I love a good meatloaf. What Redneck doesn't? The key to a good meatloaf, though is to get the right seasonings, the quality of the meat, and the right binding. Some put vegetables like carrots or other stuff in their meatloaf to trick their kids into eating healthier. A Redneck kid can sniff a veggie out from forty paces and will refuse to eat it. This does not apply to the mixed peas and mashed potatoes thing. This is a favorite recipe of mine. Haven't got a clue where it came from, nor does it matter. It satisfies this Redneck's palate. Give it a try.

1 (8 ounce) can tomato sauce (I usually use home-canned)
2 lbs ground beef (the best quality on sale is what I use!)
1/2-3/4 cup onion (if you like it, use more)
1/4-1/2 cup green pepper, chopped VERY FINE
1 cup saltine crumbs
1/3 cup A.1. Original Sauce, plus
3 tablespoons A.1. Original Sauce (I use the Walmart knock-off, for the sauce, but I never measure, just glug it in)
2 eggs, beaten
1/2 teaspoon ground black peppercorns
1 dash salt, if desired

Steps:

  • Slip your hands into plastic sandwich bags. This will make clean-up sooo much easier!
  • In a large bowl, combine the meat, crumbled and mushed up well, the chopped onion, green pepper, saltine crumbs, 1/3 cup steak sauce, eggs, pepper, salt, and half the can of tomato sauce.
  • Mush this all together (this is where I take out my aggressions). Place in a loaf pan lined with the new release foil. This stuff will save you more time on clean-up. While meatloaf bakes, stir together remaining tomato sauce and steak sauce.
  • Another tip: If you would rather, pat these out into mini-loaves. If you use a 9x13 pan, you could probably get 4-5 loaves, depending on how big you make them. Kids love their own meatloaf on their plate.
  • Bake in a 350 degree oven for 45-50 minutes (if making one loaf, less is mini-loaves). Pour off the grease. Coat top with sauce. Bake 10 more minutes.
  • Let stand a few minutes to cool down.

CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

MOM'S MEATLOAF

This is the only meatloaf I ever liked! Seasoned with fresh onion,a touch of bell pepper, and glazed with a sweet ketchup sauce. For our small family, we cook one loaf and freeze the other to cook at a later time.

2 pounds lean ground beef
½ cup crushed saltine crackers
1 (8 ounce) can tomato sauce
2 eggs, beaten
¼ cup finely chopped onion
2 tablespoons finely chopped green bell pepper
1 teaspoon salt
¼ teaspoon ground thyme
¼ teaspoon ground marjoram
¼ cup ketchup
2 tablespoons light corn syrup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine ground beef, cracker crumbs, tomato sauce, eggs, onion, bell pepper, salt, thyme, and marjoram in a large bowl and mix well. Shape beef mixture into two equally sized loaves. Place both loaves in a 9x13 inch baking dish. Cover with foil and bake in the preheated oven for 1 hour. Meanwhile, mix ketchup and corn syrup in a small bowl to make a glaze.
  • Remove baking dish from the oven and remove foil. Brush glaze onto the loaves. Return baking dish to the oven uncovered, and continue baking until loaves are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

I love eatin' what the ritzy folks do and I don't think there's anybody ritzier'n (that IS a Redneck word) Dolly Parton, the mother of this meatloaf. She's got sequins, she's got big hair, and big..uh...well, she's just big all over. Keeping with her "big" theme, the recipe for this has got a might big list of ingredients, but it's good. So put on the meatloaf, stick Best Little Whorehouse in Texas in the VCR/DVD, and at intermission (when the timer goes off), fix yourself a "hunk" of meatloaf, some mashed potatoes and peas, a glass of sweet tea and a piece of "light bread", and watch the second half.

1 1/2 lbs lean ground beef (the leaner the better)
1/2 cup breadcrumbs or 1/2 cup saltine crumbs
1 egg
1 onion, chopped (if you like a lot, use a med-lg onion, if not a lot, a small one)
1 teaspoon salt
1/4 teaspoon pepper
2 (8 ounce) cans tomato sauce
1/2 cup water
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons prepared mustard
2 tablespoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees. Line a shallow pan with non-stick tin foil or regular foil greased well.
  • In a large bowl, mix together beef, crumbs, egg, onion, salt, pepper, and one can of tomato sauce.
  • (HINT: Keep around a box of food service gloves for nasty jobs like this. If you can't find them, steal a handful from the hospital next time you go or stick your hands down in cheap sandwich-sized zipper bags to keep your hands clean. Just toss out or wash with the dishes.).
  • Form into a loaf and place in the pan. Mix everything else and pour on top of the meatloaf.
  • Bake for 1 hr and 15 minute and juices run clear. Baste occasionally. If the meatloaf starts to burn on top, tent with foil.
