This Reuben Casserole made with corned beef, swiss cheese, and sauerkraut has all the delicious flavor you know and love with none of the hassle.

About 2 pounds cooked corn beef (small diced)
1 loaf marbled rye bread (16 ounces, small cubed)
1 pound Swiss cheese (finely shredded)
1 cup Russian dressing
1 cup mayonnaise
1 cup sauerkraut

Steps:

  • Mix all ingredients together in a large bowl. (You will want an extra large bowl for this one!)
  • Pour everything into a 9x13 casserole dish, scraping the sides well to get all the casserole ingredients out.
  • Using a large spoon or spatula, press casserole into dish so everything is tightly packed.
  • Bake uncovered on the center oven rack at 350 degrees for 30 - 45 minutes, or until casserole is heated through and top is browned to your liking.

6 slices rye bread, cubed
1 (16 ounce) can sauerkraut, drained and rinsed
1 pound deli sliced corned beef, cut into strips
¾ cup Russian-style salad dressing
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.
  • Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.
  • Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

1 ½ cups thousand island dressing
1 cup sour cream
1 tablespoon minced onion
6 slices dark rye bread, cubed
6 slices light rye bread, cubed
1 pound sauerkraut, drained
1 ½ pounds corn beef, cut into bite-size pieces
2 ½ cups shredded Swiss cheese
¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, mix the thousand island dressing, sour cream, and onion.
  • Arrange the dark and light rye bread cubes in the bottom of the prepared baking dish, reserving about 1/2 cup each for topping. Layer the bread with sauerkraut and corned beef. Spread the dressing mixture over the corned beef. Sprinkle with Swiss cheese, top with remaining bread cubes, and drizzle with margarine.
  • Cover, and bake 15 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.

2 c sauerkraut,rinsed and drained
10 oz corned beef in can
12 oz shredded cheese
1/4 c salad dressing or mayo
1/2 c thousand island dressing
1 Tbsp lemon juice
1 medium tomato , sliced thin
2 tsp basil, dried
2 slice rye bread, crumbled and toasted

Steps:

  • 1. Drain and rinse sauerkraut and place on bottom of a buttered 9x13 inch glass dish.
  • 2. Place corned beef evenly crumbled on top of sauerkraut. Sprinkle cheese on top of sauerkraut.
  • 3. Combine both dressings and lemon juice and spread evenly over cheese.
  • 4. Top with tomato slices sprinkle with basil. .Microwave for 3 minutes or until cheese has melted. Remove from microwave and sprinkle with toasted bread crumbs. Let set for 2 to 3 minutes and serve on or with rye bread.

½ cup mayonnaise
½ cup Thousand Island dressing
1 teaspoon caraway seeds (optional)
16 ounces sauerkraut, drained and squeezed dry
12 ounces deli-style sliced corned beef, shredded or chopped fine
1 (16 ounce) Swiss cheese, shredded
3 cups dark rye bread crumbs, about 3 slices
1/4 cup butter, melted
Parsley for garnish

Steps:

  • Preheat oven to 350°F degrees. Lightly grease a 9" x 13" casserole dish with non-stick cooking spray. Set aside.
  • Shred Swiss cheese. Place bread in a blender or food process and pulse until crumbs form. Drain sauerkraut and set aside.
  • In a small mixing bowl mix together mayonnaise, Thousand Island dressing, and caraway seeds (optional).
  • Add well drained sauerkraut to dressing mix with a fork until well coated.
  • Place 3/4 of the sauerkraut mix into the prepared casserole dish spreading evenly.
  • Add diced corned beef or pastrami over the sauerkraut.
  • Top mix with shredded Swiss cheese.
  • In a small bowl add the butter to the bred crumbs and gently mix with a fork until well incorporated.
  • Sprinkle bread crumbs over the Reuben casserole and bake for 20-25 minutes or until cheese is melted and bubbly.
  • Remove from oven, cool and add chopped parsley if desired.
