1-1/2 cups chopped fresh or frozen rhubarb
1 cup packed brown sugar, divided
4 tablespoons water, divided
1 teaspoon lemon juice
4 teaspoons cornstarch
1 cup old-fashioned oats
3/4 cup all-purpose flour
1/2 cup sweetened shredded coconut
1/2 teaspoon salt
1/3 cup butter, melted

Steps:

  • In a large saucepan, combine the rhubarb, 1/2 cup brown sugar, 3 tablespoons water and lemon juice. Bring to a boil. Reduce heat to medium; cook and stir for 4-5 minutes or until rhubarb is tender. , Combine the cornstarch and remaining water until smooth; gradually stir into rhubarb mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; set aside., In a large bowl, combine the oats, flour, coconut, salt and remaining brown sugar. Stir in butter until mixture is crumbly. , Press half of the oats mixture into a greased 8-in. square baking dish. Spread with rhubarb mixture. Sprinkle with remaining oat mixture and press down lightly., Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into squares.

The buttery oatmeal crust and crumble are sweetened with brown sugar and complement the sweet-tart rhubarb center perfectly. These are the best rhubarb bars I have ever eaten!

1 cup (2 sticks) butter, softened
1 cup brown sugar
1 1/2 cups oatmeal
1 1/2 cup flour
1/2 teaspoon baking soda
3 cups rhubarb, diced
1 1/2 cups sugar
2 teaspoons vanilla
1/4 cup water
3 Tablespoons corn starch

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray, set aside.
  • FILLING: In a medium-sized saucepan over medium heat, stir together rhubarb, sugar, vanilla, water, and corn starch. Cook until it thickens, about 20 minutes or so, stirring regularly so it doesn't stick.
  • CRUST/CRUMBLE: In a bowl, using a mixer or a wooden spoon, cream the butter until it's smooth. Add in brown sugar and combine well. Mix in baking soda and oatmeal. Fold in flour. The mixture will be crumbly.
  • Press half of the crust/crumble mixture into the bottom of the prepared pan. Spread thickened filling over the top. Add remaining crust/crumble mixture to the top.
  • Bake for 30 minutes. It can be served warm with ice cream. Store in the refrigerator.

These little bars are great to snack on, are perfect at holiday time, and would be excellent for a cookie exchange. If you have leftover dough after forming the bars, don't worry, I find that the thinner the crust, the better.

2 cups fresh or frozen cranberries
¾ cup sugar
2 tablespoons orange zest
1 ½ cups all-purpose flour
1 ½ cups rolled oats
1 cup packed light brown sugar
1 teaspoon baking powder
½ teaspoon salt
¾ cup butter

Steps:

  • In a small saucepan over medium high heat, combine the cranberries, white sugar and orange zest. Bring to a boil, then reduce heat and cook until the mixture has reduced to about 1 cup.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan, line with foil, then grease the foil.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking powder and salt. Cut in the butter using your hands or a pastry blender until the mixture resembles coarse crumbs. Press half of this mixture firmly into the prepared pan. Spread the cranberry sauce evenly over the base, then crumble the remaining oat mixture over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the top is golden brown. Cool completely before cutting into bars.

A delicious rhubarb bar, great for the first rhubarb of the season, or to use up the last. I have found that cooking the rhubarb in half water half fruit juice (I've used orange or pineapple) enhances the flavour nicely.

1 1/2 cups rolled oats
1 cup brown sugar, packed
1/4 teaspoon salt
1 1/2 cups flour
1 cup shortening
1/4 teaspoon vanilla
3 cups chopped rhubarb
1 1/2 cups sugar
2 tablespoons cornstarch
1/4 cup water
1 teaspoon vanilla

Steps:

  • Crust: Combine all ingredients until crumbly.
  • Pat half of mixture into 13x9" baking pan and bake for about 20 minutes before pouring filling on top.
  • Filling: In saucepan combine rhubarb, sugar, cornstarch and water.
  • Cook until clear.
  • Blend in vanilla.
  • Pour over baked crust.

½ cup melted butter
1 egg
⅓ cup brown sugar
1 teaspoon vanilla extract
1 cup flour
¼ teaspoon baking powder
¼ teaspoon baking soda

¼ teaspoon pumpkin pie spice
¾ cup dried cranberries
¾ cup pecans
¾ cup old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 11x7 inch baking pan.
  • Pour melted butter into a mixing bowl, and beat in the egg, brown sugar, and vanilla extract. Sift the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice together in a separate mixing bowl. Stir the flour mixture into the butter mixture until thoroughly blended. Mix in the cranberries, pecans, and oats until evenly blended. Press mixture into prepared baking dish.

1 cup dried cranberries
1/2 cup cranberry juice
3 cups frozen rhubarb (do not thaw)
1 cup sugar
1/4 cup quick tapioca
1/2 teaspoon cinnamon
1/8 teaspoon salt
3 drops red food coloring, optional
Crust & Topping:
2 cups quick rolled oats
1 cup whole wheat flour
1 cup all-purpose unbleached white flour
1 cup packed light brown sugar
1/4 teaspoon salt
1/2 tsp baking soda
1/2 cup canola oil
6 Tablespoons cranberry juice

Steps:

  • Preheat oven to 350º F. Lightly oil a 9 x 13 inch baking pan and set aside. Prepare Filling: In medium sized saucepan, heat 1/2 cup cranberry juice and dried cranberries just until simmering. Turn off heat and cover to keep moisture in. Let sit 15 minutes to plump cranberries. Add frozen rhubarb, sugar, tapioca, cinnamon, salt, red food coloring if using. Over med heat, cook slowly stirring occasionally until mixture starts to thicken (about 10 minutes). Remove from heat. While filling cooks, prepare crust/topping mixture: In a large bowl, work together oats, flour, brown sugar, salt and baking soda with your fingertips until brown sugar is blended well with other ingredients and there are not lumps. Drizzle oil and cranberry juice over oat mixture and continue blending with fingers until it all comes together. Reserve 1 cup of oat mixture for streusel topping. Put remaining oat mixture into prepared pan pressing with fingers to evenly cover bottom of pan. Pour filling over crust and spread evenly. Sprinkle reserved oat mixture over filling. Bake at 350º until filling is bubbly and topping is lightly browned. Let cool before cutting into bars.
