What a refreshing twist on a chicken salad recipe. It's sweet, savory and has a little tang. The mixture of flavors and textures is amazing. I tried this on a croissant and it was delicious. This will be great for a summer cookout. The hardest part is waiting for the chicken to cook!

Number Of Ingredients 9

3 chicken breasts grilled and shredded
1 c mayonnaise
1/2 c Italian salad dressing
1 stalk(s) celery diced
1 stem of green onion diced
1 c dried cranberries
1 c dried blueberries
1/2 c apples chopped (granny smith is best)
salt to taste

Steps:

  • 1. Grill or pan fry chicken and shred with a fork.
  • 2. Add chopped onion, chopped celery, and chopped apples.
  • 3. Mix in a large bowl add cranberries and blueberries.
  • 4. Mix all the ingredients until well blended.Chill for 3 hours or overnight. Spread on bread for sandwiches.

This is a fresh salad with grilled chicken and Summer fruits. The Feta adds a creamy texture to the crispy lettuce and sweet fruit. Your favorite grilled chicken seasoning will add a savory pop to the cool salad. Perfect for a picnic or dinner on the patio. Feel free to add toppings to your liking...after all, it's YOUR salad...

Number Of Ingredients 5

1 large chicken breast
1 bunch romaine lettuce
1 c fresh strawberries
1/2 c fresh blueberries
feta cheese

Steps:

  • 1. Season chicken to your taste and grill. One large breast will be enough for two salads or two small breasts. If the breasts are thick, they might need to be halved or pounded thinner. Grill and allow to come to room temperature.
  • 2. Tear the lettuce and put on your plate. Slice the strawberries. Put the fruit on the lettuce and sprinkle the Feta on top.
  • 3. Once your salad base is ready and your chicken is cool, slice on the diagonal and lay on top. Balsamic vinegar or Greek Feta Dressing to your liking.
