This is one of my favorite recipes handed down to me from my grandmother. I used to help her pick the rhubarb.

8 stalks rhubarb, cut into 1/2-inch pieces
3 apples - peeled, cored, and diced
½ cup white sugar
¼ cup water
⅔ cup white sugar
¼ cup margarine
1 egg
1 teaspoon vanilla extract
¾ cup milk
1 ½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 ½ cups rolled oats
½ cup margarine
½ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Combine rhubarb, apples, 1/2 cup white sugar, and water together in a saucepan; bring to a boil. Cook and stir rhubarb mixture until rhubarb is tender and compote is thickened, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Mix 2/3 cup white sugar, 1/4 cup margarine, egg, and vanilla extract together in a bowl. Stir milk and stir into the sugar mixture. Whisk flour, baking powder, and salt together in a separate bowl. Mix flour mixture into wet mixture until batter is just moistened; pour into the prepared baking dish. Spoon enough compote over cake to make about 1/2-inch-thick layer, reserving any leftover compote for another use.
  • Stir oats, 1/2 cup margarine, 1/2 cup white sugar, and cinnamon together in a bowl until crumbly; sprinkle over compote layer.
  • Bake in the preheated oven until a toothpick inserted in the middle of the cake comes out clean, 30 to 40 minutes.

Grilled Rhubarb and Strawberry Compote with Grilled Pound Cake image

We start to see giant leaves and shoots of rhubarb in spring. What better way to celebrate the vibrant ruby colored stalks than to grill them in a foil pack? Paired with strawberries and a few other ingredients, the rhubarb cooks down into the perfect sweet and tangy compote for grilled pound cake.

1 pound rhubarb stalks (about 4 large), sliced into 1/2-inch pieces
1 pound strawberries, hulled and halved (quartered if large)
1 teaspoon vanilla extract
2/3 cup plus 2 tablespoons sugar
Zest of 2 oranges
Kosher salt
1/2 cup heavy cream
1/2 cup sour cream
8 slices pound cake

Steps:

  • Preheat a grill for cooking over medium-high heat.
  • Combine the rhubarb, strawberries, vanilla extract, 2/3 cup sugar, zest of 1 orange and 1/8 teaspoon salt in a large bowl. Lay out 2 large sheets of heavy-duty foil (or doubled layers of regular foil). Divide the rhubarb-strawberry mixture evenly between the 2 sheets of foil. Bring the long ends together and fold twice to seal; fold in the short sides to seal, leaving room for steam. Place the 2 foil packs on the grill. Cook, uncovered, 15 minutes. Remove from the grill and lower the grill temperature to medium. Carefully open the foil packs, making sure to avoid contact with the hot steam. Let cool long enough so the packets are not steaming before serving.
  • Meanwhile, using an electric mixer, beat together the heavy cream, sour cream, remaining orange zest and 2 tablespoons sugar in a large bowl until thick and fluffy. Keep refrigerated until ready to serve.
  • Grill both sides of each pound cake slice, 1 to 2 minutes per side, using a metal spatula to flip and remove them.
  • Serve each grilled pound cake slice with some compote and a dollop of the cream.

ALMOND CAKE WITH RHUBARB COMPOTE AND STRAWBERRIES

Butter for pan
1 cup blanched slivered almonds
1 1/2 cups sugar
1 cup all-purpose flour, sifted
1/2 teaspoon salt
8 egg whites
1/2 cup melted butter, cooled
1 375-milliliter bottle orange muscat wine
1 cup water
1/4 cup plus 2 tablespoons sugar
1/2 vanilla bean, split
4 stalks rhubarb, trimmed, cut into 1 1/4-inch lengths and then cut lengthwise into thin slices
18 strawberries, hulled and sliced thin
Powdered sugar

Steps:

  • To make the cake, preheat oven to 375 degrees. Butter a 10-inch cake pan, and set aside. Place the almonds and the sugar in a food processor, and process until the almonds are ground. Transfer to a large bowl, and stir in the flour and salt until well combined.
  • In another bowl, whip the egg whites until stiff but not dry. Stir the butter and one third of the egg whites into the dry mixture. Gently fold in the remaining whites. Pour the batter into the prepared pan. Bake until a toothpick inserted into the center comes out clean, about 30 minutes. Place on a rack to cool for 10 minutes. Turn cake out of the pan, turn upright, and let cool completely.
  • Meanwhile, make the compote. Combine the wine, water, sugar and vanilla bean in a nonreactive saucepan over medium heat. Bring to a boil. Reduce to a simmer, and add the rhubarb. Poach for 1 minute, and remove from heat. Let stand for 5 minutes. With a slotted spoon, transfer the rhubarb to a bowl, and set aside. Return the pan to the heat, and boil until liquid has reduced to 1 cup, about 12 minutes. Set aside. When cool, pour the liquid over the rhubarb.
  • Assemble just before serving. Cut the cake into wedges. Spoon the compote onto 6 plates, and top with a wedge of cake. Place strawberry slices over cake, and sprinkle with powdered sugar. Serve immediately.

A little cornmeal gives the cake a crunchy texture. The sweet-tangy ice cream and the tart compote help dress up the dessert for this holiday dinner.

1 cup all purpose flour
½ cup yellow cornmeal
1½ teaspoons Homemade Baking Powder
½ teaspoon salt
½ cup (1 stick) unsalted butter, room temperature
1 tablespoon finely grated orange peel
1 cup sugar
2 large eggs, room temperature
½ cup sour cream
1 teaspoon vanilla extract
2 tablespoons coarsely crushed sugar cubes
Buttermilk Ice Cream
Rhubarb Compote

Steps:

  • Preheat oven to 350°F. Generously butter 9-inch cake pan with 2-inch-high sides. Dust pan with cornmeal, tapping out excess. Sift flour, ½ cup cornmeal, baking powder, and salt into medium bowl. Using electric mixer, beat butter in large bowl until smooth and fluffy. Beat in orange peel. Gradually add 1 cup sugar and beat until light and fluffy, occasionally scraping sides of bowl. Add eggs 1 at a time, beating well after each addition. Beat in sour cream and vanilla. Fold in dry ingredients in 3 additions until just incorporated. Transfer batter to pan; smooth top. Sprinkle with crushed sugar.
  • Bake cake until tester inserted into center comes out clean, 25 to 30 minutes. Cool in pan on rack 10 minutes. Run knife around pan sides to loosen. Turn cake out onto plate, then invert, crushed sugar side up, onto rack. Cool completely. DO AHEAD: Can be made 8 hours ahead. Wrap in foil; let stand at room temperature.
  • Cut cake into wedges. Serve with Buttermilk Ice Cream and Rhubarb Compote alongside.
