MOM'S SALAD

2 heads romaine lettuce, thinly sliced
2 tomatoes, large diced
1 cucumber, large diced
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons sour cream
1 teaspoon fresh oregano, chopped
1 clove garlic, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Combine the romaine, tomatoes, cucumber and onions in a large bowl.
  • Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
  • Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

Refreshing mango and watermelon mixes with fresh mint in this tasteful summer salad.

4 cups mixed baby greens
½ cup diced mango
½ cup cubed seeded watermelon
1 tablespoon chopped fresh mint
¼ cup crumbled feta cheese
2 tablespoons minced red onion
1 tablespoon white balsamic vinegar
1 tablespoon olive oil
1 tablespoon frozen mango juice concentrate, thawed

Steps:

  • Combine the baby greens, mango, watermelon, mint, feta cheese, and minced onion in a mixing bowl. Whisk the vinegar, olive oil, and mango juice concentrate together in a small bowl, and pour over the salad. Toss gently to evenly coat.
