1 package (8 ounces) cream cheese, softened
3 tablespoons spicy brown mustard
1/4 teaspoon prepared horseradish
5 flour tortillas (10 inches), room temperature
7 packages (2 ounces each) thinly sliced deli corned beef
15 thin slices Swiss cheese
1 can (14 ounces) sauerkraut, rinsed and well drained

Steps:

  • In a small bowl, beat the cream cheese, mustard and horseradish until blended. Spread a heaping tablespoonful of cream cheese mixture over each tortilla. , Layer each tortilla with eight slices of corned beef, three slices of cheese, another heaping tablespoonful of cream cheese mixture and 1/2 cup sauerkraut. Roll up tightly. Chill for 1 hour. Cut each roll-up into 1/2-in. slices.

1 tube (13.8 ounces) refrigerated pizza crust
1 cup sauerkraut, well drained
1 tablespoon Thousand Island salad dressing
4 slices corned beef, halved
4 slices Swiss cheese, halved

Steps:

  • Roll dough into a 12-in. x 9-in. rectangle. Cut into eight 3-in. x 4-1/2-in. rectangles. Combine sauerkraut and salad dressing. Place a slice of beef on each rectangle. Top with about 2 tablespoons of the sauerkraut mixture and a slice of cheese. Roll up. , Place seam side down on a greased baking sheet. Bake at 425° for 12-14 minutes or until golden.

1/4 lb thinly sliced corned beef
1/2 cup finely shredded Swiss cheese (2 oz)
1/3 cup sauerkraut, well drained
1/2 cup Thousand Island dressing
1 tablespoon milk

Steps:

  • Heat oven to 375°F.
  • If using crescent rolls: Unroll dough into 2 long rectangles. Press each to form 12-inch-long rectangle; press perforations to seal. If using dough sheet: Unroll dough; cut into 2 long rectangles. Press each to form 12-inch-long rectangle.
  • Layer half of corned beef on each dough rectangle, cutting to fit if necessary. Top each with cheese and sauerkraut. Starting at long side, roll up each tightly; seal long edges. Place, seam side down, on ungreased cookie sheet; tuck edges under.
  • Bake 12 to 14 minutes or until golden brown.
  • Meanwhile, in small bowl, mix dipping sauce ingredients.
  • To serve, cut warm rolls into 1-inch slices; place on serving platter. Serve with dipping sauce.

1 pkg cream cheese softened, may use reduced fat
3 Tbsp mustard, spicy brown
1/4 tsp horseradish
5 10 inch flour tortillas, wraps, may use fat free
7 pkg 2 oz thinly sliced deli corned beef; turkey pastrami works well too
15 slice ultra thin swiss cheese slices
1 can(s) well drained sauerkraut, (omitted, we don't like it)

Steps:

  • 1. In a small bowl, beat the cream cheese, mustard and horseradish together until blended. Spread a heaping T of cream cheese mixture over each tortilla.
  • 2. Layer each tortilla with 8 slices of corned beef, 3 slices of cream cheese mixture and 1/2 C sauerkraut.
  • 3. Roll tightly for at least 1 hour. Cut each roll-up into 1/2 inch slices. Yield about 8 doz.
  • 4. We had these as a wrap for lunch today. I subbed reduced fat cr cheese; turkey pasttrami; and added 1000 island dressing after I spread the cream cheese mixture. I also omitted the Kraut as we don't like it. I will make this again in the future using smaller tortillas or maybe the flavored wraps. I will add a side of slaw in the summer to round out this meal. I also cut the ingredients in 1/2 and have enough left over for another lunch.

1/4 cup shortening
1 (3 ounce) package cream cheese
1 cup flour
2 teaspoons caraway seeds
1/2 teaspoon salt
2 -3 tablespoons cold water
1/4 cup thousand island dressing
2 (3 ounce) packages corned beef
1 cup grated swiss cheese
1/2 cup drained sauerkraut

Steps:

  • For pasrty: Cut shortening, cream cheese, flour and caraway seeds together into crumbs or small clumps.
  • Add salt and water.
  • Form into dough.
  • Roll dough into 2 rectangles of approximately 11X9 inches.
  • Set aside.
  • For Filling: Spread salad dressing on pastry rectangles.
  • Top with layers of corned beef, swiss cheese and sauerkraut.
  • Fold in ends of dough.
  • Roll up to jelly roll fashion.
  • Seal the roll.
  • Bake at 450 for 15 to 20 minutes.
  • Slice the roll up into 1 inch slices.
  • May insert party toothpicks if desired.
  • Arrange on serving tray or platter.

1 lb refrigerated bread dough (Use Recipe Almost No-Knead Rye Bread)
1/4 cup thousand island dressing
6 ounces thinly sliced deli corned beef
6 ounces swiss cheese, sliced
1 (14 ounce) can sauerkraut, with caraway seeds, well drained

Steps:

  • Make Recipe #387518 for the dough.
  • Prepare 2 large baking sheet pans with parchment or Silpats, set aside.
  • Preheat oven to 375 degrees F.
  • With lightly floured hands quickly shape dough into a ball by streching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go.
  • On a lightly floured board, flatten the dough, with hands and rolling pin, into a 1/4 inch thick rectangle, dusting with minimal flour if necessary to keep dough from sticking to the rolling pin. If difficulty is experienced in rolling out the dough, allow it to rest for a few minutes. I've found that pulling the dough with my hands works best.
  • Spread the Thousand Island dressing on the dough, then add corn beef, sauerkraut, and cheese, leaving some of the cheese exposed so that it can help hold the roll together as it bakes.
  • Starting with the long end roll the dough into a log.
  • NOTE: Cut only the number of pieces you want to bake. The rest can be wropped and stored in the refrigerator for up to 5 days, or can be frozen for up to 2 weeks.
  • Using kitchen shears, cut the dough into 1/2 inch pieces.
  • Place them on the prepared sheet, leaving plenty of space for them to expand when they bake.
  • Bake for 15-18 minutes, or until golden brown and the cheese has melted and caramelized a bit.
