, and salad shrimp.
  • Cook just until raw shrimp becomes opaque.
  • Sprinkle mixture with half a teaspoon or so of Old Bay Seasoning.
  • Combine cooked rice and seafood mixture.
  • Add more Old Bay Seasoning, salt and pepper to taste.
  • Enjoy!

Walk into a Gullah restaurant and you're sure to find crab rice on the menu. It's our version of fried rice, and it is the perfect way to use up any leftover rice you may have. Succulent blue crab claw meat is what makes this dish so special. Serve it as a side or as a main dish.

Number Of Ingredients 17

2 cups chicken stock
1 cup uncooked long-grain rice, such as Carolina Gold, rinsed to remove the starch
1 stalk celery, cut into large pieces
1 clove garlic
1 large onion, cut into large pieces
1/2 green bell pepper, cut into large pieces
2 tablespoons unsalted butter, plus more if needed
1 tablespoon vegetable or canola oil
1 pound blue crab claw meat, picked through to remove any shells
2 generous pinches Miss Brown's House Seasoning, recipe follows
1 large tomato, diced (1 cup)
Chopped fresh parsley, for garnish
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Bring the chicken stock to a boil in a medium saucepan. Add the rice. Cover, then reduce the heat to low and simmer until the liquid is absorbed, 15 to 20 minutes. Remove from the heat, then fluff with a fork.
  • Meanwhile, pulse the celery, garlic, onion and bell pepper in a food processor until minced. Heat the butter and oil in a large cast-iron skillet over medium-high heat until the butter melts. Add the minced vegetables. Saute until the vegetables are tender, about 5 minutes.
  • Add the crab meat and House Seasoning. Cook until the crab meat has browned, about 5 minutes. Add additional butter, if the vegetables become too dry and begin to brown too quickly. Stir in the rice and tomato. Cover and simmer until the rice is fluffy, 5 more minutes. Uncover and sprinkle with parsley before serving.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

1 cup of rice
3/4 cup of canned corn
1 cup of chopped crab meat (or crab meat flakes)
1 carrot
2 eggs
1/2 white onion
1/2 cup of dill
1 pinch of salt
1 pinch of black pepper
4 tablespoons of mayo

Steps:

  • This salad recipe is good with crab meat and shrimps (or you can use both), corn adds sweetness to the salad, rice works as the base of this salad. You can cook it without rice if you wish, but I prefer it with rice, and herbs (dill and parsley, or just dill) are important. This recipe appeared in my cookbook, when we lived in Russian Far East near China. I love to cook this salad on a day to day basis or for a dinner party. (Just serve the salad in puff pastry baskets). The ingredients for this salad are simple and may be found in every pantry. Wash and boil carrot, in separate pot wash and boil rice, in separate pot boil eggs (until hard boiled). Rice has to be boiled but not too soft and over cooked. Carrot has to be cooked, but not overcooked. When the rice is cooked, drain it and rinse with cold water. Eggs: when cooked (in 6-8 min) put in cold water to cool off. Carrot drain and let it cool down. Peel and finely chop the onion (1/2 of it) Drain and rinse the corn (3/4 of a cup) Peel and finely chop the carrot. When rice cooled off mixed it with carrot and onion and corn. Shell and chop the eggs, wash and chop the dill. Crab meat: now here you can use: the real crab meat, the simulated crab flakes or even shrimp. (I was using simulated crab meat) cut the crab meat in mid-sized pieces and add to your salad. Add salt, pepper to your salad and mix all the ingredients well. Add mayonnaise before serving. Enjoy!

IMITATION CRAB AND WILD RICE

2 ¼ cups water
1 (6 ounce) package uncooked long grain and wild rice mix, with seasoning packet
2 tablespoons salted butter, divided
½ cup diced onions
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen corn
1 (8 ounce) package imitation crabmeat, chopped
½ teaspoon ground white pepper

Steps:

  • Combine water, wild rice mix, contents of seasoning packet, and 1 tablespoon butter in a medium saucepan. Stir well and bring to a boil. Reduce heat to low or medium-low, cover, and simmer until water is absorbed, about 25 minutes.
  • While rice is cooking, melt remaining 1 tablespoon butter in a large frying pan over low heat. Add onion and cook until translucent, 8 to 10 minutes. Add beans and corn; cook, stirring often, until heated through, about 5 minutes. Add imitation crab and season with pepper. Saute until imitation crab is warm, 3 to 5 minutes.
  • Mix cooked rice into the crab mixture and serve immediately.

1 ½ cups water, or more to taste
1 cup jasmine rice
1 (8 ounce) package imitation crabmeat
1 ½ cups mayonnaise
½ cup diced red bell pepper
½ cup chopped cashews
½ cup peas
3 tablespoons sesame oil
1 tablespoon curry powder
2 stalks green onion, thinly sliced
1 medium lemon, juiced
salt and ground black pepper to taste

Steps:

  • Bring 1 1/2 cups water to a boil in a saucepan. Stir in rice, cover, and reduce heat to low. Simmer until rice is tender and water has been absorbed, about 15 minutes, adding a few more tablespoons water if needed.
  • Transfer rice to a bowl. Stir in imitation crab, mayonnaise, bell pepper, cashews, peas, sesame oil, curry powder, green onion, and lemon juice until combined. Season with salt and pepper. Refrigerate for 3 hours before serving.
