- Heat the olive oil in a large skillet over medium heat. Stir in the garlic, red pepper flakes, sun-dried tomatoes, and roasted peppers and cook until the garlic is aromatic, about 1 minute. - In a large frypan melt the butter with oil.
- Add in mushrooms, onions, garlic, red bell pepper and oregano; cook stirring until the onions are soft (about 4 minutes) set aside.

- Add in the pork cubes; shake to coat well.

- First, make the sauce. Put the cashews and garlic in a bowl, then pour over 125ml boiling water and set aside for 5 mins. Meanwhile, put a large pan of water over a high heat. When the water is boiling rapidly, tip in the pasta and a little salt, stir once, then continue to boil for 8 mins, or following pack instructions, until the pasta is softened but still retains some bite.

- Sauce-in a large, deep skillet (the author uses a deep flameproof casserole, but I never cook on the stovetop in a casserole pan), heat the oil over med-high heat.
- Cook the sausage meat, breaking up the meat with a spoon, for about 5 minutes, or until no pinkness remains.
- Drain of most of the fat.
- Add the mushrooms and saute for 4 minutes.
- Add the garlic and saute for 1 minute.
- Add the marinara sauce and red peppers, reduced heat to medium, and simmer for 5 minutes, or until the sauce begins to thicken.
- Add the cream, season with salt and pepper, and stir to combine.

ROASTED RED PEPPER AND TOMATO PASTA SAUCE
My own creation after many trials and errors. The key here is the roasted garlic; it really gives the recipe a robust flavour. The result is a sweet, lovely and flavourful sauce.

Steps:
- Preheat oven to 375°F.
- Cut top 1/4 off garlic head and cut around to expose as many cloves as possible.
- Drizzle with olive oil and place on a baking dish or in a roasting pan (I usually roast vegetables along side it because it makes the vegetables nice and garlicky).
- Place whole red pepper in dish and place in oven.
- Roast for 1 hour or until cloves are soft and mushy inside (you should be able to squeeze a clove and have all the garlic goodness come right out).
- Place red pepper in plastic ziploc bag and seal, let sit about 10-15 minutes or until it cools and is easy enough to handle.
- Meanwhile, pour can of diced tomatoes in blender.
- Add balsamic vinegar, salt, sugar and red pepper flakes.
- Squeeze cloves out of garlic head (you can leave the skins on).
- Once pepper has cooled, peel off skin (it should come right off), cut open, take out seeds and remove stem
- Place pepper in blender.
- Puree mixture until blended.
- Stir in cornstarch.
- Heat up on stove when ready to eat or store in container and freeze for later.

- Spiralize the yellow squash and zucchinis into a large bowl.
- Bring a large skillet over medium heat and add olive oil.
- Sauté shallots and garlic until golden brown and soft, about 2-3 minutes. Season with salt and pepper and stir. Remove from heat and set aside.
- Quarter and deseed the red bell peppers and arrange onto a parchment paper-lined baking sheet.

- # Get your pasta started: cook in hot water as per package directions, when cooked, drain and keep warm. # Prick your sausages with a fork and cook in skillet on stove or grill them. When cooked, slice. # In a medium saucepan with a lid, warm olive oil and add pancetta or bacon. Cook, stirring, on medium for a minute, then add onion. Cook on medium until onion is softened, but not browned. # Add red peppers and plum tomatoes. Turn heat to low and cook, covered, for about 15 minutes, stirring occasionally and adding a tablespoon or two of water if it starts to become dry. # Add vodka, garlic (reserving ½ tsp for shrimp), and red pepper flakes. Turn heat to medium, cook for a minute or two, stirring. # Cover, return heat to low, and cook on low for another 30 minutes or so, stirring occasionally and adding small amounts of water if needed. You want it to be somewhere between soupy and dry. # Remove lid, with a fork whisk in softened butter, and season with salt & pepper to taste. # Don't cook the shrimp until just before you're ready to serve. In clean skillet heat 1T butter and 1T olive oil on med high. Add shrimp, turn heat to high and cook for a minute, add garlic, cook for another minute or two, on both sides, until just cooked. # To serve, toss warm cooked pasta with sauce. Place sliced sausage and shrimp on top, and garnish with oregano. If you're not Italian, feel free to serve with cheese.

- Cook pasta in a large pot of boiling salted water according to package directions. (I usually boil mine for 7 minutes, and its perfect eveytime)
- For the sauce: Place drained roasted red peppers in a blender or food processor, and puree until smooth.
- Heat olive oil in a large skillet over medium high heat.
- Add the garlic and shallots and saute for 2-3 minutes.
- Next add the roasted red pepper puree and saute for another 2 minutes more.
- Stir in the white wine or vegetable stock, and reduce suace for another two minutes.

- 1. Place the tomatoes in a large stock pot. Smash the tomatoes with a potato masher or just use your hands. Add the chopped roasted red pepper and mash some more. Add the remaining ingredients and place over high heat.
- 2. Bring to boil. Reduce the heat and simmer for about 20 minutes smashing and stirring occasionally until reduced and thicken. Taste and adjust for salt.
- 3. Serve over pasta of choice and garnish with freshly grated Parmigiano Reggiano
