1 cup chopped fresh or frozen rhubarb
3/4 cup water
1 package (3 ounces) strawberry gelatin
1/3 cup sugar
1 tablespoon strawberry jam or strawberry spreadable fruit
1 cup unsweetened pineapple juice
1 medium tart apple, diced
1/2 cup chopped walnuts, optional
Lettuce leaves and mayonnaise, optional

Steps:

  • In a saucepan over medium heat, bring rhubarb and water to a boil. Reduce heat; cover and simmer for 8-10 minutes or until rhubarb is tender. Remove from the heat. Add the gelatin powder, sugar and jam; stir until gelatin is dissolved. Add pineapple juice. Chill until partially set. , Stir in apple and nuts if desired. Pour into six 1/2-cup molds or a 1-qt. bowl coated with cooking spray. Chill until set. Unmold onto lettuce leaves if desired and top with a dollop of mayonnaise.

RHUBARB GELATIN WITH CREAM

This is just the thing to make when spring rhubarb is plentiful, slender and pink. (The rosier your stalks, the prettier the dessert.)

4 pounds rhubarb
2 cups plus 1 teaspoon sugar
2 .25-ounce packets unflavored gelatin
1/2 cup heavy cream
1/2 teaspoon vanilla extract

Steps:

  • Trim about 2 inches from each end of the rhubarb and discard. Roughly chop the stalks and add to a small stock pot with 2 cups of the sugar and 1 1/2 cups water. Bring to a boil over high heat, stirring occasionally. Cover, leaving the lid slightly ajar, and boil until the rhubarb mostly falls apart, about 3 minutes, stirring once or twice. Remove from the heat and let steep, covered, for 5 minutes.
  • Place 1/2 cup water in a medium bowl and sprinkle the gelatin on top. Strain the hot rhubarb mixture through a fine mesh strainer right into the gelatin, whisking gently. Press on the solids in the strainer to get as much liquid as possible from the rhubarb. Discard the solids.
  • If there is a lot of foam and you prefer a clear surface, skim it with a spoon and discard it. Pour the mixture into eight 4-ounce jelly jars. Chill until set, at least 3 hours or overnight.
  • When ready to serve, whip the cream, vanilla extract and the remaining 1 teaspoon sugar to very soft peaks and dollop it over the gelatin.

  • In a saucepan, bring rhubarb, sugar and water to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until the rhubarb is softened., Remove from the heat; stir in gelatin until dissolved. Nearly everyone I know has rhubarb in their garden, so it is indeed plentiful each spring. I've had this recipe in my scrapbook for years and serve it often at potlucks.

4 cups diced fresh or frozen rhubarb
1-1/2 cups water
1/2 cup sugar
1 package (6 ounces) strawberry gelatin
1 cup orange juice
1 teaspoon grated orange zest
1 cup sliced fresh strawberries
Mayonnaise, fresh mint and additional strawberries, optional

Steps:

  • In a saucepan over medium heat, bring the rhubarb, water and sugar to a boil. Cook, uncovered, until rhubarb is tender, about 6-8 minutes. Remove from the heat; stir in gelatin until dissolved. Stir in the orange juice and zest. , Chill until mixture begins to thicken. Fold in strawberries. Pour into a 2-qt. bowl; chill until set. If desired, garnish with a dollop of mayonnaise, mint and strawberries.

One of my favorite parts about living in the Midwest is that if someone says they're bringing a salad to the potluck, you never know what you're going to get. It could be a pile of greens, it could be cold spaghetti tossed with cheese and it could be layers of crushed pretzels, sweet cream, and strawberries suspended in gelatin. This version incorporates rhubarb into the mix since it plays so well with strawberries, and wherever rhubarb goes it brings an optional (but highly encouraged) splash of rosewater for a little extra sparkle.

2 cups pretzel crumbs (165 grams), from about 3 heaping cups salted small pretzels
1/3 cup (67 grams) sugar
12 tablespoons (179 grams) unsalted butter, melted and cooled
One 8-ounce (225 grams) block cream cheese, at room temperature
1/2 cup (96 grams) sugar
1 cup cold heavy cream
2 teaspoons pure vanilla extract
One 1/4-ounce packet powdered gelatin (about 2 1/2 teaspoons)
6 ounces (168 grams) fresh or frozen rhubarb, thick sliced (about 1 1/2 cups)
1/2 cup (96 grams) sugar
1/4 cup (80 grams) seedless strawberry jam
2 teaspoons rosewater
2 to 3 drops red food coloring, optional
2 cups hulled and sliced strawberries

Steps:

  • Place an oven rack in the middle position and preheat to 325 F degrees.
  • For the crust: In the bowl of a food processor fitted with the blade attachment, add the pretzels and sugar and process into fine crumbs. Drizzle the melted butter over top and pulse to combine. Press the mixture into a clear glass 8-by-8-inch baking dish. (Use the bottom of a dry measuring cup to pack the crumbs tightly.) Bake the crust until crisp and pulls away slightly from the sides of the pan, about 15 to 17 minutes. Let cool completely.
  • For the cream cheese layer: In a large mixing bowl, add the cream cheese and sugar. Using a hand mixer, beat until creamy. Drizzle in the cream and vanilla and continue to beat on a medium speed until light, fluffy and medium-stiff peaks form. Spread over the cooled crust and refrigerate until set, about 2 hours.
  • Meanwhile, make the gelatin layer. Sprinkle the gelatin over 1/2 cup cool water in a medium bowl and let bloom, about 5 minutes. Combine the rhubarb, sugar and 3/4 cup water in a small saucepan, bring to a boil and reduce to a simmer. Cook until the rhubarb is just tender, but still completely holds its shape, 1 to 2 minutes (add a minute or so more if cooking from frozen). Remove from the heat. Add the jam and rosewater. Stir to combine and thin the jam. Stir in the food coloring, if using. Pour the mixture over the bloomed gelatin and stir to completely dissolve the gelatin. Refrigerate until soft set, about 2 hours (it should look thick and syrupy).
  • Once the cream cheese layer is set and the gelatin is soft set, stir the strawberries into the gelatin and spoon the gelatin mixture over the cream cheese layer and smooth the top. Refrigerate until completely set, at least 4 hours or overnight.
  • To serve, grab a big spoon and dig in.

This is the next best thing to Strawberry Rhubarb Pie and a great way to use all the rhubarb coming in from the garden. You can use fresh or frozen strawberries or rhubarb so you can enjoy it all year long. I like to use sugarfree jello, but the regular jello works as well.

1/2 cup sugar
2 (3 ounce) packages sugar-free strawberry gelatin
1 cup orange juice
1/4 teaspoon orange peel, grated
2 cups strawberries

Steps:

  • Dice the rhubarb, or use frozen diced rhubarb and place with the water and sugar in a saucepan over medium heat bringing to a boil. Cook uncovered until rhubarb is tender, about 6 to 8 minutes. Remove from the heat; stir in gelatin until dissolved. Add orange juice and peel; mix well. Chill until mixture begins to thicken. Fold in sliced stawberries. Pour into a 2 quart bolw; chill until set. If desired, garnish with a dollop of whip topping and fresh strawberries.
