1/3 cup red wine vinegar
2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon minced chives
1/2 teaspoon minced fresh parsley
Salad greens

Steps:

  • In a jar with a tight-fitting lid, combine the first 9 ingredients; shake well. Serve over salad greens.

Fresh garlic, tarragon, mustard seed, and celery seed flavor this easy-to-make creamy vinaigrette. During the summer, I use 2 teaspoons of fresh tarragon.

1 tablespoon Dijon mustard
2 tablespoons white sugar
⅓ cup white vinegar
1 clove garlic
1 teaspoon salt
1 teaspoon xanthan gum
⅓ cup vegetable oil
¾ cup water
⅛ teaspoon celery seed
⅛ teaspoon red pepper flakes
½ teaspoon cracked black pepper
¾ teaspoon dried tarragon
2 teaspoons brown mustard seed

Steps:

  • Place the Dijon mustard, sugar, vinegar, garlic clove, and salt into a blender. Cover, and puree until the garlic has blended smooth. Sprinkle in the xanthan gum, and blend about 15 seconds to mix well. With the blender running, pour in the vegetable oil alternately with the water; blend until thick and creamy. Add the celery seed, red pepper flakes, black pepper, tarragon, and mustard seed; pulse until the spices are evenly distributed.

Steps:

  • Wash tarragon and pat dry. Place in a sterilized jar. Using a wooden spoon, gently bruise the tarragon. Add the vinegar. Cover and store in a cool dark place for 2-3 weeks to let flavors develop., Strain and discard tarragon. Pour into a sterilized decorative bottle. Add additional tarragon if desired. Store in a cool dark place for up to 6 months.

3/4 teaspoon Dijon mustard coarse salt and freshly ground pepper
1/2 cup extra-virgin olive oil
1/2 cup sour cream
2 tablespoons finely chopped fresh tarragon

  • Stir together vinegar and mustard; season with salt and pepper. Pour in olive oil in a slow, steady stream, whisking until emulsified. Stir in sour cream and tarragon.

Easy quick and a great alternative to everyday Italian dressing. A quick puree with the food processor and dressing is done. Chill in the refrigerator until later and you have an amazing dressing.

1 (7 ounce) jar roasted red peppers (most jars are about 7 oz, if you want to make your own, approximately 1 large bell pepper roasted pe)
1 1/2 tablespoons balsamic vinegar (you can substitute red wine if you want, it changes the flavor a bit but it will work just fine)
1 teaspoon garlic, minced
2 tablespoons shallots, minced
4 tablespoons olive oil
1 teaspoon honey
1 pinch red pepper flakes (optional)
salt
pepper

Steps:

  • Dressing -- If you are using jarred red pepper, drain and then add them and all the other ingredients to a food processor and blend. That is it! Also, don't worry if you get a little of the roasted red pepper liquid in the food processor as well, it is all good flavor and it won't affect the dressing. Once pureed, remove and transfer to a measuring cup or small bowl. Perfect salad dressing. If you want add the red pepper flakes, it adds a nice kick. But if not, just leave them out. Still a great dressing and so simple.

Red Pepper With Tarragon Vinaigrette image

2 shallots
1 clove garlic
1 red pepper
1/4 cup fresh tarragon leaves
3/4 cup extra-virgin olive oil
Approximately 1/4 cup red wine vinegar (to taste)
Course salt and freshly ground pepper to taste

Steps:

  • Mince the shallots and the garlic and place in a bowl.
  • Preheat broiler. Cut the pepper into quarters or sixths and place skin side up on foil paper on a broiling pan. Broil until the skin blisters. Place the pepper in a paper bag and let cool. Peel away the skin and chop the pepper. Add to the bowl containing the shallots and garlic.
  • Add the tarragon leaves and olive oil. Mix thoroughly. Add the vinegar, salt, and pepper and taste to correct seasoning. Place in a serving bowl and serve spooned over the fish at the table.
