RUSSIAN DRESSING(REUBEN SAUCE)
I was watching Diners, Drive Ins and Dives last night and they visited Waddels Pub and Grill in Spokane, Washington. They were making these Reuban sandwiches and the sauce looked so good, I have tried to recreate it. I have all the ingredients he listed and have been playing with measurements. This is what I came up with(I did add one extra ingredient). Enjoy!

Steps:
- Mix all ingredients in a bowl.
- Chill until ready to use.
- You may use this as a spread for a Reuban sandwich, instead of mayo in any sandwich or burger, or as a salad dressing. Enjoy!

THOUSAND ISLAND DRESSING - REUBEN SAUCE - WHAT-HAVE-YOU SAUCE
This is the astoundingly good dressing that we use on our reuben sandwiches and in shrimp cocktail. Others have told me that they make it just to use as a dip, and - coming from my description in our Reuben Sandwiches Our Way (recipe # 107927): "you can call it Thousand Island or French, whathaveyou" - keep it on their table and call it What-Have-You Sauce. Steps:
- In a bowl combine the mayonnaise, catsup, relishes, onion, garlic, lemon juice, balsamic vinegar, and black pepper to taste. Mix well!
- Makes about 2 cups dressing.
- To store: put in a tightly covered clean glass container in fridge.
- To use: put it on reuben sandwiches, pot roast patty melts, burgers, in shrimp cocktail, on salads, or as a dip for chips, veggies, chicken nuggets, steak fingers, et cetera!
REUBEN SAUCE
Steps:
- Cook 1 chopped onion, 1/2 cup chopped sauerkraut and 1 teaspoon caraway seeds in a saucepan with olive oil until browned, about 8 minutes. Stir in 2 tablespoons each mayonnaise and ketchup, 2 teaspoons sweet pickle relish, a dash of Worcestershire sauce and 1/2 cup grated Swiss cheese.

- Saute sauerkraut and caraway in a skillet over medium-high heat. When most of the moisture has evaporated and sauerkraut begins to brown, stir in lemon juice and set aside.
- Arrange an egg roll wrapper on a work surface with a corner towards you; brush edges with egg wash.
- Place a strip of cheese on the wrapper, about 1 inch above the bottom corner, then top with strips of beef and about 3 tbsp sauerkraut mixture. Drizzle with mustard. Fold the bottom corner up over the filling to enclose, fold in the sides, then roll to the top corner of the wrapper. Repeat with remaining wrappers and filling.
- Heat oil in a large skillet over medium-high heat to about 360*. Add half the egg rolls and fry on all sides until brown and crisp, 5-7 minutes.Drain on paper towels while frying remaining rolls.
- Serve Egg Rolls with Thousand Island Dressing for dipping.

- 1. melt butter and oil
- 2. add garlic and sautee about 30 seconds
- 3. turn heat down to medium low and add rest of ingredients except parmesan cheese.
- 4. Stir till thickened remove from heat and add cheese. at first it will look thin but sauce thickens as it cools.
- 5. Put the sauce on crust. Then put sauerkrat on sauce then meat and then cheese. If using more caraway seeds put on top of sauce. then mix cheese together and top. Bake 20-25 minutes or until done.

- 3. Storage of homemade condiments and spices Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in "Weck Jars" and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. This recipe, if properly stored should last 12 - 14 days.
- 4. Gather your ingredients (mise en place).
- 5. This is simple, just whisk all the ingredients together.
- 6. Properly store in the refrigerator until needed.
- 7. PLATE/PRESENT
- 8. This is the perfect Russian dressing for a Ruben (or another sandwich). Enjoy.
