3 tablespoons all-purpose flour
3 cups sliced fresh strawberries
3 cups diced rhubarb
1 ½ cups all-purpose flour
1 cup packed brown sugar
1 cup butter
1 cup rolled oats

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix white sugar, 3 tablespoons flour, strawberries, and rhubarb. Place the mixture in a 9x13 inch baking dish.
  • Mix 1 1/2 cups flour, brown sugar, butter, and oats until crumbly. You may want to use a pastry blender for this. Crumble on top of the rhubarb and strawberry mixture.
  • Bake 45 minutes in the preheated oven, or until crisp and lightly browned.

1 tablespoon instant tapioca
1 tablespoon cornstarch
⅛ teaspoon salt
4 cups rhubarb, cut into 1/2 inch pieces
1 cup raspberries
½ cup brown sugar
½ cup all-purpose flour
½ cup quick cooking oats
½ cup butter, chilled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, combine sugar, tapioca, cornstarch and salt. Place rhubarb and raspberries into bowl making sure to completely coat them with dry ingredients. Pour into baking pan.
  • In a medium bowl, mix together brown sugar, flour and oats. Cut in butter until mixture resembles pea-sized crumbs. Spread on top of fruit mixture.
  • Bake in preheated oven for 45 minutes, or until rhubarb is tender.

1 teaspoon ground cinnamon

1 egg
1 cup sour cream
1 cup granulated sugar

1/2 teaspoon nutmeg
3 cups rhubarb, coarsely chopped
1/2 cup rolled oats
1/3 cup brown sugar, packed
1/3 cup all-purpose flour
1/3 cup butter, softened
1 teaspoon orange rind, grated

Steps:

  • In a bowl, whisk the egg with the sour cream.
  • Combine the sugar, cornstarch, cinnamon and nutmeg; stir into the egg mixture.

1/2 cup butter (softened)

1 egg
1 cup sour cream
1 cup sugar
3 tablespoons cornstarch

1/3 cup packed brown sugar

  • 3. Pat half of the crumb mixture in the bottom of an ungreased 13 x 9 inch baking pan. (I used an aluminum baking pan.)
  • 4. Save half of the remaining crust mixture to use as a topping.

  • 6. Spoon the sliced rhubarb evenly over the crumbled crust.
  • 7. Mix the sugar and cornstarch together in a saucepan.
  • 8. Add the water, cook and stir continuously over medium heat, until it comes to a boil.
  • 9. Boil until it looks clear and thickened, in about 5 minutes. (It may not even take five minutes for it to become clear and thicken.)
  • 10. Add the vanilla extract and the strawberry gelatin powder; cook and stir for 1 minute more, and then spoon the syrupy mixture over the rhubarb.
  • 11. Top with the remaining crumbled/crust/mixture.
  • 12. Bake in a 350 degree oven for 45 minutes, until the crumb mixture has browned slightly on top.
  • 13. Serve warm, or if desired, with Cool Whip or vanilla ice cream.
  • 14. I refrigerate leftovers (uncovered) in the fridge.

6 cups rhubarb, cut up
1 (3 ounce) box strawberry gelatin
3/4 cup butter, melted
2/3 cup sugar
1 (18 ounce) box yellow cake mix
1 1/2 cups water

Steps:

  • In a 9 x 13 inch pan, place the rhubarb in the bottom.
  • Sprinkle with the dry gelatin then sugar. Sprinkle the dry cake mix on top.
  • Drizzle the melted butter over cake mix.
  • Pour water on top of cake.
  • Bake 350 degrees for 45 minutes.
  • Serve with sliced fresh strawberries and or whipped cream.

4 cups fresh rhubarb, cut into 1/2-inch pieces
1 (1/3 ounce) package fat free sugar-free strawberry gelatin
1 (18 ounce) package white cake mix
3 egg whites (or as called for by your cake mix)
1/3 cup applesauce (or as much as oil called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1/2 cup brown sugar
2 tablespoons white sugar
1 teaspoon cinnamon

Steps:

  • In a bowl, mix the rhubarb and gelatin and set aside.
  • Prepare the cake mix according to the directions on the box (using egg whites and substituting unsweetened applesauce for the oil).
  • Spread half of the cake batter into a 9x13 cake pan sprayed with nonstick cooking spray.
  • Spread the rhubarb and gelatin mixture over the batter.
  • Sprinkle with two-thirds of the topping mixture.
  • Spread the remaining cake batter over the top.
  • Sprinkle with the remaining topping mixture.
  • Bake at 350F for 40-50 minutes.
