I've been making some quick meals for my parents, while my mom is on the mend. I had some shrimp I needed to use up, so I used what I had in my fridge and it turned out delicious! It would be awesome served on a croissant as well, just chop up the shrimp. They are going to love this salad! Enjoy!

Steps:
- Place all ingredients in a small bowl and mix well.
- Stir in the shrimp and toss to evenly coat.
- Serve over a bed of lettuce. Delicious! Could also chop the shrimp and this would be delicious served on a croissant.
